    Ingredients

1 cake mix (any flavor works, but chocolate is our hands down favorite!)
1 can pumpkin or 2 cups mashed cooked pumpkin
1 cup mini chocolate chips (optional)

    Instructions

    1. Preheat oven to 350°.
    2. Beat the ingredients together with an electric mixer until smooth. (It will be really thick.)
    3. Add 1 cup mini chocolate chips and stir.
    4. Line muffin tins with paper muffin cups and spray with non-stick spray.
    5. Use an ice cream scoop to put the batter into the muffin cups. (I can get 24 from one box of mix.)
    6. Bake for 20 minutes, until a toothpick inserted in the center comes out clean.
    7. Cool and frost if desired.

    Notes

    • My family likes these muffins just as they are when they are hot from the oven.
    • Spice cake mix is great – add white chocolate chips, peanut butter chips or butterscotch chips.
    • I have made pumpkin muffins with white cake mix and yellow cake mix too. They have around 120 calories a piece with the mini chocolate chips and are virtually fat free. If you are on weight watchers they only count as 1 point.
    • This is a fabulous way to sneak some vitamin A rich veggies in on the kids. Just don’t let them see you put the pumpkin into the muffins and they will never know it is there. These are more moist than name brand very expensive double chocolate chip muffins.

    • Author: Tawra Kellam

    Ingredients

    Units
4 large eggs 1 cup Nutella Powdered sugar, for dusting (optional)

    Instructions

    1. Preheat the oven to 350°. Line an 8×8-inch baking pan with parchment paper and set aside.
    2. In a large mixing bowl, beat the eggs on high speed using a stand mixer (5–7 minutes) or hand mixer (about 10 minutes), until they triple in volume. This step is key—if the eggs aren’t fully whipped, the brownies will taste eggy.
    3. Microwave the Nutella in a microwave-safe bowl or measuring cup for about 60 seconds until warm and pourable. Stir to smooth.
    4. With the mixer running on low speed, VERY VERY slowly, pour a stream of the warm Nutella over the whipped eggs, beating until thoroughly combined.
    5. Pour the batter into the prepared pan.
    6. Bake for 30–35 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs (not wet batter).
    7. Let the brownies cool completely in the pan before cutting. They MUST be COMPLETELY COOL! This is important for the best texture.
    8. Dust with powdered sugar, if desired.
    9. Cut into bars and serve.

    Notes

This recipe will taste “eggy” if you do not beat the eggs enough, so make sure they are triple their original size.

    • Author: Tawra Kellam

    Ingredients

    1/2 cup milk
    2 cups sugar
    1/2 cup baking cocoa
    1/2 cup butter or margarine
    1/2 cup Nutella
    1 tsp. vanilla
    3 cups quick oats
    1/2 cup nuts (optional)

    Instructions

    1. Before you start, lay out a 20-inch sheet of wax paper on the counter—this is where you’ll drop the cookies.
    2. In a medium saucepan, combine the milk, sugar, cocoa, and butter.
    3. Bring the mixture to a boil over medium heat.
    4. Once boiling, continue to boil for 1 minute (or 1½–2 minutes if you’re at high altitude).
    5. Remove from heat. Stir in the Nutella, vanilla, and nuts (if using) until fully blended.
    6. Mix in the oats until well combined.
    7. Quickly drop the mixture by spoonfuls onto the wax paper.
    8. Let cool and set for about 15–20 minutes.

    Notes

    • Work quickly—these cookies start to set fast once off the heat.

Check out these quick and easy fudge recipes for your next sweet treat! Making candy shop-quality fudge is easier than you think! In just 5–10 minutes and with only a few simple ingredients, you can whip up delicious homemade fudge that will amaze your family and friends!

After I learned to make my own homemade fudge, I was shocked at how much candy stores charge for something that is so quick and easy to make yourself!

Since then, I have made this fudge and many of our other Christmas candy recipes for holiday parties and get-togethers. These easy fudge recipes are super popular everywhere I take them. Most people don’t bring candy to parties because it is so expensive to buy already made.

You do not need a candy thermometer to make these recipes. You just have to pay attention as you warm the chocolate so you don’t burn it and stir it frequently.

How To Avoid Burning Your Chocolate When making These Fudge Recipes

Most of these fudge recipes call for melting some type of chocolate in the microwave in a microwave-safe container. Generally, you will want to microwave it in 30 second increments, stirring in between, until it is smooth.

Pro tip: If after microwaving the chocolate, if the chocolate is ALMOST smooth, do not microwave more. This helps to avoid burning the chocolate. Instead, set it on the counter for a few minutes to allow the heat that is already in the chocolate to finish melting it. Then stir until smooth.

This 2 ingredient fudge recipe is one of our favorite Christmas candies! Who knew rich, creamy chocolate fudge could be so dreamy! Bring this to a family get-together or holiday party and they will think you worked all day perfecting it! (Or just make it for yourself and hide it from the kids! lol)

    3/4 cup (1 1/2 sticks) butter
    3 cups sugar
    2/3 cup evaporated milk
    2 cups white chocolate chips
1 (7 oz.) jar marshmallow fluff

    Ingredients

    Base:

1 (14 oz.) can sweetened condensed milk
1 (11 oz.) bag chocolate chips
    1 tsp. orange extract

    Top:

1 1/2 bags (approx. 16 oz.) white baking chips
    1 can sweetened condensed milk
    1 tsp. orange extract
    orange food coloring

    Instructions

    1. Line an 8×8 inch baking pan with parchment paper and butter or spray with cooking spray.
    2. Pour the sweetened condensed milk and chocolate chips into a microwave-safe bowl.
    3. Melt in 30 second increments. Stir after each 30 seconds.
    4. When melted, stir in orange extract.
    5. Pour into a greased 8×8 inch pan and spread evenly.
    6. For the top layer, put the white baking chips and sweetened condensed milk into a microwave-safe bowl.
    7. Melt in 30 second increments. Stir after each 30 seconds.
    8. When melted, stir in food coloring until you get the desired shade of orange.
    9. Stir in orange extract.
    10. Pour on top of the base chocolate layer and spread evenly.
    11. Swirl the chocolate and orange layers together to get a marbled look.
    12. Let cool in the fridge and then cut into pieces.

    Notes

    • If you don’t have orange food coloring on hand, you can mix red and yellow food coloring to get orange.
    • If you prefer, you can leave the layers instead of swirling them together.
    • To make it easier to get the fudge out of the pan, I prefer to use parchment paper and spray the inside with cooking spray.
    • I lightly clean the microwave-safe bowl after the first layer to get the chocolate color out and reuse it so I don’t use too many dishes.
