    At the height of summer, cucumbers are amazing and plentiful whether you are growing them in your garden or purchasing them from the local farmer’s market or grocery store. It’s the perfect time to make this easy cucumber salad recipe for a bright, delicious, and seasonal side dish.

    My cucumber onion salad is a fresh and tasty contrast to any grilled meats or main dish. It’s also wonderful as a sandwich topping whether you pair it with cream cheese, cold cuts, or tomatoes.

    What is Cucumber Salad?

    Salad is by definition a blend of vegetables, raw or cooked, served cold, and most often served with some kind of dressing. Cucumber onion salad is a blend of cucumbers and onions mixed with a dressing and refrigerated before serving. The dressing in this case is a mix of vinegar, sugar, and water.

    Why We Love It

    Nothing says summer and comfort than a cold salad using fresh seasonal ingredients. In the middle of winter, this easy cucumber salad recipe brings back fond memories of summer and still offers the perfect contrast for almost any protein or main dish. When you want to eat light, you can even enjoy this salad as your main entree!

    How To Make Cucumber Salad

    This cucumber and onion salad with vinegar is one of the easiest side dishes you’ll ever make. We like easy in this house! All you need to do is slice the cucumber, slice the onions, mix it all together with the dressing ingredients, and refrigerate the salad for several hours to meld the flavors. That’s it! No complicated steps.

    Cucumber Salad Ingredients

    Here’s what you need to make my easy Cucumber Salad Recipe.

    Cucumbers. Get medium cucumbers for the best flavor. Peel and dice or slice the cucumbers.

    Onion. A medium white onion works fine. You can also use a sweet onion or for a brighter color, use a red onion!

    White vinegar. Distilled vinegar has a clear and unaffected flavor perfect to feature the other salad ingredients.

    Sugar. Regular white granulated sugar, turbinado sugar, or even your favorite sugar substitute.

    Water.

    How to Cut Cucumbers for Salad

    Don’t make it complicated! Just slice or dice your cucumbers with a knife just like you would for any other salad. You can use a mandoline slicer or food processor for uniform results if you like.

    Storing Your Leftovers

    If you don’t eat all of the cucumber salad on the first go, don’t fret. Just pop it in the fridge in an airtight container and enjoy it with a different meal.

    How Long Does Cucumber Salad Last?

    Because it is slightly pickled, this cucumber salad recipe could last longer than most other salads in your refrigerator. Eventually, your cucumbers will start to get soggy and that’s a good way to know it’s time to use it before it gets too old. Because cucumbers come from the store and your garden at varying stages of ripeness, it’s hard to predict precisely how long your leftovers will last. Keep an eye out for mushiness, mold, or off-putting smells, and discard the cucumber and onion salad as soon as you notice anything like that.

    Can I Freeze Cucumber Salad?

    Freezing uncooked cucumbers changes the texture and taste of the cucumber significantly and is not recommended. Instead, we suggest using your leftover salad faster by serving it on sandwiches with cream cheese, tomatoes, or cold cuts.

    Tips for a Company Ready Dish

    • Use a fancy crinkle slicer like this one to make your salad as beautiful as it is tasty.
    • Peel your cucumber in stripes leaving a strip of dark green between every peeler slice to create a pretty visual effect.
    • Make sure to refrigerate your completed cucumber salad for at least three or four hours before serving for best results.
    • Use clear glass serving dish to show off the beautiful salad.
    • If you want to get your kids involved in the making of the dish, have them slice the cucumbers using these kid-safe knives.

    These easy Bisquick recipes can save you money and also shortcut the amount of time it takes to make these tasty additions to any meal! Keeping some Bisquick baking mix on hand means that you don’t have to mix all the ingredients together every time you bake, so you have fewer ingredients and less chance of forgetting something as you add the various ingredients.

    In this post, I’ll share some of our favorite Bisquick recipes. Our easy Bisquick recipes include traditional bread items like pancakes and biscuits, but are also great for main dish items like homemade hot pockets and dumplings for chicken and dumplings. Almost all of these Bisquick recipes can be made with just a few minutes’ prep time so you can mix them up and then do something else while they bake.

    Our older kids like to make the Bisquick recipes like pancakes, muffins and biscuits because the recipes are simple enough for them to confidently make for themselves – and who doesn’t like it when pre-teen and teenagers want to make something for themselves!

    Bisquick Biscuits Recipe

    2¼ cups baking mix
    ⅔ cup water or milk

    Mix lightly until dough forms a ball. Turn onto a lightly floured surface. Knead 10-12 times. Roll dough about ½ inch thick. Cut with a 2-inch cutter or the rim of a glass dipped in flour. Bake at 450 degrees for 10-12 minutes on an ungreased cookie sheet. For drop biscuits, use 1 cup water and drop by tablespoonfuls onto a baking sheet. Makes one dozen.

    *For cheese biscuits, add ¼ cup cheddar cheese.

    2¼ cups baking mix
    1½ cups water
    ¼ cup sugar
    2 Tbsp. vegetable oil
    1 egg

    Mix ingredients until moist. The batter should be lumpy. Cook on a hot greased griddle. Flip when bubbles break on the surface and the edges begin to dry. Makes 15-18 medium pancakes.

    Homemade Breakfast Puffs Recipe

    2 cups baking mix
    ¼ cup sugar
    ¼ tsp. nutmeg
    2 Tbsp. butter or margarine, softened
    ½ cup milk
    1 egg
    ½ cup butter or margarine, melted
    ⅔ cup sugar
    1 tsp. ground cinnamon

    Heat oven to 400 degrees. Grease 24 mini muffin cups. Mix baking mix, sugar, nutmeg, margarine, milk and egg. Beat vigorously for 30 seconds. Fill muffin cups about ⅔ full. Bake 10 minutes.

    This easy Bisquick chicken and dumplings recipe is an easy way to make chicken and dumplings like mom and grandma used to make! It’s a perfect comfort food!

    Chicken and Dumplings Soup Recipe

    Chicken and Dumplings Recipe

    4 cups chicken broth
    ½-1½ cups chicken or turkey, cooked
    ½ cup celery, sliced
    ½ cup carrots, sliced
    1 bay leaf
    1 tsp. parsley flakes

    Dumplings

    2 cups baking mix
    ¼ tsp. thyme, dried
    tsp. parsley flakes
    ⅔ cup milk

    In a Dutch oven, combine broth, chicken, celery, carrots, bay leaf and parsley. Bring to a boil.

    In a bowl, combine baking mix, thyme, and parsley. Stir in milk just until moistened.

    Drop by tablespoonfuls into the boiling broth.

    Cook uncovered for 10 minutes and then cover and cook an additional 10 minutes. DO NOT PEEK or your dumplings will be soggy.

    Remove dumplings with a slotted spoon and serve in bowls. Remove bay leaf and spoon broth over the top of the dumplings. Serves 4.

    2 soup cans of water

    Dumplings

    2 cups baking mix

When soup is boiling, drop dumpling mix by large tablespoonfuls on top of soup, which makes the dumplings. Cook uncovered 10 minutes. Cover and cook another 10 minutes. DO NOT PEEK or you dumplings will be soggy.

    The dumplings will look like fluffy biscuits.

    You can add a bay leaf, some left over cooked carrots, peas or extra chicken to the soup  if you have it.

    Homemade Hot Pockets Recipe

    2¼ cups baking mix
    ⅔ cup milk
    1 cup cooked ground beef
    1 onion, chopped
    2 tsp. chili powder
    1 tsp. garlic powder
    1 tsp. salt
    1 cup cheddar cheese, grated

    Make a dough out of baking mix and milk. Roll out into a rectangle. Cut out large squares and fill with meat filling. Bake at 350 degrees for 30 minutes. *ham and cheese, broccoli and cheese, taco meat or just cheese can be used as fillings.

     

    This pancake pizza recipe is one of our more unusual Bisquick recipes because it’s sort of a combination of a breakfast recipe and a tasty dessert recipe. The granola and nuts make it more healthy and give it a more appealing texture than plain pancakes!

    Pancake Pizza Recipe

    2 cups biscuit mix
    2 eggs
    1 cup milk
    1 Tbsp. vegetable oil
    1 tsp. pancake syrup
    1 cup granola
    1 cup walnuts

    Combine first 5 ingredients. Spread on a greased 14 inch pizza pan. Sprinkle with granola and nuts. Bake at 425 degrees for 12-15 minutes until golden. Cut into wedges and serve with more syrup.

    Bisquick Cinnamon Rolls

    4 cups baking mix
    1¼ cup buttermilk
    4 Tbsp. sugar
    1 cup brown sugar
    ¼ cup  sugar
    1 Tbsp. cinnamon
    ½ cup nuts, chopped
    2 Tbsp. butter melted
    ¾ cup butter, melted and cooled
    1 cup powdered sugar
    1-2 Tbsp. milk
    1 tsp. vanilla

    Preheat oven to 375°.

    In a bowl, combine the Bisquick (baking mix), buttermilk and sugar in a bowl using a fork. Mix to create a dough, just until everything is combined. The dough will be sticky.

    In another bowl, combine the brown sugar, granulated sugar, cinnamon and nuts and set aside.

    To roll the dough, first flour the rolling surface. Use a generous amount of flour to make handling easier as the dough will be sticky. Turn the dough out onto the surface. Flour your hands well and pat the dough into a rectangular shape with your hand. Use a rolling pin to thin to about ½ inch thickness.

    Once rolled out, pour the melted butter over the dough. Spread butter evenly to the edges with a pastry brush. Sprinkle sugar/nut mixture over the butter.

    Start rolling the dough from the long end to form a log. Slice into 1½ inch slices. I use dental floss to slice mine. It works well without flattening the pastry.

    Transfer the sliced cinnamon rolls to a well greased 9 x 13 inch pan. Bake 25-30 minutes, until just golden brown on tops. Let sit for 5 minutes to cool slightly.

    Combine powdered sugar, milk and vanilla until desired consistency and drizzle over topped of rolls.

    When it’s too hot to use the oven, and you want cheesecake fast, make our no-bake cheesecake and have dessert on the table in no time at all. This is an easy no-bake cheesecake recipe your whole family will love.

    While this isn’t exactly a three-ingredient no-bake cheesecake (it’s close!) what I love about this recipe is the addition of lemon juice, which helps cut the richness of the cream cheese and definitely improves the flavor of our no-bake cheesecake filling.

    If you prefer a no-bake cheesecake without sweetened condensed milk, we’ve also got an easy recipe for you that doesn’t need sweetened condensed milk!

    When you want cheesecake fast, make our easy no-bake cheesecake recipe and have a delicious decadent dessert on the table in no time at all!

    How to Make No-Bake Cheesecake

    We specialize in fast, convenient recipes at this house! Lots of people are asking, “How do you make no-bake cheesecake from scratch?” The answer is so simple and straightforward, you’ll love it! In fact, I recommend making it even easier — assign the recipe to your tween or teen and let them take care of dessert for supper.

    For my easy no-bake cheesecake, you’ll use a store-bought graham cracker crust. Beat all the ingredients (except the pie crust ;-) and the pie filling) until they are thoroughly blended. You’ll need a hand mixer to get a nice smooth filling. Pour the mixture in your store-bought crust, smooth it out, and chill. That’s all there is to it.

    Ingredients for the No-Bake Cheesecake Recipe

    • Cream Cheese. Buy the full-fat version.
    • Lemon Juice. 1/4 cup which is about one medium lemon freshly squeezed, but I use bottled lemon juice for convenience.
    • Sweetened Condensed Milk. A 14 oz. can.
    • A Graham Cracker Crust. Store-bought is so convenient, but if you have time you can make our homemade graham cracker crust. The homemade crust requires baking so if you want to stay no-bake, you’ll want to use the store bought crust.

    Tips for the Best Results

    • Use room temperature cream cheese for the smoothest filling possible. Take the cream cheese out of the fridge and set it on the counter for an hour or two before mixing your cheesecake.
    • Chill for at least an hour in the refrigerator to meld the flavors of lemon and sweetened condensed milk and cream cheese. Do not use the freezer until your cheesecake has been in a fridge for at least an hour.
    • Purchase pre-made graham cracker crust or cookie crusts when they are on sale, and keep them on hand for a fast dessert option.
    • Make individual cheesecakes with this filling by using cupcake liners in a muffin tin, and making your own crushed graham cracker crust.
    • No need to bake the crust before you pour in your no-bake cheesecake filling.

    Variations for the No-Bake Cheesecake

    • Top with a can of pie filling before chilling the cheesecake. Any flavor of pie filling will work. We are partial to cherry or blueberry.
    • Serve with macerated fruit (softened in sugar). Strawberries work particularly well; just soak some strawberries in sugar for a couple of hours and stir them well in their own juices before serving.
    • Add toasted coconut flakes or roasted almonds to the top.
    • Use a chocolate cookie crust for your no-bake cheesecake instead, and top with chocolate ganache sauce. You can often find cookie crusts at your local supermarket.
    • Use crushed candy bars or cookies to top the cheesecake. Butterfinger bars work particularly well, but you could use any of your favorites.
    • Smooth on a jar of lemon curd as a topping. If you want to get fancy, use crushed lemon cookies to form the crust for this variation.

    Storing Leftover Cheesecake

    You can keep this classic no-bake cheesecake in your refrigerator for about a week before it goes bad. (Lol, like it would last that long!) Use an airtight container for the best results.

    Freeze individual slices of cheesecake for a quick creamy almost-frozen dessert all summer long. You can partially thaw these slices and add toppings if desired for a delicious treat. If you plan to freeze slices of cheesecake for single servings, I recommend you freeze the slices on a tray until they are solid. Then wrap each slice in plastic wrap or parchment paper and place the slices in a freezer bag to have on hand as needed. You can keep cheesecake slices in the freezer for at least one month.

    Ingredients for Yogurt Whip

    Plain Greek Yogurt. You could vary this recipe by using flavored greek yogurt, but using plain will give you a wonderful vanilla flavor. Generic greek yogurt often has added gum, gelatin, or pectin. This will not work well for the whipped yogurt dessert recipe.

    Whipping cream. Use real heavy whipping cream for this recipe.

    Sugar. Granulated sugar works best.

As you go, scrape down the bowl to make sure everything is sweetened perfectly. Once it’s thoroughly mixed, divide it into small serving bowls, ramekins, glasses, or jars. Garnish with berries and mint if you like, and serve this delicious whipped yogurt dessert to your family and guests. This recipe makes enough for four people, so double or triple it as needed.

    Tips and Tricks for This Recipe

    • If you have a small amount of whipped topping leftover, place dollops of it on a piece of wax paper and freeze. Then place in an airtight container. When you need a quick topping for a dessert or something to go on a late-night cup of hot cocoa, you can just grab one of these out of the freezer.
    • Scrape the sides of the bowl thoroughly because it is super easy to have pockets of unsweetened yogurt if you skip that step.
    • This dessert can be served immediately, but it shines the most after it has been chilled. It will thicken slightly as it chills.
    • Used Yogurt Whip as a substitute for whipped cream on pies, cakes, and other desserts.
    • Make a whipped yogurt dessert in a baked pie crust covered in macerated fruit for a quick pie. You could even buy pre-made fruit pie filling and try that!

    • Immersion Blender. This is an alternative to the mixer. You can use an immersion blender to blend the yogurt instead of beating it. A regular blender will not work.     Fried Rice Ingredients

    Fried rice can really use almost any ingredients you would like to add. Our basic fried rice recipe calls for rice, eggs, bell peppers and soy sauce, but don’t be afraid to stop there. Some of the most common things people like to add are onions, peas and carrots, and chicken. We have included a complete list of variations below, including proteins, vegetables, sauces and garnishes.

    Rice – Leftover rice is perfect because the slightly drier texture of leftover rice makes for a better fried rice. White rice works best for its texture and flavor, but you can use cooked brown rice if you prefer.

    Scrambled eggs are a staple for virtually all varieties of fried rice. You can scramble them right in the pan you will be using to cook the other fried rice ingredients, or you can scramble them separately and add them as you go. If you do not like eggs, if you cannot eat them, or you don’t have any on hand, you can leave them out.

    Vegetables – You can add a variety of different vegetables to fried rice to suit your taste. it is best if the vegetables are cut into smaller pieces to keep the texture of the fried rice. The basic recipe below calls for green bell peppers, but many people use peas and carrots or other frozen mixed vegetables. If you have leftover vegetables, this recipe is a great way to use them.     Soy sauce – Our easy fried rice recipes calls for soy sauce, which is the most common sauce to use to flavor fried rice. If you’re gluten free, you can look for a gluten free soy sauce in the store. You can also use other sauces along with or instead of the soy sauce.     How To Make The Fried Rice

    Fried Rice is super simple to make. Our easy fried rice recipe below is a basic fried rice, but you can add any vegetables, rice or proteins you like. If you have leftover items, throw them in to this recipe to use them without wasting them!

    Start by sautéeing the bell peppers and any other vegetables that you want sautéed in butter, margarine or oil. Sautée them in a frying pan that is large enough for everything you will be adding to the fried rice. Don’t over cook the sautéed vegetables as they will continue to cook after you add the other ingredients. If you add more vegetables than the basic recipe calls for, you might need a little more butter or oil.

    Add the eggs and stir until scrambled and set. If you have never cooked scrambled eggs, you want to stir them until they firm up and are not too runny. Don’t overcook the eggs or they will get dried out. (You can find our scrambled eggs recipe here.)

    If you don’t want the eggs to cook with the peppers and onions, you can scramble the eggs separately and add them pre-cooked to the sautéed peppers and onions.

    Once the eggs are cooked, add the rice and soy sauce to the frying pan. If you would like to add any other ingredients like the vegetables, cooked meats and sauces listed in the variations below, add them now with the rice.

    Cook everything until it is warmed through. For the best flavor, cook until the rice is browned. As you cook the fried rice, stir and turn over the rice frequently so that it all cooks evenly.

    One of the things I love about this recipe is that it pulls together ingredients I pretty much always have in my pantry or freezer. It’s so quick and easy and the kids absolutely adore it, so I’m always tempted to make it if I’ve had a rough day — And they always thank me for it!

    How to Make Homemade Hamburger Helper

    Making this homemade hamburger helper recipe is a breeze. First, you brown the ground beef and drain the fat. Then you add all of the remaining ingredients and simmer it on your stovetop until the pasta is cooked through and the sauce is your desired thickness. It’s that simple!

    Ingredients for the DIY Hamburger Helper

    • Ground Beef. I use 70/30 ground beef (Yes, 70/30 IS the most cost effective ground beef) and then drain it really well.
    • Water
    • Elbow Macaroni Noodles. Uncooked regular pasta. You can cook other shapes of pasta and it will work fine, so use what you have on hand!
    • Onion Powder.
    • Garlic Powder. If you don’t have garlic powder, substitute with jarred minced garlic.
    • Chili Powder.
    • Tomato Paste.
    • Beef Bouillion Cubes. I keep these and the chicken version on hand to add a deeper flavor to a variety of different dishes.
    • Salt and Pepper. To taste. The bouillion also has salt content so taste test.
    • Grated Cheese. Optional.
    • Parsley. Optional for garnish.

To make thawing the ground beef easier, you can run under warm water for 30 seconds and it will release from the baggie. Then throw it in the skillet with everything else.

Of course, you can use any milk you like, but coconut milk adds a special depth to the tropical flavor. And yes, this is literally a two-ingredient recipe.

    All you need is two ingredients and a good blender or food processor. Combine the ingredients and blend them up in your blender or food processor, stirring as needed, until creamy. That’s it! After it has frozen for a bit, you can cut it into squares and place it into a freezer-quality zipper bag to thaw one at a time as needed. This the perfect tool for cutting partially frozen desserts. Or, I’ve also used a large cookie spatula like this one.

    Once fully frozen, this will get too hard to cut so don’t wait too long. Because it freezes so solidly, you will want to thaw the leftover servings a bit before eating. As an alternative, you could freeze your leftovers in popsicle molds.
