At the height of summer, cucumbers are amazing and plentiful whether you are growing them in your garden or purchasing them from the local farmer’s market or grocery store. It’s the perfect time to make this easy cucumber salad recipe for a bright, delicious, and seasonal side dish.

My cucumber onion salad is a fresh and tasty contrast to any grilled meats or main dish. It’s also wonderful as a sandwich topping whether you pair it with cream cheese, cold cuts, or tomatoes.

What is Cucumber Salad?

Salad is by definition a blend of vegetables, raw or cooked, served cold, and most often served with some kind of dressing. Cucumber onion salad is a blend of cucumbers and onions mixed with a dressing and refrigerated before serving. The dressing in this case is a mix of vinegar, sugar, and water.

Why We Love It

Nothing says summer and comfort than a cold salad using fresh seasonal ingredients. In the middle of winter, this easy cucumber salad recipe brings back fond memories of summer and still offers the perfect contrast for almost any protein or main dish. When you want to eat light, you can even enjoy this salad as your main entree!

How To Make Cucumber Salad

This cucumber and onion salad with vinegar is one of the easiest side dishes you’ll ever make. We like easy in this house! All you need to do is slice the cucumber, slice the onions, mix it all together with the dressing ingredients, and refrigerate the salad for several hours to meld the flavors. That’s it! No complicated steps.

Cucumber Salad Ingredients

Here’s what you need to make my easy Cucumber Salad Recipe.

Cucumbers. Get medium cucumbers for the best flavor. Peel and dice or slice the cucumbers.

Onion. A medium white onion works fine. You can also use a sweet onion.

White vinegar. Distilled vinegar has a clear and unaffected flavor perfect to feature the other salad ingredients.

Sugar. Regular white granulated sugar, turbinado sugar, or even your favorite sugar substitute.

Water.

How to Cut Cucumbers for Salad

Don’t make it complicated! Just slice or dice your cucumbers with a knife just like you would for any other salad. You can use a mandoline slicer or food processor for uniform results if you like.

Storing Your Leftovers

If you don’t eat all of the cucumber salad on the first go, don’t fret. Just pop it in the fridge in an airtight container and enjoy it with a different meal.

How Long Does Cucumber Salad Last?

Because it is slightly pickled, this cucumber salad recipe could last longer than most other salads in your refrigerator. Eventually, your cucumbers will start to get soggy and that’s a good way to know it’s time to use it before it gets too old. Because cucumbers come from the store and your garden at varying stages of ripeness, it’s hard to predict precisely how long your leftovers will last. Keep an eye out for mushiness, mold, or off-putting smells, and discard the cucumber and onion salad as soon as you notice anything like that.

Can I Freeze Cucumber Salad?

Freezing uncooked cucumbers changes the texture and taste of the cucumber significantly and is not recommended. Instead, we suggest using your leftover salad faster by serving it on sandwiches with cream cheese, tomatoes, or cold cuts.

Tips for a Company Ready Dish

  • Use a fancy crinkle slicer like this one to make your salad as beautiful as it is tasty.
  • Peel your cucumber in stripes leaving a strip of dark green between every peeler slice to create a pretty visual effect.
  • Make sure to refrigerate your completed cucumber salad for at least three or four hours before serving for best results.
  • Use clear glass serving dish to show off the beautiful salad.
  • If you want to get your kids involved in the making of the dish, have them slice the cucumbers using these kid-safe knives.

Ingredients

Units
  • 3 medium cucumbers, peeled, diced, or sliced
  • 1/2 medium onion, diced or sliced
  • 1 Tbsp. white vinegar
  • 1/3 cup sugar
  • 1/4 cup water

Instructions

  1. Mix everything.
  2. Cover and refrigerate for several hours or overnight.

    This looks so yummy. I love cucumbers. Is it very sweet though? I’m wondering if I should cut back on the sugar. I may just use 1/4 cup.
