    Here’s a no bake peanut butter cookie recipe kids are sure to love! I’m also including some other cheap and easy summer treat ideas that will make life easier and are kid approved! Not all recipes have to be cooked or complicated and these no bake peanut butter cookies are perfect!

    Most of us don’t want to bake in the heat of summer, but the kids still need cookies and lots of them. These make perfect summer snacks, fillers for school lunches and more. Who doesn’t love cookies, and especially when they’re easy.

    This peanut butter cookie recipe is super easy to make! Just spread the cookies with peanut butter filling and dip in chocolate. Older kids can make these cookies themselves and younger kids can help mom make them (if Mom is feeling adventurous LOL).

    This no bake peanut butter cookie recipe starts with:

    • Ritz crackers or Ritz-style butter crackers. I have always found these handy crackers to be a great base for desserts and other snacks!
    • Peanut butter. Any kind will work. Creamy peanut butter might be easier to use for this recipe, but crunchy would probably be fine if you don’t mind a thicker crunchy center!
    • Chocolate almond bark. The recipe calls for chocolate, but you can easily use white almond bark or melted chocolate chips if you prefer.

    To make this no bake peanut butter cookie recipe:

    This no bake peanut butter cookie recipe is super easy. Start with the Ritz crackers, spread peanut butter over the top and then top with a second cracker.

    Next, you’ll melt the almond bark in the microwave. You have to be careful not to burn the almond bark. To avoid burning it and achieve the right consistency, microwave 30 seconds at a time, stir and then melt a little more until it is the right consistency. It should take around 2 to 2 1/2 minutes altogether for most microwaves.

    Then you’ll lay each cookie on a piece of wax paper and allow the chocolate to harden. If you like, you can also roll the dipped cookie in a coating, like coconut or sprinkles.

    Years ago when food was a lot more expensive and not nearly as plentiful, most people didn’t waste anything. People scraped every drop from the bowl and even 1-2 Tablespoons of leftovers were saved to use in some way, including leftover frosting. Often I will decorate something and have just a tiny bit of frosting remaining. This recipe is the perfect answer to that dilemma because it only needs a tiny bit of frosting.

    Spread any frosting on soda crackers for a treat the kids will love. These are so good you may find yourself opening a can of frosting just so you can make some. It is a great inexpensive snack to make for when all those neighborhood kids are at your house and you need something fast and easy.

    Butter and Jam Crackers

    Spread regular soda crackers with a thin layer of butter. Then add your favorite jelly or jam.

    I love doing this all the time. These aren’t only good in the summer. They’re also great with chili or soup in the winter. It is that salty, sweet taste we like so much. I have also used peanut butter in place of the butter – with or without the jam. It is a lifesaver when you are out of bread to add these to a meal.

    Peanut Butter and White Corn Syrup

    This simple snack recipeis one of our favorites. Like the others, it is so good with chili or soup. I often eat this combination for my lunch.

    Mix equal parts peanut butter and white corn syrup. Then spread on soda crackers. Sometimes, I use a little less syrup than peanut butter.

    Easy Frugal Living Tips To Save on Food!

    • Use your restaurant leftovers the same way you use regular leftovers. For example:
      • Boil the carcass of deli chicken for soup or noodles and dumplings.
      • Use leftover rice from Chinese take out in casseroles, soups, rice pudding or if it is white rice, eat it for breakfast with cinnamon, sugar and milk.
      • Cut up leftover French fries and fry in bacon grease like hash browns or cook with chopped meat and veggies for an easy homemade hash.
      • Leftover salads or veggies can be liquified to make vegetable broth or veggies can be frozen and then added to soups and casseroles.
      • Uneaten hamburgers or hot dogs can be cut into pieces, frozen and then added to chili, baked beans, spaghetti, soups etc.
    • Sometimes I need a dollop of whipped cream and I don’t always have it thawed. Thaw your whipped topping and place dollops on a cookie sheet. Freeze them. Place in a plastic bag and keep it in the freezer. When you make cocoa for the grandkids or need a dollop of whipped topping to top an individual dish of pudding or dessert you can pull out just what you need.
    • The next time you make stroganoff, try adding an envelope of ranch salad dressing to the sour cream for a little extra flavor. You can do this to homemade or store bought stroganoff.

    Helpful Kitchen Tips:

    • Keep a toothbrush in your kitchen to clean things like graters, beaters, chopper blades and other hard to clean small items.
    • Keep another toothbrush in your kitchen to clean places like around your faucets, appliance knobs, sink drain, etc.
    • Use Dow bathroom cleaner in the kitchen to clean anything with grease on it. I just spray it on and it literally melts away the grease and dirt. It is especially good to use for places like the back of the stove where the knobs are or on shelves where that greasy kitchen grime can build up.
    • Don’t just wipe things in a kitchen with a wet rag. Not only are you not cleaning anything, you are probably making it worse. Use soapy water to wipe things down.Hot soapy water cleans almost everything, especially in the kitchen, but it doesn’t hurt every once in a while to put some Clorox in your dish water to use to wipe things. Remember, you don’t need half a cup of bleach, only a capful or two. Stop worrying so much about what a few drops of Clorox is going to do to your family and worry more about what food poisoning will do to them because you didn’t clean the right way with the right stuff.

    You can never have too many great cookie recipes. This Double Chocolate Peanut Butter Cookies Recipe is easy to make, with very little measuring. To make things even sweeter, your favorite candy bar is in the recipe. Let your child pick the candy bar for a personalized treat at a birthday or graduation event.

    When I’m looking for a new cookie recipe, I look for one that everyone will love but I most importantly want it to be simple to make. I love that this chocolate peanut butter cookies recipe includes a brownie mix for the dry ingredients, which decreases the amount of measuring required.

    Ingredients for Double Chocolate Peanut Butter Cookies

    Chunky Peanut Butter. This is one of those times when more crunch is better because it adds a nice satisfying texture to the cookies!

    Vegetable Oil

    Eggs

    Fudge Brownie Mix. You’ll want the box that says for a 9 x 13-inch pan, and it should not be pre-baked as the mix itself is part of the recipe. Any brand will work.

    Water

    Unsalted Peanuts. I recommend plain peanuts, without the skin and without added salt.

    Semi-sweet Chocolate Chips. Milk chocolate chips will also work but the candy bars add plenty of sweetness. While I have never tried it, you could probably use white chocolate chips as well. You’ll need a twelve-ounce package.

    • Money Saving Tip: To save money, stock up on chocolate chips of all varieties during the holiday season when they are on sale.

    Candy Bars. Coarsely chopped.

    How to Make Double Chocolate Peanut Butter Cookies

    For this recipe, mix the peanut butter and oil first, then beat in the eggs. Add to this the brownie mix and water. The peanuts and chocolate chips, and candy bars are folded in last. Use a greased baking sheet or parchment paper on your baking sheet. Bake in a pre-heated oven for twelve to fourteen minutes.

    What Kinds of Candy Bars Work?

    This cookie generally calls for candy bars without giving specifics, so you might be wondering what kinds of candy bars will work. The honest answer is — almost any candy bar! These are a few of our favorites. Use a different candy bar each time you make the recipe for a completely different cookie. Because the recipe calls for crunchy peanut butter AND unsalted peanuts, I have avoided trying the recipe with a candy bar that has nuts.

    Tips for the Best Cookies Possible

    • Double Chocolate Peanut Butter Cookies bake best if they are all close to the same size. Use a cookie scoop or try to be consistent scooping with a spoon to get cookies that will bake evenly and finish at the same time.
    • Crush your candy bars by placing them in a plastic zipper bag and mashing with a rolling pin or small rubber mallet. You’ll need to squeeze the air out of the bag and be gentle enough you don’t tear the bag. I like to get kids involved with this step because they love the job. If you prefer you can also coarsely chop the candy bars with a knife. Take a look at these kid-safe plastic knives even preschool kiddos can use to chop candy bars or bananas.
    • Folding ingredients into a recipe is a slow blending motion to help keep the new ingredients intact while also keeping the air in the dough. You can watch a demonstration of “folding” ingredients into a mixture here.
    • Check for doneness at the earliest time listed. Cookies may not look quite ready, but if they are starting to brown on the edges you will want to take them out. This cookie recipe already has plenty of crunch from the peanuts.

We’ve even included a really good and easy homemade skunk smell remover recipe, which actually works. It’s amazing how easily dogs get into mischief and get sprayed by a skunk. Maybe someone in your family stumbled across a skunk and now you want to remove the skunk odor. This recipe will definitely do the trick!

    I thought with summer here and with many of us spending more and more time outside some of you might end up needing a good skunk smell remover! It might even be wise to take the ingredients with you on your picnics or camping trips, although these are basic ingredients and you may have them with you anyway.

    My neighbor has a cabin by a lake and had to use this recipe about four times last year alone when a skunk made a nest under her porch.     Just for the record, things like tomato juice, vinegar, spraying with lemon, citrus, perfume or Febreze almost never work as skunk smell removers. If you don’t want to use the peroxide recipe you can soak down the person or animal with vinegar and dishsoap but this doesn’t work nearly as well as the skunk odor remover and honestly who wants to smell that skunk stink for days on end!

    In this post, we’re sharing five easy chicken recipes you can make for $5 or less, perfect for feeding a family of four. Plus, we’ve included simple meal plans with recipes for easy side dishes to complete your meals.

    How To Use These Meal Plans

    One way to save a lot of time making meals for your family is to cook once and eat two or three quicker meals later using extra amounts of the items you cooked for the first meal as a base for the next few nights’ meals.

    The following meal plans are designed with easy chicken recipes. The first night, you will start out with a whole chicken. Then, you’ll find different chicken meal options you can use with the leftovers. You don’t have to make the meals in the order listed. Pick and choose and see what is easiest for you for each day.

    When you prepare meals, everything doesn’t need to be homemade. You can feel free to use store-bought pies, cakes, cookies, dinner rolls or bags of salad, especially on otherwise busier or more difficult days. Even though this may not seem very frugal, it is still much cheaper than going out to eat. It would be far less expensive to pay for bagged salad and make the rest of the meal from scratch than to spend more money on delivered pizza.

    To make it easier, these meal plans include ingredients that most people already have at home. Not every menu will not be perfect for your family’s tastes, so feel free to adapt and substitute items as necessary. If your family doesn’t like broccoli, use green beans instead.

    Sometimes you may only need to use the main dish from one of the meal plans and create your own dinner ideas from that. It is perfectly fine to mix and match so don’t think you have to follow this precisely. The one caveat is that if you substitute significantly more expensive ingredients, or if you add a lot of extra meat, it might end up costing more than $5 per meal.

    Make Meal Planning And Preparation Easier:

    • The day before you go to the grocery store, clean out your fridge so you can see what leftovers you have so you can include them in your menus.
    • Always plan for one leftover night a week, where you serve all your little dabs of everything that’s left. This will save a lot by reducing wasted food.
    • Don’t serve like items:
      • If you have mixed fruit for a salad don’t serve fruit pie for desert.
      • If you have milk shakes for a drink, don’t serve ice cream for dessert.
      • The old saying — “too much of a good thing” or in this case “too much of the same thing” definitely applies here.

    Always store your brown sugar in an airtight container. Some people say store it in the refrigerator or freezer but the best way to make sure you don’t have to soften brown sugar is to keep it airtight in the first place.

    You can store the brown sugar in the bag as long as you always remember to tightly seal it when you’re done using it. If you prefer, glass jars (like baking jars or mason jars) and plastic containers with firmly sealing lids also work well.

    If it does dry out, here are some easy ways to soften brown sugar:

    • Microwave the brown sugar for 15-20 seconds. If this doesn’t work, place a glass of water in the microwave with it and microwave again for 20 seconds. Then you should have softened brown sugar.
    • Place it in an oven on a cookie sheet at 250°. Set a pan of water in the oven with it. Then bake until you soften the brown sugar. Check frequently as it will melt if you let it bake too long.
    • Place the hard brown sugar in a blender and pulse until chopped.
    • Place it in a plastic bag and hammer it into pieces.
    • Place a piece of bread in the bag with your brown sugar and seal the bag.
    • Place a moist paper towel in with the brown sugar to help soften the brown sugar. Leave for several hours.
    • Place a few apple slices in with the brown sugar and seal. In the morning your should have softened brown sugar. Take out the apples after it’s soft.
    • Moisten a piece of clean terracotta clay, let it drip dry and place the piece in the bag to soften brown sugar. You can also store a piece of terracotta in with the brown sugar to keep it soft.

    Leftover Rotisserie Chicken Recipes – How I Get 4-5 Meals Out Of A Rotisserie Chicken

    You can easily make 4 meals out of one rotisserie chicken from the store! I can get a rotisserie chicken for $5 and get 4-5 meals out of it for my family.

    The first chicken recipe I am sharing is my own homemade rotisserie chicken recipe. This has been a staple in our dinners for more than 20 years and it is the BEST roasted chicken you will ever eat!

    The leftover rotisserie chicken recipes that follow after it are designed to help you use up your rotisserie chicken so you can simply pick and choose which will be the easiest and tastiest for your family.

    If it will just be 4 of us eating, I buy a smaller chicken. (We have 2 teens that are working and are not home a lot.) If all 6 of us are eating, I will get the biggest rotisserie chicken they have at the store which is even a better deal per person.

    As a general guideline, we use the one rotisserie chicken in this way:

    Dinner 1 – Eat the roasted rotisserie chicken. Mom and Dad split a chicken breast and I peel the meat off of 2 drumsticks to give to each of the boys. If the older kids are eating with us they get a thigh each. Then I fill out the rest of the meal with sides like rice, potatoes and vegetables.

    Dinner 2 – Serve a dinner such as chicken tacos or a casserole using the leftover rotisserie chicken meat.

    Dinner 3 – Boil the chicken bones overnight in the crockpot with an onion and carrot to make chicken broth for 2 chicken soups. (I pick the meat off before serving in the previous meals to reduce the possibility of spreading germs when reusing the bones.) Pick the remaining chicken meat off the bones and add to the broth. Divide the broth and use for chicken and noodles.

    Dinner 4 – Use leftover broth and meat to make Chicken Barley Soup.

     If I have leftovers, I’ll use them for lunch or another dinner.

    That’s how we get 4-5 meals out of 1 rotisserie chicken. We usually have leftovers from one or more of the nights so I will serve those with sides like dinner rolls and sliced veggies.

In fact, budgeting your money can seem daunting, especially since people usually make it much more complicated than it needs to be. These easy tips will help you see that sticking to a budget is not nearly as difficult as it seems!

    How To Stick To A Budget For Good

    In response to a Living on a Dime story about budgeting, Yvonne asks about how to stick to a budget:

    My problem is not setting up a budget but sticking to a budget. Gas costs what it costs. Groceries – It is expensive to eat healthy. Do you have suggestions for how to live on a budget? We don’t do a lot of things but we seem to overspend our budget each month. And I know there is no way my husband is going to keep track of every penny he spends. Please help!

    Tawra: This is a question that I receive frequently. Many people feel that the thought of budgeting is too daunting. My first thought about how to stick to a budget is that if you set up a budget and can’t stick to it, either your budget, your spending or both are not realistic.

    There are several reasons why you might make a budget and how you handle your budget depends largely on why you have one. Here are the main two groups:

    1. If you spend more money than you make, you may be making a budget to get your spending under control. If that is the case, it is very important that you learn how to stick to a budget. Your realistic options are to cut spending to fit within your income or to increase your income to cover your spending.
    2. Some people create a budget just to create a plan for how they spend their money, even though they don’t have a problem with over-spending their income. If this is you, you have some leeway in your budget.

      Say your income is $5000 a month and your budget is for $4,000, allowing for $1000 savings each month. If this is the case, you can also choose to cut spending or increase your income, but you also have a third option. You might decide that setting aside $1000 for savings every month is more than you can handle and cut your plan so that you expect to save only $500 and add the other $500 to your spending budget.

    The reason you are creating a budget determines the urgency of sticking to your budget. If you’re in the first group, you don’t have a lot of wiggle room. There is no good way to regularly spend more than you earn. If you do, everything will eventually, break down and it will impact all parts of your life. There is simply no choice but to live within your income or increase your income. If you’re in the second group, you have more freedom to choose to keep more “optional” budget items since you have not committed all of your available income.

    How To Stick To A Budget Without Going Crazy

    Budgeting is not a precise thing, especially at first. In order for a budget to be effective, it has to accurately project your spending.

    The first time you make a budget, you will probably have to use your best guess for some things. Many people have no idea what they actually spend on food, entertainment and other more flexible budget areas.

    If you keep copies of utility bills and other expenses, your guess may be more accurate than another person’s guess. Even so, you will probably find out after the first month that some of your predictions in various areas are not accurate.

    The solution to this problem is to re-evaluate your budget after the first month based on your spending. If you want to be able to learn how stick to a budget, you have to be realistic.

    • Ask yourself if the problem is that you disregarded the budget in certain categories and spent more than necessary or if the budget projection is not realistic.
    • If you spend a certain amount of gas going to work each day, that is an expense that you can’t necessarily cut easily because your income comes from your job. If you feel that you must use the amount of gas you are using, you will need to adjust your budget to allow you to spend more on gas.

    How To Stick To A Budget When Some Costs Are Hard To Control

    Even though I said you can’t necessarily cut the cost of gas easily, most people usually do have options to reduce that cost. The question is, how important is it that you stay within this budget projection on gas?

    • If you’d rather buy the gas than go to a movie, reduce your entertainment budget and increase your gas budget.
    • If your budget is very tight and it accounts for every cent you earn, you may have to consider ways to reduce your gas cost, like carpooling or waiting to do things that require driving until you can do a lot of them in just one trip.

    Even though “gas costs what it costs”, there are ways to reduce your consumption so you don’t use as much.

    • In our own situation, we used to think about something we wanted to buy at the store and then go get it right away. Now, we wait until we have many places to go that are near each other and make one trip out of it, unless it is a matter of life and death that we go now.

      It has been a challenge to our patience when we get excited about doing it “right now”, but we have saved a lot of money consolidating trips. Most people would be surprised to see how the mileage for “little trips” running errands adds up.

    • If you drive to work by yourself each day, consider carpooling with someone else. We Americans don’t like the thought of that because it limits our feeling of independence, but if you work far from home, it can really save you a lot of money. If you live close to work, can you walk or ride a bicycle? Then you would get some of your exercise at the same time.
    • If your gas cost is high because you are involved in a lot of activities that require you to be in different places at different times of the day, consider whether you really need to do all of those activities.If each of your kids is involved in a sport that costs $100 for three months, you also pay the cost to get them there and, if you’re busy enough not to be able to cook dinner, the cost of fast food is a direct result of that activity.

      If you do only one such activity once a week and spend only $20 for fast food and $4.00 for gas each time, the entire three month activity cost is not $100, but $388. And these numbers for food and gas are very low. Most people spend a LOT more.

    It is OK if that activity is important to you as long as you can afford to keep it in your budget. You just have to decide if it is more important than everything else you “need” to budget.

    Adjust Your Budget To Make Sticking To A Budget Easier

    There’s nothing wrong with increasing the amount you plan to spend in your budget as long as you can afford it.

    If you have only a set amount of income and are having trouble keeping your spending within that income, an increase in one budget area will mean that you will have to cut somewhere else.

    We know a family here in Kansas that thought that air conditioning was not essential when the temperatures were in the mid-90s and the humidity was high. They decided not to use the air conditioner, but they did not think buying delivered pizza and other convenience food was unreasonable. There is nothing wrong with that. We wouldn’t do it ourselves. It is just the choice they made.

    If you’re trying to figure out how to stick to a budget, it might help to budget a little more money for the things that are more important to you and a little less for the things that are not. Regardless of how you make it work, income must outweigh spending.

    We don’t recommend trying to keep track of every penny you spend.

    (Good news for your husband ;-) Some financial systems require you to keep every receipt for a pack of gum, but that is just not practical. It is too tedious and people just get frustrated doing it. That will make sticking to a budget nearly impossible. If you are having trouble keeping track of spending in a given budget area, it might be useful to use an envelope system.

    How To Stick To A Budget By Paying Attention To Your Spending Habits

    One of the biggest drains on a budget is “nickel and dime” spending — a quick stop for a pop at a convenience store or an impulsive magazine purchase. If you don’t know how much you spend in this area, put a set amount of money in an envelope for miscellaneous spending. Only make these purchases out of this envelope until the money is gone. This will help you get an accurate idea of how much you spend in that area.*

    Say you put $300 in the envelope and it is gone in ten days. That means you spend $30 per day on “miscellaneous” spending. (And you didn’t have to write down every purchase.) At this rate, you can plan to spend $900 a month on these things (I’m gasping at the thought ;-).

    If you want to limit spending in this area, put the money in an envelope and when it is gone, don’t allow yourself to spend any more on those things until the next month. If you’re accustomed to spending a lot more than your budgeted amount, this can be difficult. If your budget is not too tight, you might want to reduce the spending in that area over a few months so you don’t get discouraged.

    If you feel your only option is to cut your spending but you are having trouble doing it, you will want to make sure you’re clear about “needs” and “wants”. The only real “needs” we have at a most basic level are food and shelter. Everything else is a “want”. All “wants” are negotiable at some level. We want to have a house with air conditioning. We don’t want to eat only beans. We believe it is important to have a car. If your “wants” are too important to give up, you must increase your income to make everything balance.

    The problem we see the most is that most people who are having trouble with spending and debt want too many things they can’t afford considering their income. (Mike: I understand that. I’ve been there!) If you find yourself in this situation, it is easy to get irritated with having to make a choice to give up something you feel strongly about keeping.

    *Note From Jill – I don’t even bother with envelope spending. I just put a $20 bill (or whatever amount I decide on) in my wallet. If halfway through the day it is gone then it is too bad for me.     Figuring Out Your Grocery Budget

    Marianne writes:

    We have been trying to just spend $50 per week for our family, which is down to 3 people now, but I also did it when we had 4 at home. I find that I am more conscious about what I buy when I set a limit. I focus on the basics. If I don’t need as many groceries that week, I just stock up on something that is on sale.

    Do you have a monthly budget that you go by? For me, the planning and preparing ahead of time is what makes me more successful with my shopping. I am not saying this way is right for everyone… I was just curious if you tried to keep within a certain amount to feed your family or if you budget by the month or the year or just buy sales and don’t worry about cost.

    Jill: Marianne, I don’t usually have a firm budget for my spending. I do plan so that I have a general idea of what meals I will make and then I get what I need for those meals. I’ll also buy other things if there is a really good sale on something I know I will use. For most of my life, I have not had a regular predictable income and I have often had to readjust my spending not only month to month but week to week.

    That is why a lot of the typical financial plans and methods don’t work for me and why I don’t believe in teaching that everyone should spend a set percentage or a set amount on certain things. The same plan doesn’t work for everyone. People are different with different life circumstances so each person’s method will necessarily be different from another.

    I think this is why so many people get frustrated when they finally get serious and try to get out of debt. They are trying to fit into a plan that just doesn’t work for their situation, which is frustrating. It would be like me trying to fit into a size 2 dress. (Is there really anyone who fits into a size 0 or 2 dress?) It ain’t gonna happen.

    Basic budget principles from one budget to another may be the same but you can’t expect that specific amounts and percentages will work for everyone, so I have not focused as much on how to stick to a budget as much as how to spend as little as possible and be flexible.

    Also, different people spend their money differently. I am in my home all the time. I work here and live here and because I am sick, I don’t get out often. I want a nice home because this is where I spend so much of my time, so my home is where I will put a good chunk of my money. Another person may spend long hours commuting and working away from home. That person may want to have a nice reliable, more comfortable car when all I need is my old clunker.

    It is difficult to specify an exact amount for a food budget because I could say I spent $35 on my family of 4 but I may have 2 toddlers and a husband who eats very little. You may have 2 teenage boys and a husband who is a lumberjack, which would make your grocery budget significantly different than mine.

    That being said, I do have enough control over my money that I always know about how much money is in my checking account and how much I will need to pay my bills, so I always have an approximate amount in mind that I know I can spend on groceries. For me, that amount fluctuates from month to month.

    The biggest thing I did to control my grocery money was not so much making a plan or budget (although please use one if it works for you). I learned about serving nutritional meals– not organic, fat-free or sugar-free meals but meals that apply basic nutrition to regular food. I did things like give my kids a small glass of orange juice with the exact amount of vitamin C recommended for them for the day. I would include fruits and/or vegetables like potatoes, broccoli, and carrots with each meal, following the food pyramid guidelines so they were more than covered.

    What does that have to do with a food budget? Well, the human body needs just so much food to stay alive and be healthy. This means you have no choice but to spend a certain amount on food to keep your family alive. I could settle on a grocery budget of $10 which may sound impressive but if my family is starving then the budget isn’t working. By watching our nutrients carefully, I didn’t buy or feed my family any more food than what their bodies needed. If you’re trying to figure out how to stick to a budget, knowing what the minimum you need is a good starting place, and then, if you like, you can add from there as you can afford it.

    Many people just don’t realize how much controlling portions and nutrients in their diets can save money on their food bills and make them healthier. Many Americans eat twice as much food as they actually need each day (and then many of them spend more money burning it off!). Even if it is organic, fat-free or sugar-free, they still eat too much.

    This doesn’t mean I sent my kids to bed hungry. Of course not. They got to have cookies and other treats sometimes like most kids but because I was so careful with their food and their bodies were satisfied by well-balanced diets, they didn’t have the continual cravings that many kids do.

    Once, while visiting a national park, we got in the car to leave and a woman ran up to my window and said, “I know you are going to think I am crazy but I have been watching your family all day and I have never seen such a healthy looking family. What is your secret?”

    I laughed and said, “My husband started his own business.” I know she thought I was crazy after that! I meant that I didn’t have much money to buy groceries so I had to be careful about what we ate, which helped us eat only what we really needed.

    I’m not saying I always ruthlessly restrict everything I eat but when I need to tighten my belt, I’m especially careful about the portions that I eat.

    Budgets are fine if they help you watch your money, but if you want to really how to stick to a budget, try not to make your budget too complicated. Consider that if you buy a baby crib and discover it comes with a 100 page book of instructions you get intimidated and want to give up before you even start. If you pull out a sheet of paper with 5 easy steps, you’re much more likely to succeed. That’s exactly how you should think of a budget.

    Regarding your budget of $50 per week, I’d say that is very conservative and if you’re able to do it, that’s great! If you had to increase it a little and if you could afford it, I wouldn’t feel bad about it. Certainly, as you noted, planning ahead is one of the best ways to save because it prepares you to keep an eye out for sales and other opportunities to save. Lack of planning, on the other hand, is the main reason why so many people eat out more frequently or buy more convenience foods, which can significantly increase the amount a family spends on food.

    Also, as I mentioned, I do generally have an idea how much I will allow myself to spend on food each month but for me, that amount fluctuates depending on the month. I don’t worry as much about how to stick to a budget because I have trained myself to ask if I really need something before I buy it. I do tend to spend less even when I can afford more so that when the opportunity for a great sale comes along, I have the money to be able to afford to stock up.

People always used to store them in old panty hose, but this is for those of you who don’t wear panty hose anymore.
    • Mix pudding with half the milk called for in the instructions. Fold in cool whip and use to frost cakes, cupcakes and crepes. Think of the yummy combinations you could come up with like using banana pudding to frost a banana, strawberry or chocolate cake or white chocolate or butterscotch pudding for spice cake.

    How to Make The Easy Fruit Dip Recipes

    Take the cream cheese out of the refrigerator the night before so it is very soft. Whip the cream cheese with a mixer. Add the condensed milk and lemon juice. Whip again to blend.

    Ingredients for Easy Fruit Dip

    Cream Cheese. Softened. You can use regular or low-fat cream cheese to make these fruit dip recipes. The recipes were designed to be used with regular cream cheese. Low-fat ceam cheese would work fine, but would change the texture of the dip.

    Sweetened Condensed Milk. This comes in a can and is found in the baking aisle at your local grocery store. (It is NOT the same as evaporated milk, so make sure it is sweetened condensed milk!)

    Lemon Juice. You can use juice from a fresh-squeezed lemon or lemon juice from a bottle. Either will work.

    How to Serve Easy Fruit Dip

    Common fruits used with fruit dip include apples (especially the more tart varieties), strawberries, pears, and even grapes. Any fruit that is firm and dippable will work. You can also use vegetables such as baby carrots or cucumbers.

    While this is called fruit dip because it was designed to serve with fruit for dipping, you actually have options here. Serve with crackers, shortbread cookies, any hard cookies, or you can even use it as a spread on bread or the sauce on a cucumber sandwich.

    How to Make Spicy Fruit Dip

    Remove your cream cheese from the refrigerator to soften it at room temperature for as long as you have time for. Mix the fruit preserves and Picante sauce. Pour over the softened brick of cream cheese. No mixing required.

    Ingredients for Spicy Fruit Dip

    Strawberry or Raspberry Preserves. A jar of your favorite brand is perfect. Save money and stock up on preserves when your brand goes on sale or buy generic. Generic labeled preserves usually work quite nicely for these recipes.

    Picante Sauce. Choose your heat level and picante variety.

    Cream Cheese. Thoroughly softened.

    How to Serve Spicy Fruit Dip

    Serve with tortilla chips, crackers, pita chips, or pretzels. You can also serve this dip with veggies such as broccoli, red pepper strips, cauliflower, cucumbers, or baby carrots. Red peppers are the perfect flavor for dipping but yellow and orange bell peppers are mild enough and will also work.

    Tips for the Best Fruit Dip Possible

    The softer you can get the cream cheese before mixing the dip, the better. To prepare the cream cheese, remove it from your refrigerator and let it sit on your kitchen counter until it reaches room temperature.

    It is a possible to microwave the cream cheese, but it is not recommended. If you’re not careful, the cream cheese will soften unevenly and parts of it will melt and become runny. If you really want to soften it in the microwave, you have to be careful and pay attention. Generally, you would put it in a microwave safe bowl and microwave for ONLY 8 seconds at a time, stirring well between each 8 seconds until it is sufficiently softemed.

    For the easy fruit dip recipes, whip the cream cheese thoroughly. This helps further soften the cream cheese and makes it easier to dip.

    How to Store Leftovers

    Both of these easy fruit dip recipes can be kept in the refrigerator in an airtight container for several days if it lasts that long. This dip cannot be frozen as it will change in consistency too much.

    Try putting one or both of these fruit dips in your child’s lunchbox for a special treat! Just save the leftovers from your gathering and put them in little dip containers or a separate compartment of the lunchbox. By lunchtime, the dips will be softened and ready to eat.

    If you don’t know how to make crepes, this simple crepes recipe is super easy to make! Crepes are a very thin type of pancakes that originated in France. They are often served with jam, berries or a hazelnut cocoa spread like Nutella.

    Crepes are a popular “walk-around” food in France. If you are ever in Paris, there are “creperies” all over the place where people will make crepes to order right in front of you. We usually roll our crepes with the toppings inside and sometimes as a garnish on the top, but in Paris, it is more customary for the crepe shop to fold the crepes four ways (in half and then in half again) after spreading the filling inside.

    Here are some popular toppings for homemade crepes:

    • Sugar – powdered sugar or granulated sugar. Some people use caster sugar, which is like a super fine granulated sugar to give it a little bit of a crunchy texture.
    • Jam – Any jam works well, but berry jams are most common. Crepes are delicious with strawberry jam, blackberry, blueberry and more. You can also use other fruit jams like lemon or orange marmalade.
    • Sweet whipped cream (called Chantilly in France)
    • Shredded coconut
    • Nutella – This hazelnut cocoa spread is one of the most popular crepe fillings in France. Nutella and almonds and Nutella and banana are also great together.

    Savory Crepes

    If you want to make savory crepes instead of sweet crepes, all you have to do is scramble some eggs and add some bacon or ham, cheese, green onions and olives or you could make ham and cheese or broccoli, chicken and cheese. The possible combinations of ingredients are endless!

    • Ham
    • Bacon
    • Mushrooms
    • Chicken
    • Eggs
    • Cheese (Most cheeses will work well but in France, savory crepes were served with Emmental, a savory Swiss type cheese.)

    How do you store crepes?

    This easy crepes recipe is best made at the time you are going to eat them. If you like, you can make the crepes and then freeze them between pieces of waxed paper for later.

     Do not make the batter until you are ready to make the crepes (usually within 30 minutes). If you wait too long to cook the crepes after making the batter, the crepes will not turn out properly.

    How To Make Crepes

    When you cook the crepes, you do need to make sure that your pan is well oiled for the first homemade crepe but you may not have to add oil to your pan each time. Try a few and you will get the hang of how often you need to oil your pan.

    Once you make the crepe batter, you pour a small amount into a skillet and rotate the skillet until a thin film of the batter covers the bottom. Cook until light brown and then turn the crepe with a spatula to cook the other side.

    Rocky road is most often made with almonds, but you can use any kind of nuts you like. Macadamia nuts, walnuts, peanuts and pecans are great options that add wonderful tastes and textures!

    The easy brownies recipe calls for mini marshmallows, but if you have some larger marshmallows, like those giant campfire marshmallows you brought home after camping, you can cut them into smaller pieces with a clean pair of kitchen scissors and use them in place of the mini marshmallows. If you have marshmallows that have gotten a bit stale, this recipe is a great way to use them without wasting them.

    You can garnish the tops with colored marshmallows for a more festive feel.

    For even richer rocky road brownies, you can add caramel candies or caramel ice cream topping to the top before adding the marshmallows and nuts.

    To help the brownies stay together, I like to cut them with my stainless steel cut and serve turner, which makes it easy to cut the brownies and lift them out of the pan without mangling them. Of course, if you mangle a few of them, don’t let them go to waste – Broken rocky road brownies make great ice cream topping, especially with rocky road ice cream!

    If you want your brownies to be picture perfect for a special occasion, here are a few ways to accomplish that:

    • Line your pan with foil before you bake so you can just lift the brownies out.
    • Use a ruler and cut off the outer edges, saving the scraps for snacking or crumbling on top of ice cream.
    • Use a ruler to score the cutting lines. Cut them with a straight downward motion, not sawing.
    • If you are cutting brownies with frosting, wipe off the knife between each cut.
    • Use a plastic knife to cut brownies without tearing.
