Wassail or Mulled Cider Recipe

Ingredients

8 cups apple cider
1/4 cup brown sugar
1 tsp. whole cloves
1 tsp. whole allspice
1 cinnamon stick

Instructions

  1. Heat all the ingredients to boiling.
  2. Reduce heat.
  3. Cover and simmer 20 minutes.
  4. Strain and pour into a punch bowl.

2 cups sugar
2/3 cup apple cider (NOT apple cider vinegar)
1/2 cup salted butter
1/2 tsp. cinnamon
1/4 tsp. allspice
1/2 tsp. cloves (optional)
1 cup white chocolate chips (Ghirardelli for smoothest fudge but the cheaper ones work just fine.)
12 large marshmallows, cut in half
1 tsp. vanilla extract
1/2 cup dried apples, cut into small pieces

Instructions

  1. Combine the sugar, apple cider, butter, cinnamon, and allspice (if desired) in a large saucepan.
  2. Cook over medium heat, stirring constantly, until the mixture begins to boil.
  3. Allow the mixture to boil for 5 minutes, continue stirring. DO NOT OVERCOOK.
  4. Remove from heat.
  5. Add in the white chocolate chips and marshmallows.
  6. Stir until the white chocolate is fully melted.
  7. Stir in the vanilla and dried apples.
  8. Spread the mixture evenly into a buttered 8×8 inch pan.
  9. Cool completely.
  10. Cut into squares.

Ingredients

3/4 cup apple cider (NOT apple cider vinegar)
3/4 cup salted butter, cut into cubes
1 (14 oz.) can sweetened condensed milk
3 cups sugar
11 ounce bag white chocolate chips (Ghirardelli for smoothest fudge but the cheaper ones work just fine.)
1/2 cup dried apple, finely diced
1 tsp. vanilla extract
1/2 tsp. cinnamon
1/2 tsp. cloves (optional)
1/4 tsp. allspice

Instructions

  1. Line an 8×8-inch baking dish with parchment paper and grease.
  2. Combine the apple cider, butter, sweetened condensed milk, and sugar in a large saucepan.
  3. Bring to a rolling boil and stir continuously for 5 minutes.
  4. Reduce heat to low.
  5. Add white chocolate chips and stir until completely melted and smooth.
  6. Stir in the dried apple, vanilla, and spices; blend well, stirring for another minute or so to incorporate.
  7. Pour mixture into baking dish.
  8. Refrigerate until completely hardened. (3-4 hours to as long as overnight)
  9. Remove the parchment paper and fudge from the pan and place on a cutting board.
  10. Cut into squares.

Apple Cider Pancakes

Starting with pancake mix: Follow the directions on pancake mix but use apple cider (NOT apple cider vinegar) instead of milk or water.

Ingredients

1/4 cup sugar
2 tsp. cornstarch
2/3 cup apple cider or juice (NOT apple cider vinegar)
1 cinnamon stick
dash nutmeg

Instructions

  1. In a small saucepan, combine the sugar, cornstarch and cider until smooth.
  2. Add cinnamon stick.
  3. Bring to a boil over medium heat.
  4. Cook and stir for 2 minutes or until thickened.
  5. Discard cinnamon stick.
  6. Stir the nutmeg into the syrup.

Ingredients

2 1/4 cups baking mix (Bisquick)
1/4 cup sugar
1 egg
3/4 cup apple cider (NOT apple cider vinegar)
1/3 cup vegetable oil
cinnamon and sugar

Instructions

  1. Preheat oven to 400°.
  2. Mix dry baking mix and sugar.
  3. Add egg, apple cider and vegetable oil to dry ingredients.
  4. Mix only enough to moisten flour. The batter will be lumpy.
  5. Fill greased muffin tins ⅔ full.
  6. Sprinkle cinnamon and sugar on top.
  7. Bake 20 minutes.

Notes

  • Add raisins, cinnamon or nuts for gourmet muffins.

Apple Cider Sauce for Chicken or Salmon

Ingredients

1/2 cup apple cider (NOT apple cider vinegar)
2 Tbsp. honey
dash of salt
1 Tbsp. olive oil*

Instructions

  1. Combine ingredients in a saucepan.
  2. Cook on medium heat until reduced to the desired consistency.
  3. Serve over chicken or salmon.

I cook my meat in the oil first. Then I remove the meat from the pan, add the rest of the ingredients and reduce the sauce. Then I add the meat back to the pan to warm it up and serve.

Ingredients

9–10 apples, cored, peeled and chopped
1 cup apple cider for ever 3 pounds of apples (NOT apple cider vinegar)
2 cups sugar
2 tsp. cinnamon
1/8 tsp. cloves
1/8 tsp. salt

Instructions

  1. Place everything into a crockpot.
  2. Stir, cover and cook on high 1 hour.
  3. Then cook on low for 9-11 hours or until thick and dark brown. Stir occasionally.
  4. Uncover and cook on low 1 hour longer.
  5. Stir with a whisk until smooth.
  6. Refrigerate or freeze.
