    1 cup thawed, chopped frozen spinach
    1 1/2 cups thawed, chopped frozen artichoke hearts
    6 oz. cream cheese
    1/4 cup sour cream
    1/4 cup mayonnaise
    1/3 cup grated Parmesan
    1/2 tsp. red pepper flakes
    1/4 tsp. salt
    1/4 tsp. garlic powder

    Instructions

    1. Boil spinach and artichokes in 1 cup of water until tender.
    2. Drain. Discard liquid.
    3. Heat cream cheese in the microwave for 1 minute or until hot and soft.
    4. Stir in the rest of the ingredients

    1 (16 oz.) can refried beans
    2 Tbsp. milk
    1 (8 oz.) pkg. cream cheese, softened
    1/2 cup sour cream
    2 Tbsp. taco seasoning

The chickpea is a key ingredient in Mediterranean and Middle Eastern cuisines, used in hummus and other dishes. Chickpeas are a complete protein, which makes them a particularly healthy food.

    Can I use Chickpeas From A Can?

    Yes. Although you can use canned or fresh chickpeas, I generally use canned ones because they are easy to use and don’t require any special preparation. Since this is an easy hummus recipe, I hate to make it more complicated than it needs to be. ;-) I also like to use a little of the juice from the chickpeas when I blend them to make the blending easier.

    What is Tahini – Can I make hummus without tahini in this recipe?

    Tahini is a nutty paste made from ground and roasted sesame seeds. It is often an ingredient in Mediterranean dishes, including hummus. Tahini is optional in our easy hummus recipe. I personally don’t like the flavor of Tahini, so I don’t use it. If you’re wondering how to make hummus without tahini, you can make our recipe below and just leave it out!

    Ingredients

    1 (15 oz.) can chickpeas or 1 1/2 cups chickpeas, cooked
    1/4 cup fresh lemon juice (about 1 large lemon)
    1/4 cup tahini, well stirred (optional)
    1 small garlic clove, 1 roasted garlic clove, or 1 tsp. garlic powder (or more, to taste)
    2 Tbsp. olive oil, plus more for serving*
    1/2 tsp. cumin
    salt (to taste)
    23 Tbsp. water
    dash paprika (for serving)

    Instructions

    1. Mix everything together except the paprika in a blender, food processor, or use a stick blender.
    2. Blend until smooth, adding a little water if needed for a creamier texture.
    3. Let sit at least 1 hour before serving to allow the flavors to blend.
    4. Just before serving, drizzle with olive oil and sprinkle with paprika.

    Notes

    • If I don’t have lemons or lemon juice handy, I like to use these True Lemon Packets. I frequently use them for cooking instead of lemon because they are so much easier.
    • This easy hummus recipe is naturally gluten-free.
    • To make preparation extra easy, I like to use a stick blender.
    • *Olive oil is traditionally used, but bacon grease adds a smoky depth of flavor.
    • The recipe calls for salt, but I use my homemade seasoned salt which is a mixture of salt, garlic powder and onion powder.
    • You can divide the hummus into individual portions and store in the freezer for quick grab-and-go snacks.
    • To make it extra fancy, garnish with with green onions or roasted garlic.

    Cake:

    1 package yellow cake mix
    3 Tbsp. butter or margarine, melted
    1 1/2 cups eggnog
    2 eggs
    1/8 tsp. nutmeg

    Instructions

    1. Grease a Bundt or tube pan with butter and press almonds into the sides and bottom.
    2. Preheat oven to 350°.
    3. Beat the remaining ingredients together until smooth.
    4. Pour into a prepared pan.
    5. Bake for 40-50 minutes, until a toothpick inserted into the center comes out clean.
    6. Cool on a wire rack.

    1/2 small package (23 Tbsp.) slivered almonds, toasted

    1. Mix everything.

    • If you want to make a ball or log, then don’t mix in the almonds. Instead, make your cheese ball or log and then roll it in the almonds.
    • To toast your almonds, lay them on foil or a pan and heat in a 400° oven until brown. Watch carefully.

    5. Mash avocados with a fork and stir until they are mixed together to the desired consistency. (I usually make them fairly smooth, but you can leave bigger chunks if you like them that way.)
    6. Stir in tomatoes, cilantro or jalapeños, if desired.

    Easy Guacamole Tips:

    • If you find avocados on sale, you can make a lot of homemade guacamole all at once, put the guacamole in smaller portions in ziplock bags and freeze. (I occasionally find fresh avocados on sale for 3 for $1.00.) When you’re ready to use, simply defrost and serve.
    • If you slice the avocado in half and then make crosswise cuts in the avocado while it is still in the skin, it is easier to scoop. (It comes out in little cubes.)
    • To save time, I usually use my homemade seasoned salt in place of the garlic, onion and salt.
    • When you cut the avocados, if there is a brown spot, cut it out and discard.
    • The lime juice is primarily to keep the guacamole from browning, but as long as it is being refrigerated, if it turns brown in the first day or 2, it is usually still good, even though it is no longer pretty.

    I have to say that homemade caramel apples are probably among my top 3 favorite foods!  Mom used to make homemade caramel apples for us every Halloween, along with homemade chili. Gourmet foods like caramel apples look so good at the store and on TV, so it’s easy to imagine them being difficult, but they really are easy to make. (We include a delicious caramel apples recipe below.)

    • The trick that makes their caramel apples look so fancy is in the packaging. Just buy some clear cellophane bags at the hobby store or from your florist. Put your homemade caramel apples in the bags and tie with a pretty ribbon. An assortment looks wonderful in a basket lined with an orange or red napkin and a pretty Halloween or Christmas bow tied on top.
    • Sprinkles can be found at Walgreens for $1.00 a bottle on sale.
    • Look for Candy Bars on sale to use for melted chocolate after Halloween. Compare prices it might or might not be cheaper than the bagged candy melts.
    • Add 1 tsp. paraffin wax to 2 cups melted chocolate to make the chocolate shiny.

    Caramel apples like the ones in this caramel apples recipe sell for $6-$8 EACH on the home shopping channel. They look wonderful on TV but they can be made fresher at home and for around .50-$1.00 each instead.

    Ingredients

    1 package caramels
    2 Tbsp. water
    powdered sugar
    6 apples (Most people use Granny Smith Apples but they are too tart for me so I use Gala Apples.)

    Instructions

    1. Stick a popsicle stick, handle end of spoon or a twig (washed, dried and wrapped in foil) in the end of the apple.
    2. Sprinkle some powdered sugar on waxed paper to set the caramel apples on after they are dipped so they don’t stick.
    3. Dip the apples in caramel and then roll in:
    • Crushed candy bar pieces
    • M&M’s
    • Mini chocolate chips
    • Flavored chips: peanut butter, white chocolate, dark chocolate, cherry, butterscotch
    • Nuts and then drizzle with melted chocolate of your choice
    • Crushed chocolate-covered toffee squares
    • Crushed milk chocolate-covered toffee coated almonds

    Caramel Apple Bar

    You can also make a caramel apple bar.

    Put the caramels and water in a crockpot and let it melt before you party. Then lay out several dishes of candy, chocolate chips, M&M’s, etc.

    Let each person dip his or her apples in the caramel and then roll them in the candies.

    I have to admit, I am one of those crazy people who loves making things the old-fashioned way. I probably wouldn’t make this homemade butter recipe on a regular basis, because it doesn’t really save money to make butter yourself, but it sure is fun to see how just plain whipping cream can turn into butter.

    The funny thing is that I have never made homemade butter with my kids (probably because I didn’t want to get a hand cramp mixing the butter! lol). After my daughter tried it herself just for fun, I thought I would share the homemade butter recipe. This is really one of the easiest recipes you can make because it is really only a 1 or 2 ingredient recipe, but you do have to have a little patience! It’s especially good if you’re trying to teach your kids where food comes from.

    Here’s an easy recipe you can use to make homemade butter the old-fashioned way! Homemade butter is easy to make with just 1 or 2 ingredients!

    Ingredients

    Units
    2 cups heavy cream 1/4 tsp. salt (leave out for unsalted butter)

    Instructions

    You can make this homemade butter in several different ways.

    Stand Mixer Method:

    1. Put the heavy cream into a stand mixer.
    2. Put the whisk attachment on the mixer.
    3. Whisk until it turns to homemade butter, about 10-15 minutes.

    Hand Mixer Method:

    1. Place the cream into a mixing bowl.
    2. Then mix with a hand mixer for 10-20 minutes, until it turns into butter.

    Food Processor or Blender Method:

    1. Put the cream into a blender or food processor.
    2. Blend for 10 minutes.

    Jar Method:

    1. Put the heavy cream into a 3-4 cup mason jar with a tight lid.
    2. Shake for 20-25 minutes. (You can use less cream if you don’t have a jar that big. For example,  use 1 cup of cream in a 2-cup jar.)

    After it turns to homemade butter, spoon out the butter*, place it in a bowl, and stir in salt if desired.

    Remove buttermilk and either drink it or use it for pancakes.

    Store the homemade butter in the refrigerator.  Spread on toast, muffins, pancakes or anything else that you just love to slather with butter!

    Notes

    *If there is too much liquid in your butter, you can put it in a bowl, pour ice water over the butter and squish until the liquid comes up. Pour off the extra water and buttermilk. This will clean out any extra buttermilk remaining in your butter. Then salt, if desired, and refrigerate.

    1 medium onion, finely chopped 2 garlic cloves, minced 2 tsp. vegetable oil 2 (15 oz.) cans chili without beans 2 cups salsa 2 (3 oz.) pkg. cream cheese, cubed 2 (2.25 oz.) cans ripe olives, sliced and drained

    Instructions

    1. Sauté onion and garlic in the oil until tender.
    2. Place the sauteed onions and garlic and the rest of the ingredients in a slow cooker.
    3. Cover and cook on low for 4 hours or until heated through.  Stir occasionally.

    We will be getting our first frost soon. My daughter in law just called and said “Help! What do I do with these bags of green tomatoes, peppers and onions? How do I make salsa?!”

    I figured that many others are in the same boat too. After telling her to save me some tomatoes so I can cook fried green tomatoes, I gave her my favorite salsa recipe from our Dining on a Dime cookbook. There are two homemade salsa recipes in Dining on a Dime and this one is my favorite. The brown sugar seems to bring out the flavors of the veggies so well.

     

    Homemade Salsa Recipe #2

    4 large ripe tomatoes
    3 cans (6 oz) tomato paste
    4 large green tomatoes, skinned
    1 1/2 cups vinegar
    1 large green pepper, chopped
    2 Tbsp. brown sugar
    2 onions, chopped
    12 jalapeño peppers, seeded, chopped.For extra hot, leave in seeds
    4 tsp. garlic powder or 6-8 cloves of garlic, chopped

    Process all ingredients in a food processor. Place in a large Dutch oven and bring to a boil. Can. If your family eats a lot of salsa there is no need to can it. Just refrigerate. Makes 6 pints.

    Tips:

    • When traveling with food, spray the lid or the foil covering with non stick cooking spray to keep things from sticking to the covering.
    • Your pizza cutter is not just for cutting pizza. Use your pizza cutter to cut lattice strips for pies or to trim the edges you need removed from things like sponge cakes or hard brownies.
    • Make your life easier. Find and use as many cooking shortcuts as you can. For example, if you cook ground beef ahead of time and keep packets of it in your freezer, your prep time for many meals will be 15 minutes or less. This works great for spaghetti, lasagna, tacos, enchiladas, casseroles, taco salads, etc.
    • If you are tired or in a hurry and a recipe calls for chopped onions or minced garlic, you don’t need to take time to chop and mince all of that. Just pull out the garlic powder or onion powder and use it for seasoning instead. Some gourmets may have a heart attack over this, but they probably haven’t been juggling a colicky baby and 2 toddlers all day, so give yourself a break. Forget the chopping if you need to.

    Ingredients

    1 stick butter (not margarine), softened
    1 (8 oz.) package cream cheese, softened
    2 oz. crumbled blue cheese
    1/2 small package (23 Tbsp.) slivered almonds, toasted
    2 Tbsp. chopped ripe olives

    Instructions

    1. Mix everything.
    2. Chill.
    3. Serve with chips.

    Notes

    • If you want to make a ball or log, then don’t mix in the almonds. Instead, make your cheese ball or log and then roll it in the almonds.
    • To toast your almonds, lay them on foil or a pan and heat in a 400° oven until brown. Watch carefully.

    ~ Here’s a tip to make cleaning those small grills like a George Foreman one. When you are done using it and it is still slightly warm, unplug it and place a few wet paper towels on the grill closing it so the steam can work it’s magic.

    ~ When making mac and cheese and you are out of milk or anytime for that matter use sour cream in place of the milk for an extra creamy and yummy dish.

    ~ For a fast refreshing summer salad mix leftover crushed pineapple with applesauce. It is different but good.

    Barbecue Dip
    1 cup sour cream
    1/2 to 3/4 cup barbecue sauce

    Mix ingredients.
    I usually don’t measure anything in this recipe. I just start adding the barbecue sauce to the sour cream until it tastes good. It’s really yummy with plain old potato chips.

     

    Orange Floats

    Vanilla ice cream
    Orange soda

    Place one scoop of ice cream in a tall glass and pour a small amount of orange pop on it. Add another scoop and more pop. Repeat this until your glass is full. Top with whipped topping and/or an orange slice.
