Apricot Chicken Recipe
1 lb. boneless, skinless chicken breast, cut into chunks
2 cloves of garlic, minced
1 Tbsp. oil, olive or vegetable
1/2 cup apricot preserves
1/4 cup barbecue sauce
1/4 cup water
2 Tbsp. onion soup mix
Cook chicken in garlic and oil until brown. Place in an 8 inch baking dish. Combine everything else and pour over chicken. Bake uncovered at 375 degrees for 25-30 minutes until juices run clear. Serve over rice.
Easy Apricot Chicken Recipe
1/2 cup apricot preserves
1/2 cup dried apricots, halved
1 Tbsp. + 1 tsp. soy sauce
2 cloves garlic, minced
4 (4-6-oz.) fresh boneless, skinless chicken breasts
1/2 tsp. salt
1/4 tsp. ground black pepper
Preheat oven to 425 degrees. In a bowl, combine apricot preserves, dried apricots, soy sauce and garlic. Mix well. Add chicken and coat well. Season with salt and pepper. Place chicken in a shallow roasting pan. Roast chicken for 30 minutes or until done. Baste chicken with the juices several times during cooking. Remove chicken to a warm platter and pour the pan juices over the top. Serve warm.

I made your Apricot Chicken Recipe but used pork chops and used SF BBQ sauce and SR Apricot preserves because of a diabetic in the house. It was delicious!
