Ingredients
3/4 cup + 2 Tbsp. shortening
1 1/2 cups granulated sugar
1 Tbsp. vanilla
3 eggs, room temperature
1 cup gluten free all purpose flour
1/2 tsp. xanthan gum (if not in flour)
3/4 cup baking cocoa powder, (break lumps with fork)
1/4 tsp. salt
3/4 cup dairy free semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°.
- Grease an 8×8 inch baking pan.
- In a mixing bowl, stir together shortening, sugar and vanilla.
- Add eggs one at a time and stir until combined.
- Add flour, xanthan gum (if using), cocoa powder and salt.
- Stir just until almost no streaks of flour remain. Do not overmix!
- Fold in chocolate chips.
- Pour the batter into the prepared pan.
- Bake 20-22 minutes or until the brownies have formed a thin crust and appear set in the middle. A toothpick inserted into the center will come out wet. A toothpick inserted into the sides will come out with some moist crumbs on it, but not totally raw batter.
- The brownies will continue to bake as they sit in the pan and will firm up as they cool. Let cool completely.
- Then cover and store at room temperature for up to 4 days. You can also refrigerate them to give them a fudgier texture.

I make the quickie version of chocolate frosting with a secret ingredient!
To make quickie frosted brownies, I start with the gluten free brownies recipe. Then, I add chocolate chips to the recipe and sprinkle some chocolate chips on top after I take the brownies out of the oven, whole they are still piping hot. (If you’re dairy free, be sure to use dairy free chocolate chips.) Then when the chips are melted, I spread the melted chocolate chips over the top for an “over the top” double chocolate brownie.

I wanted to add a tip for cutting brownies. When you cut brownies, if you use a plastic knife, your brownies won’t “tear” apart like they sometimes do. This even works (but not quite as well) on warm brownies.
