My husband and kids love this mushroom chicken recipe, but if you have young children who aren’t too sure about the mushrooms, you could save aside a small amount of the chicken and add it to the sauce without the mushrooms. Even if they are picky, you could serve with a few mushrooms even if they only pick at them just to teach them to appreciate good food without being so picky! (Best way EVER to break in picky eaters! ;-)
This easy mushroom chicken recipe is a super versatile chicken breast recipe for dinner, starting with juicy pan-fried chicken breast pieces, smothered in a creamy mushroom sauce and then served over rice.
The recipe calls for serving the mushroom chicken over rice, but you can also serve over pasta or mashed potatoes.

Easy Mushroom Chicken Recipe
- Yield: 4 servings
1 Tbsp. butter
1 Tbsp. oil
2 boneless skinless chicken breasts
1–2 cups mushrooms, sliced (to taste)
1 can cream of mushroom soup
1 cup chicken broth
- Heat butter and oil in a pan.
- Cut chicken breasts into 2-inch pieces.
- Season to taste with seasoned salt.
- Fry in oil until golden and cooked through.
- Push chicken to one side. Add sliced mushrooms.
- Cook until desired doneness.
- Push to the side with chicken.
- Add cream of mushroom soup and chicken broth. Stir until mixed.
- Mix in chicken and mushrooms.
- Serve over rice. Serves 4.
