    2 cups heavy cream, very cold
    1 (14 oz.) can Sweetened Condensed Milk
    about 2 tsp. vanilla extract (optional)

    Instructions

    Mix cream on high speed until it becomes stiff, 2-4 minutes, depending on your mixer. Fold in sweetened condensed milk. If you are adding in any of the optional extras, do that now. Transfer to a container with a lid and freeze for 6 hours.

    • 2 Tbsp. chocolate syrup
    • 1/4 cup nuts

    This easy green chile recipe makes a light tasty meal when eaten with tortillas, but can also be used to top a lot of different Mexican themed dishes! It's super delicious!

    I absolutely love green chile! Being from Colorado, it’s pretty common to find green chile at Mexican restaurants. It can be eaten as a soup or it can be used to pour over the top of smothered burritos, enchiladas and more.

    I like to serve my green chile wrapped in tortillas. Then I smother the tortillas with more green chile and then top with cheese, lettuce, tomatoes and sour cream.

    If you like, you can make up the green chile and pour it over your favorite Mexican dishes like burritos or enchiladas. You can also pour it over chicken or pork chops.

    Ingredients

    1/21 lb. pork roast, or chops cubed into small pieces
    10 1/2 oz. chicken broth
    1 onion, finely chopped
    1/4 – 1/2 tsp. garlic powder
    1 (7 oz.) can green chiles, diced
    1/4 jalapeno, finely chopped
    1 Tbsp. butter
    1 tsp. salt
    2 Tbsp. flour or cornstarch, dissolved in water
    flour tortillas (or corn tortillas if you’re gluten free)

    Toppings

    cheddar cheese, grated
    lettuce, shredded
    tomato
    sour cream

    Instructions

    1. Simmer pork in broth on low for 10 minutes.
    2. Add all of the other ingredients except flour.
    3. Simmer 45 minutes.
    4. Thicken with flour or cornstarch so it is like a thick soup.
    5. Spoon about 1/4 cup into the center of a flour tortilla.
    6. Roll up tortilla.
    7. Top with more green chile.
    8. Sprinkle with cheese, lettuce and tomato.
    9. Top with sour cream, if desired.

    This green chile freezes really well.

    • This easy green chile recipe calls for pork, but I also occasionally make it with cubed cooked chicken.
    • This recipe is a great way to use leftover pork or chicken.
    • If you like, you can make the green chile and instead of serving wrapped in a tortilla, you can use to pour over your favorite Mexican dishes like burritos or enchiladas.

    This honey baked chicken recipe is perfect when you’re not feeling like cooking and want something fast! This is such a simple recipe but the result is fantastic! It’s been a staple in our house for years and readers and viewers just rave about it!

    I like to toss this honey baked chicken in the oven and then serve with rice and an easy vegetable like broccoli or mixed vegetables. For other easy dinner options, you can also serve it with baby carrots, sliced bell peppers, sliced cucumbers or a salad.

    6 chicken fryer pieces
    1/3 cup margarine, melted
    1/3 cup honey
    2 Tbsp. prepared mustard
    1 tsp. salt

    1. Preheat oven to 350°.
    2. Arrange chicken in a baking dish with the skin side up.

    Once I realized how easy it is to make this oven fried chicken, I started making it a lot more often. It’s a great way to please the hungry family when I’m not feeling that great and I don’t feel like doing a lot of extra work. It takes about 5 minutes to prepare and then I can leave it to bake while I do other things.

    If you want to feed a larger group, you can easily double or triple this recipe. My husband and teenagers love it so I often make a larger batch. If there’s any chicken left over, it’s easy for them to warm it up in the microwave or air fryer for a quick lunch. Air frying the chicken leftovers give then the same oven fried chicken crispiness!

    Ingredients

    45 Tbsp. margarine (not butter)
    1/2 cup baking mix
    46 pieces of chicken
    Salt and pepper
    1 can refrigerator biscuits (optional)

    Instructions

    1. Preheat oven to 375°.
    2. Melt margarine in a 9×13 inch pan.
    3. Pour baking mix on a plate or in a plastic bag.
    4. Roll chicken in the margarine, then into the baking mix.
    5. Place back into the pan.
    6. Salt and pepper to taste.
    7. Bake for about 45 minutes, until the juices run clear.
    8. If using the biscuits: About 5-10 minutes before the chicken is done, push the pieces of chicken tightly against one side of the pan and lay biscuits into the pan on the opposite side.
    9. Finish baking until the biscuits are brown.

    Notes

    It’s okay to lay the biscuits in the margarine and all in the bottom of the pan. That makes the biscuits margarine soaked and crispy. Oh, yum!

Since it already includes the biscuits, I will usually throw a vegetable like broccoli, mixed vegetables or green beans (We prefer French cut if we can find them) in the microwave when the fried chicken is finishing because it’s so easy.     1 egg
    1/4 cup honey or dark corn syrup
    1 tsp. ginger
    1/2 tsp. salt
    1/2 tsp. cinnamon
    1/4 tsp. cloves
    1 1/2 tsp. soda
    2 1/4 cups flour

    Instructions

    1. Preheat oven to 350°.
    2. In a mixing bowl, cream brown sugar and shortening.
    3. Add the egg and honey or corn syrup.
    4. Mix well.
    5. Mix all the dry ingredients in a separate bowl.
    6. Stir into the sugar mixture until well blended.
    7. Shape into balls.
    8. Dip half the ball in water, then in sugar.
    9. Place sugar side up on an ungreased cookie sheet.
    10. Bake 12-15 minutes. Makes 2 dozen.

    This slow cooker pot roast recipe is so delicious and easy that it is one of the most popular recipes in volume 1 of our Dining On A Dime Cookbook! It is versatile and one slow cooked roast can be used to make several different meals to keep pleasing your family day after day!

    This slow cooked pot roast is so delicious that everyone always raves about it! I cook it for my family any time I can get a good price on beef roast, but it’s also a great recipe to make when you want to impress guests! We have also made this slow cooked roast for holidays and special occasions.

    This slow cooked roast recipe can be cooked in the oven or in a slow cooker. The secret to fall off the bone tender roast is in the slow cooking. I prefer to cook pot roast in the oven because I think it gives the roast a little bit better taste than the crockpot, but if you prefer a slow cooker, you will still end up with a tender and tasty roast.

    I usually take a few minutes to prepare the beef roast the night before and let it cook slowly all night in the oven. By the next day, it is already starting to smell delicious, but I keep letting it slow cook until it’s time to serve for dinner.

    Some people worry about leaving the oven on all night, but as long as there is nothing wrong with your oven, it should be fine, especially if it is an electric oven. I have cooked this slow cooker pot roast recipe in the oven for more than 25 years and have never had a problem.

    Easy Serving Ideas

    For an easy one pan meal, I sometimes add some potatoes, carrots and onions about 2 hours before the roast is finished and let them all cook together with the roast. This makes a great meal by itself, but if you want, you can also serve with a salad, fruit salad or fruit or veggies.

    If I don’t have carrots and potatoes on hand, I will make some rice and serve the roast with rice and an easy vegetable. My family likes the fresh frozen broccoli or mixed vegetables so if I’m looking for an easy veggie, I will often microwave one of these just before serving.

    We dump the rice ingredients in our rice cooker so it’s ready when the other food is done, but if you don’t have a rice cooker, you can easily make rice in a pan on the stovetop.

    In the fall when I have lots of zucchini and other squash, I will also occasionally fry some squash and onions in a frying pan with margarine or oil and serve with the slow cooker pot roast. You can fry the squash in butter, but you have to watch it carefully because butter burns easily.

    This slow cooker pot roast is super versatile. You can plan to make this pot roast and reserve the excess to make up to 4 dinners with 1 roast.

    There are many delicious ways to use leftover roast! The pot roast leftovers are perfect for sandwiches and wraps. You can make delicious Mexican-style wraps by placing some roast on a flour tortilla with cheese, onions, lettuce and salsa.

    This delicious slow cooker pot roast recipe is easy to make with 5 minutes preparation time in an oven or a crockpot. I include the oven instructions first because I prefer to make it in the oven and crockpot instructions below!

    Ingredients

    1 beef roast, 3-5 lbs.
    1 onion, sliced
    1 can cream of mushroom soup (omit for GF and sprinkle with seasoned salt)

    Instructions

    1. Preheat oven to 250°.
    2. Place roast in pan.
    3. Pour cream of mushroom soup and onion on top.
    4. Cover tightly. Bake at 250° for 1 hour.
    5. Then turn it down to 225° and cook for 6-8 hours (about 6 hours for a smaller roast and 8 hours for a larger roast). When done, it should be so tender that the meat easily pulls off the roast with a fork. Serves 4 when you use a 3-5 lb. roast.

    Slow Cooker Instructions:

    If you prefer to cook this slow cooked roast in a crockpot or slow cooker, place the ingredients in the crockpot and cook on low for 8-10 hours or high for 5-6 hours. For the most tender roast, it is best to cook longer on a lower temperature.

    Use a meat thermometer to make sure the internal temperature reaches 145°.

    • This slow cooked roast recipe can be cooked in the oven or a slow cooker. The secret is in the slow cooking.     Topping

    Instead of paying the hefty price for any of these expensive flour mixtures, try making our gluten free flour recipe and keeping it on hand in your pantry.

    Ingredients for our Gluten Free Flour Recipe

    Tapioca Flour. A starch that improves the flavor and texture of gf baked goods.

    Potato Starch. Starch works really well in baked goods to replace gluten because it is also a form of glue.

    Corn Starch. Using a variety to starches improves the taste and texture of your gluten free baked goods.

    Brown or White Rice Flour. Rice forms the base of most gluten free flour mixtures. If used exclusively it can give the baked goods a grainy texture, so that’s why we mix it with other flours.

    Sweet White Rice Flour. Adds a touch of sweetness to your flour mix and improves the taste.

    Xanthan Gum. A little xanthan gum improves the shape and texture of gf baked goods.

    If you love enchiladas but hate the hassle of rolling them, this Easy Stacked Enchiladas Recipe is for you! Perfect for busy weeknights or when you need a crowd-pleasing dish, these stacked enchiladas come together in no time.

    Easy Enchiladas Recipe!

    This stacked enchiladas recipe is different from a traditional enchilada recipe in that you don’t roll the enchiladas. Instead, you layer the toppings between 2 or more layers of filling and then add cheese and salad toppings on the top.

    As written, the recipe serves 4, and includes 2 tortillas per stacked enchilada, but I often included an extra layer in the middle for my husband. My husband and the kids absolutely love this recipe. The kids love it with homemade tortilla chips and sopapillas!

    I often cut tortillas into quarters and fry them in oil to make tortilla chips, especially when I have a pack of corn tortillas that is not quite as fresh and the tortillas are more brittle than flexible. These make great chips and give life to tortillas you might otherwise throw away.

    This easy enchilada recipe is very flexible. I make it with these ingredients because everybody likes them, the recipe doesn’t cost a lot to make and it’s super easy. If you wanted to make it fancier, you could add a can of black beans or pinto beans to the mixture. If you prefer, you could leave out the beef.

    You could also add black olives or chopped green onions to the top for a different kind of garnish. Or smother it in green chile if you prefer! Oh YUM! Really, any kind of Mexican food type modifications would probably be wonderful! If you make any modifications, tell us about them in the comments and how they turned out!

    Ingredients

    1/2 lb. ground beef
    1 onion, chopped, or 1 tsp. onion powder
    2 1/2 cups enchilada sauce
    vegetable oil for frying*
    1 cup Cheddar cheese, grated
    1 onion, chopped, or 1 tsp. onion powder
    1 tomato, chopped
    2 cups lettuce, chopped

    Instructions

    1. In a saucepan, brown ground beef and onions.
    2. Drain.
    3. Add enchilada sauce and simmer for 10 minutes.
    4. Heat 1/2 inch of oil in a frying pan.
    5. While you are waiting for the oil to heat, prepare bowls of tomatoes, lettuce and cheese.
    6. The oil is hot enough when you place a tortilla in it and it sizzles. Have your plate ready in one hand and dip the tortilla in oil for 5 seconds.
    7. Using kitchen tongs, turn over the tortilla and cook 5 more seconds.
    8. Lift the tortilla out of pan, hold over the oil and drain slightly.
    9. Place the tortilla on the plate and put 1/4 cup beef mixture on top.
    10. Dip another tortilla in the oil and fry the same as above. Place on top of beef mixture.
    11. Top with more beef mixture, tomatoes and lettuce.
    12. Finish with a little cheese, sour cream and olives if desired. Serve warm. Serves 4.
     
     

    Notes

    For more hearty stacked enchiladas, you can stack additional layers of tortilla and then beef mixture before topping off with lettuce and tomatoes. If you do, you will want to adjust the recipe to make sure it serves the number of people you are feeding.

    *For lower fat enchiladas, dip in warmed enchilada sauce or just warm the tortilla in the microwave for 8 seconds; then add meat and toppings.

    1 cup milk
    2 Tbsp. all-purpose flour
    dash salt
    1 Tbsp. butter or margarine

    Instructions

    1. In a covered jar, combine the milk, flour and salt. Shake well until fully dissolved.
    2. Melt the butter in a 1-quart saucepan over low heat
    3. Stir in the flour-milk mixture.
    4. Cook over low heat, stirring constantly, until the mixture thickens and starts to bubble. Continue stirring until smooth and fully thickened.

    This recipe makes 1 cup (equivalent to 1 can of cream soup) and can easily be doubled or tripled as needed.

    1 cup white sauce
    1 small can mushrooms, chopped (optional)

    Instructions

    1. Preheat oven to 400°.
    2. Mix all ingredients together and form into small balls about 1 1/2 inches in diameter. (I form mine in a teaspoon.)
    3. Bake for 10 -13 minutes.

    1. Lower oven temperature to 300°.
    2. Whisk the white sauce and mushrooms together.

    Instructions

    1. Mix the first 5 ingredients and shape into 8 patties.
    2. Pour vegetable oil into the frying pan
    3. Dredge the patties on both sides with the flour*.
    4. Brown in the hot oil on both sides.
    5. Place the patties in a crockpot. They can overlap.
    6. Combine the white sauce and mixed gravy. Pour over the patties.
    7. Cook on low for 4-6 hours, until the patties are cooked through.

    Notes

    *I just pour the flour onto a plate, lay the patty in it and dredge on each side.

    **You could replace the gravy mix with about 1 cup leftover roast gravy.

    1 large onion, peeled
    10 small (red) potatoes
    15 baby carrots
    1 head of cabbage, cored and cut into wedges
    Salt and pepper (to taste)

    1. Place brisket, seasoning packet and onion in a large Dutch oven or pot.
    2. Cover with water 6 inches above meat.
    3. Bring to a boil and boil for 30 minutes.
    4. Reduce to medium-low or to a gentle boil. Cover and cook for 3 1/2 hours.
    5. Remove onions, cut into wedges and put back in the pot.
    6. Add carrots, cabbage and then potatoes.
    7. Cover and cook 30 more minutes or until potatoes are tender.
    8. Remove vegetables, but keep the meat in the juices until you’re ready to slice it so it won’t dry out.

    Side Sauce

    1/2 cup mayonnaise
    1/2 cup sour cream
    2 Tbsp. horseradish
    1/2-1 tsp. Worcestershire sauce
    Mix all sauce ingredients together the night or day before and then serve on the side with your corned beef.

    3 1/2 cups Rice Chex (I use generic)
    3 1/2 cups Corn Chex (I use generic)
    2 cups gluten-free O’s cereal (I use Cheerios)
    1 cup gluten-free peanuts (optional)
    6 Tbsp. butter or margarine, melted (You may use ghee if you’re dairy free.)
    1/4 cup gluten free Worcestershire sauce (Lea & Perrins)
    2 tsp. seasoned salt
    1/2 tsp. garlic powder
    1/2 tsp. onion powder
    1 cup bite-sized gluten free pretzels (Synder’s or Glutino)
    1 cup gluten free bagel chips (Glutino)

    Instructions

    To Microwave:
    1. Mix the cereals, nuts, pretzels and bagel chips in a large microwavable bowl. Set aside.
    2. In a small microwavable bowl, microwave the butter, uncovered, on high about 40 seconds or until melted.
    3. Stir in seasonings.
    4. Pour over the cereal mixture. Stir until evenly coated.
    5. Microwave the Chex mix, uncovered, on high 5 to 6 minutes, thoroughly stirring every 2 minutes.
    6. Spread on paper towels to cool. Store in airtight container.
    To Bake In The Oven:
    1. Preheat the oven to 250°.
    2. Put the cereal and seasoning mixture into an ungreased roasting pan.
    3. Bake for 1 hour, stirring every 15 minutes.
    4. Spread on paper towels to cool for about 15 minutes.

    This homemade Chex mix recipe is an easy make ahead recipe that can be stored 2-3 weeks. In our house, it doesn’t last that long but it can be done. :-)

    Substitutions:  You can mix and match to suit your taste—just use a total of 9 cups of cereal. Honey Nut Cheerios adds a  touch of sweetness.  You can add more pretzels or bagel chips and, of course, if you aren’t gluten free, use any “regular” items.

    Other Add Ins For Homemade Chex Mix:

    • oyster crackers
    • cheese crackers (like Cheez-Its)
    • cashews
    • almonds
    • sunflower seeds
    • Ranch Seasoning Packet (instead of seasonings)

    • Yield: Makes 100 one inch mints

    Ingredients

    2 1/2 cups powdered sugar
    1 (3 oz.) pkg. cream cheese, softened
    1 tsp. peppermint flavoring
    Food coloring
    Sugar

    Instructions

    1. Mix the powdered sugar, cream cheese, peppermint flavoring, and food coloring in a mixing bowl.
    2. Knead several times.
    3. When the dough is smooth, roll it into a ball.
    4. Wrap in plastic wrap and chill 2 hours.
    5. Roll into small balls.
    6. Dip each ball into the sugar and press into the mold. If the mints stick to the mold, knead in more powdered sugar.
    7. Remove from the mold and let dry 1/2 hour.
    8. Store in an airtight container.

    These mints can be frozen or refrigerated.

    Notes

    • This is a great mint for weddings. It is very classy when molded into leaves or shells.
    • You can use color to match the bride’s wedding colors.
    • If the mints stick to the mold, knead in more powdered sugar.
    • You can buy candy molds in the craft section at Wal Mart, or a cake decorating shop. Use anything you like – hearts, leaves, and shells all work well.

    Ingredients

    1 (8 oz.) package cream cheese softened
    2 Tbsp. butter
    2 1/2 cups powdered sugar free sweetener
    1 tsp. peppermint extract
    Food coloring, optional

    Instructions

    1. Mix the first 4 ingredients.
    2. Beat ingredients together with a mixer. It should be a thick, but moldable dough consistency. If it is too dry, you can add a tablespoon of milk.
    3. If desired, add food coloring. For more than one color, divide the dough into equal parts in separate bowls.
    4. Mix the food color into the dough with a mixer. If using multiple colors, rinse the beaters between colors.
    5. When mixed, roll into small balls. If the dough is too soft to roll, refrigerate for a few minutes before rolling to harden slightly.
    6. Lay each ball on a baking sheet and press with a fork to decorate, OR pipe into peppermint drops.
    7. Store in an airtight container.

     

    These mints can be frozen or refrigerated.

    Kristina Writes: I wanted to add a tip to your cream cheese mints recipe. If you don’t have candy molds for your mints, you can roll them into balls and use an initial imprint stamp with the first initial of the bride and groom’s last name. Just push the stamp down in the center of the mint and use even pressure. They look like designer mints. If you powder the mints with more sugar, do so before you stamp the mint.     1 small package cherry Jello
    1/4 to 1/2 cup red hot candies
    1 1/2 cups applesauce

    Instructions

    1. Dissolve Jello and candies in boiling water. I usually do this in a small saucepan so I can keep it on low heat and keep it warm while dissolving the candies.
    2. When the Jello and candies are mostly dissolved, add the applesauce.
    3. Chill until set.

    There will be a lot of us having buffet dinners and parties before and on Christmas and many of us will be looking for easy party food ideas.

    Have you ever been to a dinner or party where the buffet was just not laid out right? It took forever for everyone to get through the line and trying to juggle everything was a tremendous challenge.

    Here is the proper way to lay out your party food for a buffet dinner so that things go quickly and easily for you and your guests.

    If you have room, set the table up so that people can walk down both sides of the table and serve themselves. Regardless of whether they walk down one side or both sides, make sure that at the end of the table it is easy for them to go on to the room where they will be sitting or mingling. Try to arrange it so they don’t have to push their way back through the other people who are trying to make their way down the table to serve themselves.

    This is the order in which to set things on the table:

    • Plates, meats, side dishes, relish dishes, salads, desserts, napkin, silverware and then drinks.Some people put the drinks first. This is a no-no because then everyone has to juggle a plate and a glass while trying to serve himself. This is why it is better to put the salads and desserts at the end if you are using salad or dessert plates too.
    • If at all possible, put the drinks and desserts at a separate table.This helps reduce the congestion. Guests can then set their plates down after they are filled and go back to get their drinks without having to stand in line again. You’ll also avoid problems with guests trying to hold two plates or a drink and a plate.
    • If it is going to be an all day get-together, you can wait and put the desserts out a little later with a pot of coffee and some tea to make things easier.

    4 cups wild rice, cooked
    1 (8 oz.) can sliced water chestnuts, drained
    1/2 cup each of the following:
    celery, sliced
    green peppers, chopped
    frozen peas, thawed
    dried cranberries
    1/4 cup green onions, sliced

    Dressing:

    1/3 cup vinegar
    1/3 cup cranberry juice
    2 tsp. olive oil
    1/2 tsp. dried basil
    1 tsp. sugar
    salt and pepper

    Instructions

    1. Mix all the salad ingredients in a large bowl.
    2. Mix the dressing ingredients into a small bowl; pour over the salad.
    3. Refrigerate overnight.
    4. Sprinkle with pecans just before serving.

    Ingredients

    4 cups tomatoes (canned with juice may also be used
    1 green pepper, chopped
    1 large onion, diced
    2 to 3 Tbsp. lime juice (to taste)
    1/4 tsp. garlic powder
    2 Tbsp. cilantro, chopped
    1 small, fresh jalapeno pepper, minced
    salt and pepper

    Instructions

    1. Cook all the ingredients in a large saucepan on medium heat for 20 minutes.
    2. Pour into hot, sterile quart jars and seal.
    3. Process in a pressure canner for 25 minutes. We use salsa frequently enough that we don’t have to can it. If you don’t can it, store it in the refrigerator.
