Gluten Free Brownies Recipe (Fudge Brownies)
¾ cup + 2 Tbsp. shortening
1½ cups granulated sugar
1 Tbsp. vanilla
3 eggs, room temperature
1 cup gluten free all purpose flour
½ tsp. xanthan gum (if not in flour)
¾ cup baking cocoa powder, (break lumps with fork)
¼ tsp. salt
¾ cup dairy free semi-sweet chocolate chips
Preheat the oven to 350°. Grease an 8×8 inch baking pan.
In a mixing bowl, stir together shortening, sugar and vanilla. Add eggs one at a time and stir until combined.
Add flour, xanthan gum (if using), cocoa powder and salt. Stir just until almost no streaks of flour remain. Do not overmix!
Fold in chocolate chips.
Pour the batter into the prepared pan. Bake 20-22 minutes or until the brownies have formed a thin crust and appear set in the middle. A toothpick inserted into the center will come out wet. A toothpick inserted into the sides will come out with some moist crumbs on it, but not totally raw batter.
The brownies will continue to bake as they sit in the pan and will firm up as they cool. Let cool completely. Then cover and store at room temperature for up to 4 days. You can also refrigerate them to give them a fudgier texture.
If you LOVE super fudgy brownies, this is the recipe for you. This recipe calls for you to remove them 5-10 minutes before they are completely done. This gives the brownies an ooey gooey chocolate brownie amazingness that is definitely worth trying!! If you like your brownies more done, just leave them in the oven 5-10 minutes longer.

Gluten Free Brownies Tips
These BROWNIES ARE AMAZING!
You can easily double the gluten free brownies recipe to make a double batch of tasty brownies! If you like, top the brownies with your favorite frosting. Any flavor works, but why not add a chocolate or fudge frosting? What could be better than fudge brownies with chocolate? Oh yum!
This gluten free brownies recipe is the perfect size because it makes a 8×8 pan. Just perfect for everyone to have some and leftovers for lunch the next day, but not so big that you blow your diet eating the entire pan in one sitting. (who me? :-)
This brownies recipe can easily be made in one bowl. I hate to create a crazy amount of extra work in the cleanup, so I do my best to use just one bowl to prepare these brownies. I’m all for fewer dishes!
Here is a perfect chocolate frosting recipe you can make to top these brownies!
Gluten Free Dairy Free Chocolate Frosting Recipe
½ cup sugar
2 Tbsp. cocoa
2 Tbsp. dairy free milk (rice or soy)
¼ cup dairy free butter, melted
Combine all of the ingredients in a saucepan and bring to a boil. Boil for 1 minute. Drizzle over brownies.
I make the quickie version of chocolate frosting with a secret ingredient!
To make quickie frosted brownies, I start with the gluten free brownies recipe. Then, I add chocolate chips to the recipe and sprinkle some chocolate chips on top after I take the brownies out of the oven, whole they are still piping hot. (If you’re dairy free, be sure to use dairy free chocolate chips.) Then when the chips are melted, I spread the melted chocolate chips over the top for an “over the top” double chocolate brownie.
Here’s the reaction from a couple of our readers:
Annjanette C. Just the BEST BROWNIES EVER!!! My granddaughter always wants to make these when she visits!!!
Tammy B. This is the only recipe I ever use. Everyone loves these brownies!
I wanted to add a tip for cutting brownies. When you cut brownies, if you use a plastic knife, your brownies won’t “tear” apart like they sometimes do. This even works (but not quite as well) on warm brownies.
