Easy Apricot Chicken Recipes – Delicious Recipes To Make With Chicken!

These quick and easy apricot chicken recipes are absolutely delicious—sweet, savory, and packed with flavor! They’re quick to throw together, easy on the budget, and made with apricot preserves and optional dried apricots, so you can make them anytime of year. One has an apricot barbecue flavor and the other is an Asian inspired flavor. Popular with everyone, including husbands and kids, they’re perfect for a weeknight dinner that tastes like you spent hours in the kitchen!

This easy apricot chicken recipe makes tasty baked chicken with a delicious apricot and barbecue glaze. Because it uses apricot preserves, you can enjoy it even when apricots are not in season. It's a perfect way to serve chicken when you're tired of the same old dinner. 

These easy apricot chicken recipes add some pizazz to baked chicken with 2 wonderful flavors! The first recipe makes an apricot barbecue glaze that is juicy and delicious. The second recipe is an Asian inspired apricot chicken including a rich flavored sauce made with apricot preserves, dried apricots and soy sauce.

Both of these apricot chicken recipes call for boneless skinless chicken breasts, but you can easily use other kinds of chicken. If you have bone-in chicken like chicken breasts or leg quarters, you can remove the meat from the bone for the first apricot chicken recipe where it calls for cutting boneless skinless chicken into chunks.

For the second recipe you can easily prepare and serve with bone-in chicken or even pork chops if you don’t have boneless skinless chicken. When prices are high on one meat, don’t be afraid to try something else. We have often found that chicken leg quarters, which include a leg and a thigh are cheaper than other chicken and the dark meat is juicy and delicious.

These apricot chicken recipes are very versatile. For an easy dinner, make either of these recipes and serve with rice and a vegetable. We always keep frozen broccoli, corn, mixed vegetables and other vegetables in the freezer so I can pick one and toss it in the microwave for a quick and easy side dish when I’m tired after a long day.

These recipes require very little preparation time, so you can quickly put together the recipe and then put it in the oven to bake while you take care of other things!

Ingredients

Units

1 lb. boneless, skinless chicken breast, cut into chunks
2 cloves garlic, minced
1 Tbsp. oil, olive or vegetable
1/2 cup apricot preserves
1/4 cup barbecue sauce
1/4 cup water
2 Tbsp. onion soup mix

Instructions

  1. Preheat oven to 375°.
  2. In a frying pan, cook chicken in garlic and oil until brown.
  3. Place in an 8 inch baking dish.
  4. Combine the remaining ingredients in a medium bowl.
  5. Pour over the chicken.
  6. Bake uncovered for 25-30 minutes until juices run clear.
  7. Serve over rice.

Ingredients

Units

1/2 cup apricot preserves
1/2 cup dried apricots, halved
1 Tbsp. + 1 tsp. soy sauce
2 cloves garlic, minced
4 (4-6 oz.) fresh boneless, skinless chicken breasts
1/2 tsp. salt
1/4 tsp. ground black pepper

Instructions

  1. Preheat oven to 425°.
  2. In a bowl, combine apricot preserves, dried apricots, soy sauce and garlic. Mix well.
  3. Add chicken and coat well.
  4. Season with salt and pepper.
  5. Place chicken in a shallow roasting pan.
  6. Roast chicken for 30 minutes or until done.
  7. Baste chicken with the juices several times during cooking.
  8. Remove chicken to a warm platter.
  9. Pour the pan juices over the top.
  10. Serve warm.

    I made your Apricot Chicken Recipe but used pork chops and used SF BBQ sauce and SR Apricot preserves because of a diabetic in the house. It was delicious!
