    Ingredients

    3 Tbsp. liquid dishwashing soap
    1 Tbsp. anti-spotting agent (Jet Dry)
    1/4 Cup ammonia (Optional for extra cleaning power and degreasing)

    Instructions

    1. Put soap and anti-spotting agent into a spray bottle attachment for your garden hose.
    2. Add ammonia, if desired, for extra cleaning power and degreasing.
    3. Fill the bottle to the top with water.
    4. Attach sprayer.
    5. Spray upper windows and let them dry.

    This outdoor window washer recipe is for cleaning the higher windows on your house that you can’t reach except with a ladder.

    This is simply The Best Homemade Potato Salad Recipe EVER!! No really… it is. I have people begging for this potato salad! It’s quick and easy to make and makes a nice addition to picnics, potlucks and family get together!

    The basic recipe is in volume 1 of our Dining On A Dime Cookbook but I normally add an additional tablespoon or two of bacon grease along with the bacon and people beg me to make more and more of it!

    This is the best homemade potato salad recipe EVER!! People beg me for this at potlucks and barbecues because of my secret ingredient! It's quick and easy to make and makes a nice addition to picnics, potlucks and family get togethers!

    This is the very best homemade potato salad recipe! It is my all-time favorite! I have people begging for this potato salad, so you definitely need to try it! I almost always have all of the ingredients on hand, so it’s easy to make any time.

    When I need to take a potato salad to a potluck or get together, this is the potato salad I take. It’s also great for Memorial day, picnics at the lake or barbecues with hamburgers, hot dogs and chicken. It is super popular with everyone who eats it because it is so delicious and there are never any leftovers to take home!

    For my secret ingredient, I normally add an additional tablespoon or two of bacon grease along with the bacon and people beg me to make more and more of it! The bacon grease gives it a richer flavor you have to try to believe!

    You don’t have to use the bacon… If you don’t have the bacon, or if you don’t eat bacon, this potato salad still tastes great without it (just not as “over the top” great as with the bacon ;-).

    If I have baked potatoes or if I’m making mashed potatoes the night before, I cook extra and pull out a few of the potatoes before I mash them. This way I can use the extra potatoes for the potato salad that I know I will be making the next day.

    Ingredients

    1/4 cup mayonnaise
    1 tsp. garlic powder (or more to taste)
    1 tsp. onion powder or 1/2 onion, finely chopped (more to taste)
    1 small dill pickle, diced into small pieces
    3 eggs, hard-boiled and chopped
    6 potatoes, peeled, cubed into small pieces and boiled
    2 slices bacon, fried and crumbled or 1 Tbsp. bacon grease (optional)
    2 carrots, peeled and chopped
    salt

    Instructions

    1. Mix the mayonnaise, garlic powder, onion powder, and pickle in a large bowl.
    2. Add the eggs, warm potatoes, carrots and bacon or bacon grease, if desired.
    3. Mix well.
    4. Add salt, to taste.
    5. Mix well.
    6. Chill 1-2 hours before serving. If the potato salad seems dry, add a couple tablespoons of milk. Serves 10.

    Notes

    When making potato salad, add the dressing to warm potatoes for the best taste! Warm potatoes will absorb the flavor from the dressing while cool ones will not.

    9 cups flour
    2/3 cup dry milk
    3 Tbsp. baking powder
    2 tsp. salt
    1 cup shortening or 1/2 cup shortening and 1/2 cup butter*

    Instructions

    1. Mix flour and the other dry ingredients.
    2. Cut in shortening. To save time, use a mixer on low to cut in the shortening.
    3. Store in an airtight container up to 6 months.

    Notes

    This recipe uses a 5-pound sack of flour when doubled.

    Reduce the heat. Simmer, stirring constantly, until heated through. Serve over noodles, rice or mashed potatoes or toast. Serves 4.

    Ingredients

    3/4 cup brown sugar
    1/2 cup sugar
    1/2 cup butter or margarine, softened
    2 Tbsp. honey or corn syrup
    1/2 tsp. vanilla
    1 egg
    1 cup all purpose flour
    1 tsp. cinnamon
    1/2 tsp. baking soda
    1/4 tsp. salt
    1 1/2 cups quick cooking oatmeal
    1 1/4 cups crispy rice cereal, crushed bran flakes, corn flakes or crushed graham crackers
    1 cup chocolate chips

    Instructions

    1. Preheat oven to 350°.
    2. In a large bowl, cream sugars and butter until fluffy.
    3. Add honey, vanilla and egg. Mix well.
    4. Blend in flour, cinnamon, baking soda and salt.
    5. Stir in the remaining ingredients.
    6. Press firmly into the bottom of a greased 9×13 inch pan.
    7. Bake 20-25 minutes.

    To microwave:

    1. Press the ingredients into a microwave safe dish.
    2. Microwave on medium power for 7-9 minutes. Rotate the dish every three minutes.
    3. The bars will firm as they stand.
    4. Cool and cut into bars.
    5. Save the crumbs for yogurt or ice cream topping.

    This fried potatoes recipe calls for bacon grease or margarine, but you can also use oil. We don’t recommend using butter because it burns too easily for this type of recipe. We prefer using bacon grease, because it gives the fried potatoes a delicious rich bacon seasoned flavor and baking grease works very well for frying.

    You can cook these fried potatoes to be brown and crispy, or a little softer if you prefer. I like to make them a little more crispy as a slightly crispy texture is nice and mixes well with other breakfast food. If you like your potatoes less crispy, cook as long as you like.

    1. Grease a 9×13 pan well.
    2. Microwave the butter in a large bowl on high for 45 seconds or until melted.
    3. Stir in marshmallows, coating with the butter.
    4. Microwave on high 1 1/2 minutes or until melted, stirring after 45 seconds. Watch carefully in case you need to stir more frequently.
    5. Mix in peanut butter and immediately add cereal.
    6. Lightly mix to coat well with the peanut butter.
    7. With a greased spatula or wax paper, press the mixture into the baking pan.

    3 cups all-purpose flour
    1 tsp. salt
    1/2 tsp. baking powder
    1/2 cup shortening
    3/4 cup warm water

    Instructions

    1. Blend all the ingredients except water until the mixture is the consistency of oatmeal.
    2. Add water and blend with fingers.
    3. Knead on a floured board 5 minutes.
    4. Cover and let rest 1/2 hour.
    5. Roll into 8 balls. Let rest 45 minutes.
    6. Flatten balls until very thin.
    7. Cook on a hot ungreased skillet until each side is slightly browned. Makes 8 tortillas.

    Then it happens! The first pot boils over leaving a red mess all over the stove, up on the walls and on the counters and floor. Hours later after the kitchen looks like World War III was fought in it we stand in our kitchen and proudly display our 2 pints of strawberry jam.

    Don’t despair. Canning isn’t the only way to use excess strawberries. In addition to the strawberry recipes below, here are some other suggestions to help you use strawberries:

    Yummy strawberry shake recipe!
    • Think small. Don’t plant too many plants in your garden. Plant just enough for what you need.
    • File all your recipes for fruits and veggies in order by the name of the fruit. Then when you need to find recipes for all the extra produce you can easily find several recipes.
    • To freeze berries: Throw extras into a bag and freeze. Don’t waste time freezing them on a tray, they do just as well thrown in a bag. These are great to use later for virtually any strawberry recipes!
    • Use extra strawberries in milkshakes, homemade smoothies, homemade popsicles, and fruit gelatin.
    • Use strawberries to top cereal or oatmeal; add milk for a strawberries and cream flavor.

    3 qts. fresh strawberries 3/4 cup sugar 1 Tbsp. lemon juice

    Instructions

    1. In large microwave-safe bowl, combine strawberries, sugar, and lemon juice.
    2. Cover loosely and microwave on high 15 seconds.
    3. Stir mixture to dissolve the sugar.
    4. Microwave on high, uncovered, for 5 minutes.
    5. Stir mixture well.
    6. Check to see if it is done by putting a little on a spoon. Place it in the freezer for 5 minutes uncovered.
    7. After 5 minutes, look at the preserves on the spoon. They should be thick but not hard.
    • For slightly thicker preserves, microwave on high for another 5 minutes.
    • For sweeter preserves, stir in a little more sugar. Then cook another minute.
    Spoon preserves into jars and refrigerate or cool at room temperature, spoon into plastic bags and freeze. Makes 7 cups.

    This jam easily lasts 3 weeks in the refrigerator and 3 months in the freezer.

    1. Place strawberries into a blender and process until smooth.
    2. Measure 2 cups of strawberry puree.
    3. Stir in lemon juice and corn syrup.
    4. Line a 15×10 inch jellyroll pan with heavy-duty plastic wrap and tape the plastic wrap to the pan at the corners.
    5. Pour the strawberry mixture into the prepared pan.
    6. Spread thin, leaving 1 inch on all sides. You can adjust this to fit your dehydrator or another pan; be sure it is spread thin on the pan.
    7. Dry in an oven at 150° or in a dehydrator for 7-8 hours or until the surface is no longer sticky.
    8. Remove the strawberry fruit leather from the pan while still warm.
    9. Roll up jellyroll fashion.
    10. Cut into logs.
    11. Wrap in plastic wrap. Make five 2 inch logs.
    *Any other fruit may be used in place of the strawberries.

    1 1/2 cup vanilla wafers (about 40 wafers), crushed 1/2 cup sugar 1/2 cup brown sugar 1/2 cup butter or margarine, melted 2 (3 oz.) pkgs. strawberry Jello 1 cup boiling water 1 (16 oz.) package frozen strawberries, thawed 1 (14 oz.) can sweetened condensed milk 1 (12 oz.) carton whipped topping, thawed

    Instructions

    Mix vanilla wafer crumbs, sugars and butter.

    Press into a 9×13 inch greased pan.

    Chill for 30 minutes.

    Dissolve Jello in boiling water.

    Stir in strawberries and sweetened condensed milk.

    Chill for 30 minutes or until partially set.

    Fold in whipped topping.

    Pour mixture into crust.

    Chill 2 hours.

    Kiwi Lime Strawberry Dessert

    This is one of those easy strawberry recipes that makes a very versatile dessert. It is great for this time of year when we want lighter and easy desserts. The green and red color, along with the ease of preparing it make it great for Christmas too so you might want to file it with your Christmas dessert recipes, too.

    This recipe calls for frozen strawberries but if you want to use fresh strawberries just chop the fresh strawberries and sprinkle with a little sugar. Let them set overnight for a few hours and they will produce the juice that you need in the recipe.

    The strawberry juice can be used to make strawberry sauce anytime for strawberry recipes like strawberry shortcake. Making it this way is much cheaper than buying the sauce in the packets and it tastes so much better. You can make any kind of berry sauce you want using the strawberry sauce recipe below. It requires no baking and it’s quick. Does it get any better than that?

    1 large angel food cake, cut into cubes (about 12 cups) 2 tsp. grated lime peel 1/4 cup lime juice 2 (6 oz.) containers of vanilla Greek yogurt 1 (8 oz.) container whipped topping 6 kiwi, peeled and sliced (use an egg slicer to cut your kiwi)

    1. Arrange half of the angel food cake cubes in an ungreased 13×9 inch pan.
    2. Mix lime peel, lime juice and yogurt.
    3. Fold in whipped topping.
    4. Spread half of the mixture on the cake cubes, pressing down to smooth.
    5. Arrange the kiwi slices over it.
    6. Spread the remaining angel food cake cubes evenly over the top.
    7. Spread the remaining yogurt mixture on the cake cubes, pressing down to smooth.
    8. Lightly cover and chill for several hours.

    1. Mix gelatin into cold water and let stand 5 minutes to soften.

    Crust (Meringue)

    6 egg whites
    1/2 tsp. cream of tartar
    1/4 tsp. salt
    1 3/4 cup sugar

    Filling

    1 (8 oz.) pkg. cream cheese
    1 cup sugar
    1 tsp. vanilla
    1 (8 oz.) container whipped topping
    2 cups mini marshmallows

    Topping

    1 (21 oz.) can cherry pie filling
    1 tsp. lemon juice
    1 pint fresh strawberries

    Instructions

    1. Preheat oven to 275°.
    2. Beat egg whites, cream of tartar, and salt until foamy.
    3. Add sugar, 1-2 Tbsp. at a time, until 1 3/4 cup is added.
    4. Continue to beat until stiff peaks form.
    5. Spread into a greased 9×13 pan.
    6. Bake for 1 hour.
    7. Turn off the oven and do not open the oven door.
    8. Leave in the oven with the door closed for 12 hours so the meringue sets.
    9. After 12 hours, mix cream cheese, sugar, and vanilla.
    10. Fold in whipped topping and marshmallows.
    11. Spread over meringue.
    12. Chill for 12 hours.
    13. Mix pie filling, lemon juice and strawberries.
    14. Spoon over each serving.

    This strawberry dessert recipe is probably one of my favorite desserts, partly because it is not too rich. It is a very light dessert. It is an especially good one to keep made up in the freezer for when unexpected company comes by.

    I like to use it not only for graduation parties, but also for baby showers or any other get-together because I can make it a week ahead of time and that means one less thing to have to deal with the day of the special event!

    Crust:

    1 cup flour
    1/4 cup brown sugar
    1/2 cup nuts
    1/2 cup butter, softened

    Topping:

    2 egg whites
    2/3 cup sugar
    1 (10 oz.) package of strawberries
    2 Tbsp. lemon juice (must use)
    1 small container whipped topping

    Instructions

    1. Preheat oven to 350°.
    2. Mix crust ingredients.
    3. Slightly press or crumble into a 9×13 inch pan.
    4. Bake 20 minutes. Stir occasionally while baking to make it crumbly.
    5. When cooled, remove 1/3 of the crust mixture to save to sprinkle on top of the dessert.
    6. Evenly spread out the remaining portion in the pan.
    7. Place the first 4 topping ingredients into a large mixing bowl.
    8. Beat at high speed for 10 minutes or until it forms stiff peaks. Be sure to use a large mixing bowl because this really increases in volume.
    9. Fold in whipped topping.
    10. Spread over crust.
    11. Sprinkle the 1/3 cup of crumbs you saved back over the top.
    12. Freeze for 3-6 hours or overnight.

    With snow in most of the country I thought I would post these recipes and tips for a fun frugal snow day, including our homemade snow ice cream recipe!

    There are lots of great ways to enjoy snow days or make them better for the kids. We have a family tradition of making snow ice cream every year with the kids and they look forward to the first snowfall with enough snow to make homemade snow ice cream. We have one child who doesn’t like milk or ice cream, so we make snow cones for him and I am including our easy snow cone recipe here, too!

    Sometimes, people get a little weird about using snow on the ground, but never fear! We have been making snow ice cream for years and nobody has died. Of course, you want to use fresh snow that has recently fallen and not dirty snow or, even worse, yellow snow! haha!

    After the recipes, I included some pictures of some of our snow adventures, including sledding, snow surfing when you don’t have hills and igloo building, which we did for quite a few years when the kids were younger!

    1/2 cup milk, sweetened condensed milk or cream
    1/4 cup sugar
    1/4 tsp. vanilla
    2 cereal bowls fresh clean snow

    Instructions

    1. Mix milk, sugar and vanilla together.
    2. Stir until vanilla is dissolved.
    3. Add fresh snow and stir gently until it is thoroughly mixed.

    Ingredients

    Crushed ice or snow
    1 pkg. flavored drink mix* (flavor of your choice)

    Instructions

    1. Mix drink mix with half as much water as the directions indicate to make a thicker syrup.
    2. Chill 1 hour.
    3. Just before serving, crush some ice or pack snow into your cup. Tu crush ice, you can use either a snow cone maker or put some ice cubes in a plastic bag and pound with a hammer.
    4. Pack the snow or ice chips into cups.
    5. Pour chilled drink mix over the ice and serve.

    Notes

    *You can also use fruit juice boiled down to half with food coloring added:
    Apple juice: green or red food coloring
    Grape juice: purple food coloring

    First, a stay dry tip: Slip plastic sacks over the kids feet to keep them dry. Put them on over the socks and the put on their shoes. Tie the handles around their legs.

    This easy homemade pancakes recipe takes about 15 minutes to make and everyone loves them! These pancakes are a staple at our house and your family will love them too!

    • Yield: 15-18 medium pancakes

    Ingredients

    2 Tbsp. sugar
    2 cups flour, all-purpose or wheat
    5 tsp. baking powder
    1/2 tsp. salt
    1/4 cup vegetable oil
    2 eggs
    1 1/2 cups milk

    Instructions

    1. In a bowl, mix all of the ingredients just enough to moisten the dry ingredients. The mixture will be thick and lumpy.
    2. Heat a griddle or frying pan over medium heat and lightly grease.
    3. Pour or spoon the batter onto the griddle to form pancakes.
    4. Cook the pancakes on a hot greased griddle.
    5. Flip when bubbles break on the surface and the edges begin to dry.

    Notes

    If you like, you can add chocolate chips or candies to the batter for a special treat.

    If you would like to make special patterns for the kids, you can add chocolate chips or candy while the pancakes are cooking. I like to make smiley faces and other patterns in the pancakes for special occasions. For Valentine’s day, I have made heart shapes in pink sprinkles, for Christmas, I have made Christmas designs, etc.

    1 Tbsp. wine vinegar
    2 Tbsp. olive oil
    1/3 cup fresh basil leaves, chopped into small pieces

    Instructions

    1. Dice tomatoes.
    2. Combine with salt, pepper, vinegar, oil and basil.

    34 cups mashed potatoes
    4 oz. cream cheese, softened in microwave
    1 clove of garlic or 1 tsp. garlic powder, to taste
    1 cup Mexican cheese blend, shredded

    Instructions

    1. Mix potatoes, cream cheese and garlic.
    2. Place in a 1-quart greased baking dish.
    3. Sprinkle with cheese.
    4. Place under a broiler for 3-4 minutes until cheese is melted.

    Be very careful removing this from the broiler as it will be very hot!

    1 ham 1/2 cup mustard 1/2 cup brown sugar 1/4 cup honey 1/4 cup orange juice 1 tsp. cloves

    Instructions

    1. Preheat oven to 250°.
    2. Cover the bottom of a roasting pan with aluminum foil.
    3. Bake ham at 250° for 1 hour.
    4. Reduce the heat to 175° and roast another 12-15 hours.
    5. About 3 hours before the ham is finished cooking, mix the remaining ingredients together in a bowl.
    6. Score the top of the ham.
    7. Pour the mixture over the ham.
    8. Baste the ham every half hour or so with the ham juices.

    This recipe is great because you can put it in the oven overnight and it will be ready the next day for the noon meal.

    Since it is at such a low temperature, the cooking time can go for longer if needed to fit your schedule.
