Wassail or Mulled Cider Recipe
- Yield: Serves 8
Ingredients
8 cups apple cider
1/4 cup brown sugar
1 tsp. whole cloves
1 tsp. whole allspice
1 cinnamon stick
Instructions
- Heat all the ingredients to boiling.
- Reduce heat.
- Cover and simmer 20 minutes.
- Strain and pour into a punch bowl.
Apple Cider Fudge Recipe (more butter rum flavor)
Ingredients
2 cups sugar
2/3 cup apple cider (NOT apple cider vinegar)
1/2 cup salted butter
1/2 tsp. cinnamon
1/4 tsp. allspice
1/2 tsp. cloves (optional)
1 cup white chocolate chips (Ghirardelli for smoothest fudge but the cheaper ones work just fine.)
12 large marshmallows, cut in half
1 tsp. vanilla extract
1/2 cup dried apples, cut into small pieces
Instructions
- Combine the sugar, apple cider, butter, cinnamon, and allspice (if desired) in a large saucepan.
- Cook over medium heat, stirring constantly, until the mixture begins to boil.
- Allow the mixture to boil for 5 minutes, continue stirring. DO NOT OVERCOOK.
- Remove from heat.
- Add in the white chocolate chips and marshmallows.
- Stir until the white chocolate is fully melted.
- Stir in the vanilla and dried apples.
- Spread the mixture evenly into a buttered 8×8 inch pan.
- Cool completely.
- Cut into squares.
Apple Cider Fudge Recipe (more apple flavor)
Ingredients
3/4 cup apple cider (NOT apple cider vinegar)
3/4 cup salted butter, cut into cubes
1 (14 oz.) can sweetened condensed milk
3 cups sugar
11 ounce bag white chocolate chips (Ghirardelli for smoothest fudge but the cheaper ones work just fine.)
1/2 cup dried apple, finely diced
1 tsp. vanilla extract
1/2 tsp. cinnamon
1/2 tsp. cloves (optional)
1/4 tsp. allspice
Instructions
- Line an 8×8-inch baking dish with parchment paper and grease.
- Combine the apple cider, butter, sweetened condensed milk, and sugar in a large saucepan.
- Bring to a rolling boil and stir continuously for 5 minutes.
- Reduce heat to low.
- Add white chocolate chips and stir until completely melted and smooth.
- Stir in the dried apple, vanilla, and spices; blend well, stirring for another minute or so to incorporate.
- Pour mixture into baking dish.
- Refrigerate until completely hardened. (3-4 hours to as long as overnight)
- Remove the parchment paper and fudge from the pan and place on a cutting board.
- Cut into squares.
Apple Cider Pancakes
Starting with pancake mix: Follow the directions on pancake mix but use apple cider (NOT apple cider vinegar) instead of milk or water.

Apple Cider Syrup Recipe
Ingredients
1/4 cup sugar
2 tsp. cornstarch
2/3 cup apple cider or juice (NOT apple cider vinegar)
1 cinnamon stick
dash nutmeg
Instructions
- In a small saucepan, combine the sugar, cornstarch and cider until smooth.
- Add cinnamon stick.
- Bring to a boil over medium heat.
- Cook and stir for 2 minutes or until thickened.
- Discard cinnamon stick.
- Stir the nutmeg into the syrup.
Apple Cider Muffins Recipe
- Yield: 12-15 muffins
Ingredients
2 1/4 cups baking mix (Bisquick)
1/4 cup sugar
1 egg
3/4 cup apple cider (NOT apple cider vinegar)
1/3 cup vegetable oil
cinnamon and sugar
Instructions
- Preheat oven to 400°.
- Mix dry baking mix and sugar.
- Add egg, apple cider and vegetable oil to dry ingredients.
- Mix only enough to moisten flour. The batter will be lumpy.
- Fill greased muffin tins ⅔ full.
- Sprinkle cinnamon and sugar on top.
- Bake 20 minutes.
Notes
- Add raisins, cinnamon or nuts for gourmet muffins.
Apple Cider Sauce for Chicken or Salmon

Instructions
- Combine ingredients in a saucepan.
- Cook on medium heat until reduced to the desired consistency.
- Serve over chicken or salmon.
I cook my meat in the oil first. Then I remove the meat from the pan, add the rest of the ingredients and reduce the sauce. Then I add the meat back to the pan to warm it up and serve.
Apple Butter With Apple Cider
- Yield: Makes 2 pints
Ingredients
9–10 apples, cored, peeled and chopped
1 cup apple cider for ever 3 pounds of apples (NOT apple cider vinegar)
2 cups sugar
2 tsp. cinnamon
1/8 tsp. cloves
1/8 tsp. salt
Instructions
- Place everything into a crockpot.
- Stir, cover and cook on high 1 hour.
- Then cook on low for 9-11 hours or until thick and dark brown. Stir occasionally.
- Uncover and cook on low 1 hour longer.
- Stir with a whisk until smooth.
- Refrigerate or freeze.
