    Easy Tips For Biscuit Making

After you mix the Popeyes biscuit dough, you will need to roll it out to about 1/2 inch thick before you cut it into biscuits. The biscuits will rise as they bake so this is the perfect thickness for amazing biscuits.

Once you roll out the biscuit dough, you will cut the dough into biscuit shapes using a biscuit cutter or glass. If you use a glass, it is helpful to dip the glass in a bit of flour or coat the rin in some flour so that the glass does not stick to the dough.

When you have cut biscuits from all of the dough, there will be some dough left. Don’t let it go to waste. Gather the remaining dough and roll it out to 1/2 inch again and cut biscuits from the remaining dough. Once there is no longer enough dough to cust biscuits from, pat the remaining dough into a rough biscuit shape and bake with the biscuits.

Unlike a lot of other biscuit recipes, this Popeyes biscuit recipe calls for melting butter in the bottom of the 9×13 inch baking pan. Then, once the biscuits are cut, you will place them in the pan and coat well with the butter so that the outside almost fries in the butter while the biscuits are baking. This gives them the nice crunchy texture just like the ones at Popeye’s Fried Chicken restaurants.

This recipe calls for 1 stick of butter, but if you want an even more buttery flavor, you can pour a little melted butter over the top after the biscuits are in the baking pan just before you pop them in the oven.

This sounds like a lot of process, but it really only takes about 5 minutes. Try this easy Popeye biscuit recipe and I KNOW you won’t be disappointed!

  • How To Clean A Burnt Pot Or Pan: The Easy Clean-Up Method!

How To Clean A Burnt Pot Or Pan: The Easy Clean-Up Method!

Here’s how to clean a burnt pot or pan. Cleaning a burnt pot can be tough, especially when it’s very burned and greasy, but this method makes the job so much easier!

Here's how to clean a burnt pot or pan. It's not easy to clean a burnt pot, especially if it's very burned and greasy but this method should help.

    Mary asks:

“Can you tell me the quickest way to remove years of burned on grease on the bottom of my flat pan.

I’ve used Awesome, Scrub Free, and Dawn Dish Detergent (the one used for cleaning oil from the birds during oil tanker spill from the Valdez that ran aground in Alaska).”

“With the combination of the three, and a lot of elbow grease, I’ve removed some of it, but I’d really like to find one product or method that makes it easier.”

Tawra: I am the queen of burning things. One time I even melted the tea kettle to the burner! No kidding, Mike and mom still tease me about it. I have tried over the years many things to save my pots and pans. Here’s what I do.

I wasn’t clear if you meant the bottom of the inside of a pan or the outside, so I’ll address both.

For Cleaning the Inside of a Burnt Pan:

    • Place a generous amount of baking soda (about 1/2 cup) in the bottom of your pan. Make sure it covers the bottom of your pan. Fill the pan with water and then simmer for an hour or so. Most of the burnt-on stuff should come right off. You can do this more than once if needed.
    • If the grease doesn’t all come off the burnt pan with the first method, then take a razor blade and scrape off the last of the burned on food. Follow up with an SOS pad to scrub away the rest and after that the pans are usually good as new!

For Cleaning the Outside Bottom of a Pan:

If the burnt on grease is on the outside bottom of the pan, then go straight to the SOS pad and scrub hard. Unfortunately, for years of baked-on grease, this method takes elbow grease—but it’s the most effective option I’ve found. The only easier way we have found to deal with this is to buy a new pan, which was the first thing Mike recommended when he noticed “quickest” and “easy” in your question ;-).

These tips have saved many of my pans over the years, and I hope they work for you too, Mary. Let me know how it goes!

    Ingredients

1 (8 oz.) package cream cheese softened
    2 Tbsp. butter
2 1/2 cups powdered sugar free sweetener
    1 tsp. peppermint extract
    Food coloring, optional

    Instructions

    1. Mix the first 4 ingredients.
    2. Beat ingredients together with a mixer. It should be a thick, but moldable dough consistency. If it is too dry, you can add a tablespoon of milk.
    3. If desired, add food coloring. For more than one color, divide the dough into equal parts in separate bowls.
    4. Mix the food color into the dough with a mixer. If using multiple colors, rinse the beaters between colors.
    5. When mixed, roll into small balls. If the dough is too soft to roll, refrigerate for a few minutes before rolling to harden slightly.
    6. Lay each ball on a baking sheet and press with a fork to decorate, OR pipe into peppermint drops.
    7. Store in an airtight container.

These mints can be frozen or refrigerated.

    From A Reader:

Kristina Writes: I wanted to add a tip to your cream cheese mints recipe. If you don’t have candy molds for your mints, you can roll them into balls and use an initial imprint stamp with the first initial of the bride and groom’s last name. Just push the stamp down in the center of the mint and use even pressure. They look like designer mints. If you powder the mints with more sugar, do so before you stamp the mint. Thanks for letting me put in my two cents!

This easy countertop disinfectant recipe is a great disinfectant that works for most cleaning needs and will save you a lot of money buying it at the store!

Here is our easy homemade countertop disinfectant recipe. This recipe works well as an all purpose cleaner and I use it for lots of cleaning applications in my home. The alcohol is a disinfectant and the ammonia is a disinfectant and also a degreaser.

You can save a lot of money making your own cleaning products instead of buying the expensive ones at the store that have the same ingredients.

When you use this or any kitchen and bathroom cleaner, it is important that you NEVER mix any cleaning product that has ammonia with any cleaning product that has bleach. If you use bleach and ammonia together, it creates a poisonous gas. This applies to all cleaners, not just homemade cleaners. This countertop disinfectant uses ammonia, so you would want to avoid using it with any cleaner that includes bleach.

Here is our countertop and all purpose cleaner recipe. Mix some together and keep it in a spray bottle wherever you need quick clean-ups and disinfecting.

This easy tortilla chips recipe is a great way to make your own homemade tortilla chips that taste better and are fresher than store bought! It's a great way to revive and use corn tortillas that are getting too brittle to roll.

Homemade Fried Tortilla Chips: A Simple Way to Save Money and Reduce Waste!

Have you ever opened a package of corn tortillas only to find that a few days later they’ve become too stiff to roll without cracking? It happens to all of us. Instead of throwing them away or letting them sit unused in the fridge, there’s an easy solution that turns those tortillas into something delicious—homemade tortilla chips!

Making your own tortilla chips at home is surprisingly simple, and once you try them, you may never want to go back to the bagged kind again. They’re fresh, crispy, and incredibly flavorful. Best of all, they’re a great way to stretch your grocery budget by using something you might otherwise waste.

Store-bought tortilla chips can be expensive, especially if you buy them regularly for snacks, nachos, or salsa. But when you make your own, you’re essentially turning inexpensive corn tortillas into a whole batch of chips for just pennies. If you already have tortillas on hand, the only extra ingredient you need is a little oil for frying.

Another great thing about homemade tortilla chips is how fresh they taste. When you fry them yourself, you get that warm, crispy texture that store-bought chips just can’t match. They’re perfect for dipping in salsa, guacamole, queso, or even enjoying plain with a sprinkle of salt.

This recipe is also incredibly flexible. Have a big pack of tortillas and worry you won’t use them all in time? Just turn them into chips! Slightly older tortillas actually work really well because they crisp up beautifully when fried. Instead of struggling to roll them for tacos or enchiladas, simply cut them into wedges and fry them.

Homemade tortilla chips are perfect for family movie nights, quick nachos, taco salads, or serving alongside your favorite Mexican dishes. You can even experiment with different seasonings like garlic salt, chili powder, or lime salt if you want to add a little extra flavor.

Once you see how easy these are to make, you’ll want to make them a lot more often! Crispy, fresh, and budget-friendly—what could be better?

Using this easy homemade flour tortillas recipe, it's simple to make yummy homemade tortillas at home using ingredients you already have in your kitchen!

The homemade flour tortillas are so fresh and delicious! We love tearing them into pieces and eating them with homemade salsa from the garden!

There’s something incredibly satisfying about making your own homemade flour tortillas from scratch. Not only are they simple and budget-friendly, but the flavor and texture are far better than anything you can buy at the store. Once you try this easy recipe, you may never go back to packaged tortillas again!

This recipe uses basic ingredients you likely already have on hand—flour, salt, baking powder, shortening, and water. That means no last-minute trips to the store and no expensive specialty ingredients. It’s a perfect recipe when you have a little extra time and want something warm, fresh, and homemade on the table.

The process itself is straightforward and even a little therapeutic. Mixing the dough, kneading it until smooth, and rolling it out thin gives you a hands-on connection to your food that’s hard to beat. Don’t worry if your tortillas aren’t perfectly round—rustic shapes just add to their homemade charm!

Letting the dough rest is an important step you don’t want to skip. This allows the gluten to relax, making the tortillas easier to roll out nice and thin. The thinner you roll them, the softer and more flexible they’ll be once cooked.

Cooking the tortillas is quick and fun. A hot, dry skillet is all you need. Within seconds, you’ll see bubbles forming and light golden spots appearing—this is when you know they’re ready to flip. The smell alone is enough to make everyone wander into the kitchen asking what’s cooking!

These tortillas are incredibly versatile. Use them for tacos, burritos, quesadillas, or even simple wraps with whatever leftovers you have in the fridge. You can also serve them warm with a little butter for a simple, comforting treat.

If you love fresh, homemade recipes that taste better than store bought, this homemade flour tortilla recipe is a must-try. It’s easy, affordable, and brings a little extra warmth and love to your kitchen.

    How To Use Strawberries

Ah June! –In the spring we think of a mouth-watering strawberry patch. Now it has turned into a forest with enough strawberries to feed most of the U.S. Undaunted by the mounds of berries in our kitchen, we have visions of row after row of beautiful jars of strawberry jam on our shelves.

Then it happens! The first pot boils over leaving a red mess all over the stove, up on the walls and on the counters and floor. Hours later after the kitchen looks like World War III was fought in it we stand in our kitchen and proudly display our 2 pints of strawberry jam.

Don’t despair. Canning isn’t the only way to use excess strawberries. In addition to the strawberry recipes below, here are some other suggestions to help you use strawberries:

    Yummy strawberry shake recipe!
    • Think small. Don’t plant too many plants in your garden. Plant just enough for what you need.
    • File all your recipes for fruits and veggies in order by the name of the fruit. Then when you need to find recipes for all the extra produce you can easily find several recipes.
    • To freeze berries: Throw extras into a bag and freeze. Don’t waste time freezing them on a tray, they do just as well thrown in a bag. These are great to use later for virtually any strawberry recipes!
    • Use extra strawberries in milkshakes, homemade smoothies, homemade popsicles, and fruit gelatin.
    • Use strawberries to top cereal or oatmeal; add milk for a strawberries and cream flavor.

    1/4 cup brown sugar
    1/2 cup nuts
    1/2 cup butter, softened

    Topping:

    2 egg whites
    2/3 cup sugar
1 (10 oz.) package of strawberries
2 Tbsp. lemon juice (must use)
    1 small container whipped topping

    Instructions

    1. Preheat oven to 350°.
    2. Mix crust ingredients.
    3. Slightly press or crumble into a 9×13 inch pan.
    4. Bake 20 minutes. Stir occasionally while baking to make it crumbly.
    5. When cooled, remove 1/3 of the crust mixture to save to sprinkle on top of the dessert.
    6. Evenly spread out the remaining portion in the pan.
    7. Place the first 4 topping ingredients into a large mixing bowl.
    8. Beat at high speed for 10 minutes or until it forms stiff peaks. Be sure to use a large mixing bowl because this really increases in volume.

    11. Sprinkle the 1/3 cup of crumbs you saved back over the top.
    12. Freeze for 3-6 hours or overnight.

How To Make Sweet Tea At Home – Sweet Tea Recipe

Those of you from the South may find a post about how to make sweet tea a little funny because sweet tea is an everyday thing in much of the South and some of you were weaned on the stuff.

There is a whole generation of adults, though, who don’t know how to make sweet tea because sugar was put on the “bad food” list when they were growing up, but surprise, surprise it is once again ok to use sugar in our drinks. Yeahhhh!!!!

Everyone is jumping on the bandwagon to buy sweet tea at the fast food restaurants and in the bottles. I cringe every time I see someone pay such a huge amount to buy sweet tea when it is so easy to make and costs only pennies for a pitcher full.

In addition to sweet tea, many people buy bottles of regular and green tea for the antioxidants. Be careful – when tea sits for a while it starts losing its antioxidants, so making fresh sweet tea is best.

To help you save some money on what may be becoming your favorite drink or what might still be an old favorite, here is how to make sweet tea using my easy sweet tea recipe.

Even though I am not officially a true Southerner, I will warn you I drink mine so sweet it will curl your hair. You can adjust the sugar if you want, but try it this way first and see what you think. Part of the secret to good iced tea is having the sugar properly dissolved. Just adding sugar to regular unsweetened cold tea doesn’t get it completely dissolved, but there’s an easy secret to this dilemma when making sweet tea.

Some people make a simple syrup to help dissolve the sugar, but you don’t have to go to all that trouble because this recipe makes it’s own simple syrup with the tea.

    Ingredients

    Units
2 quarts water 3 regular size tea bags 3/4 cup sugar (more or less, to taste)

    Instructions

    1. Boil part of the water (about 3 cups). This doesn’t have to be precisely measured. Just estimate using enough so that when you pour it over the tea bags and sugar, it will cover them well.
    2. While the water is boiling, place the tea bags and sugar into a 2 quart pitcher.
    3. After the water boils, pour it over the tea bags and sugar.
    4. Cover and let it steep for 10-20 minutes, depending on the desired strength (at least 5 minutes if you are in a hurry). I let mine sit for 30 minutes or more.
    5. When the tea is steeped, gently stir it. You don’t want to break the tea bags.
    6. Add more cold water, up to the 2 quart line.
    7. Chill.

    Notes

    • If I will be serving my sweet tea over ice, which is the way I love it, I will only add water to the 1 1/2 quart line instead of 2 quarts so that the tea does not get too diluted as the ice melts.
    • After you taste the tea, you can adjust the sugar and water in the recipe to your own preference.
    • For flavored sweet tea: Use 2 regular tea bags and one flavored tea bag (like peach or raspberry). This adds just the right amount of flavor to the tea. If you like lemon, toss in a slice!

This sweet tea recipe is from volume 1 of our cookbook:

Here are the steps for how to make sweet tea with pictures:

Boil part of the water (about 3 cups). This doesn’t have to be precisely measured. Just estimate using enough so that when you pour it over the tea bags and sugar, it will cover them well.

While the water is boiling, place the tea bags and sugar into a 2 quart pitcher.

How To Make Sweet Tea Pour The Sugar

After the water boils, pour it over the tea bags and sugar. Cover and let it steep for at least 5 minutes if you are in a hurry. I let mine sit for 30 minutes or more (or until I remember that I made it ;-).

Then, gently stir it. You don’t want to break the tea bags.

Add more cold water up to the 2 quart line. Chill.

If I will be serving mine over ice, which is the way I love it, I will only add water to the 1 1/2 quart line instead of 2 quarts.

Of course, after you try it, you can adjust the sugar and water to your preference.

Sometimes I will use 2 regular flavored tea bags and one flavored tea bag (like peach or raspberry). This adds just the right amount of flavor to it. If you like lemon, toss in a slice!
