    Ingredients

    1 (15 oz.) can pumpkin puree (solid pack)
    1 (12 oz.) can evaporated milk
    3 large eggs
    1 1/2 cups sugar
    1 tsp. cinnamon
    1 tsp. salt
    1 box Yellow cake mix
    1/2 cup chopped nuts (pecans or walnuts work best)
    1 cup butter, melted

    Instructions

    1. Preheat oven to 350°F. Lightly grease a 9×13-inch baking pan.
    2. In a large bowl, mix the pumpkin, evaporated milk, eggs, sugar, cinnamon, and salt until smooth.
    3. Pour the mixture evenly into the baking pan.
    4. Sprinkle the dry cake mix evenly over the pumpkin mixture.
    5. Top with chopped nuts, then drizzle the melted butter evenly over everything.
    6. Bake for 50–55 minutes, or until the top is golden brown and the edges are set.
    7. Let cool completely, then refrigerate until chilled.
    8. Serve cold with whipped cream or whipped topping.

    Notes

    Tips:

    When it comes to cooking, there are certain things that are on my list of “not too fun things to do.” I try to avoid these things when possible or find faster and easier ways to do them.

    Here are a few things you may not like doing and some easier ways to do them:

    • Chopping pickles (for egg salad, tuna, potato salad, etc.) I would normally just cut a pickle or two with my knife because the amount of time it takes to drag out a chopper, rinse it, let it dry and have to put it away for one little pickle seems like overkill to me. Here is an even easier method that Tawra often uses:Take several pickles, chop them with a chopper, place in a jar or container and cover with a little juice. Then, when you need a spoonful or two, just scoop them out of the jar, pressing the spoon against the side of the jar to remove the juice. These are almost like chunky pickle relish. Now you have chopped pickles handy all the time.
    • Cracker Crumbs For years, I have tossed crackers into a bag and crushed them with a rolling pin. The bag would usually get a hole in it and I would end up with a big mess. (Believe it or not, I don’t own a food processor or chopper.)Instead, try placing your crackers into a wide mouth mug or small bowl. Use a narrower tumbler that fits inside the first mug to crush your crackers or cereal for crumbs.You could also crush a large amount of crackers into crumbs in a food processor all at once. Store in a large airtight container with a scoop and you’ll have them handy and ready whenever you need them. This works especially well for graham cracker crumbs if you make a lot of pie crusts or to use in other recipes.
    • Cutting Meat For years, I used a knife to cube all kinds of my meat, until I discovered kitchen shears. Even a nice pair of strong scissors works well. Now I cut my meat with the kitchen shears. It only takes half the time and I don’t have to clean a cutting board afterward.If you are cutting something like steak into cubes, cut it when it’s slightly frozen, because it is easier to cut.

    Recipes:

    Angel Food Delight

    1 angel food cake, cubed
    1 can pie filling (cherry, peach or blueberry)
    1 small pkg. instant vanilla pudding
    1 1/2 cups milk
    1 cup sour cream
    Whipped topping

    Place half of the angel food cake cubes into a pan or dish. Top with pie filling. Place remaining angel food cake on top. In a separate bowl, combine pudding, milk and sour cream, beating well. Pour over cake. Chill for 5 hours or more and served topped with whipped topping.

    Easy Pineapple And Coconut Cake

    1 can (20 oz.) crushed pineapple, undrained
    1 (2 layer) yellow cake mix
    1pkg. (4 servings) lemon instant pudding
    2 cups whipped topping
    1/2 cup flake coconut, toasted
    1/2 cup chopped pecans or nuts

    Drain pineapple, reserving juice. Mix cake batter according to package directions, but substitute 1 cup pineapple juice for 1 cup of water called for in the cake batter. Pour into a 15x10x1 inch greased baking pan.

    Bake at 350 degrees for 15-18 minutes, until toothpick inserted in the center comes out clean. Cool.

    Mix milk and pudding, beating 2 minutes with a wire whisk. Stir in pineapple. Spread over cake, cover with whipped topping and sprinkle with coconut and nuts. Store in refrigerator.

    Two Yummy Chocolate Cake Recipes!

    I can never get enough chocolate. I wish I could have it directly pumped into my veins but then I guess I would not have the wonderful pleasure of tasting it then would I? : ) This first recipe is one I got almost 45 years ago when I was living in the wonderful state of Texas. (I had to say that for my son in law.) They don’t do anything by half measures in that state and this recipe is a good example with all the extra gooey yummy stuff in it. There sure are some great cooks there. Be forewarned: This is a very rich dessert. It can be used as a cake or brownie.

    Heavenly Hash Chocolate Cake Recipe

    1 cup (2 sticks) margarine
    2 cups sugar
    4 eggs
    4 Tbsp. baking cocoa
    1 1/2 cups flour
    nuts
    1 pkg. mini marshmallows

    Cream the margarine and sugar. Add eggs, cocoa, flour and nuts. Bake at 350 degrees for 20-30 minutes. While it is baking, mix up the frosting below. When the cake is done, remove it from the oven and immediately cover it with marshmallows so they will melt slightly. Then top with frosting right away.

    Frosting

    1/2 cup (1 stick) butter, softened
    3-4 cups powdered sugar
    4 Tbsp. baking cocoa
    Pinch of salt (optional)
    8 Tbsp. evaporated milk (You can use regular milk.)

    Cream the butter. Add the remaining ingredients in order. If the frosting is too stiff, add more milk. If it is too soft, add more powdered sugar.

    This recipe is one my mom has used for many many years. At a certain period in time, everyone was using German chocolate cakes for everything and this comes from that period.

    Turtle Cake Recipe

    1 regular box German chocolate cake mix plus the ingredients on the back of the package
    3/4 cup butter, melted
    1 – 14 oz bag Kraft caramels
    1/2 cup evaporated milk
    1 cup nuts
    1 cup chocolate chips

    Preheat the oven to 375 degrees. Prepare cake mix as directed on the package. Add the 3/4 cup butter to it. Pour half of the batter into a greased 9×13 pan. Bake for 10 minutes. While it is baking, melt the caramels and milk together. Take the cake out of the oven. Pour the caramel mix over the cake, sprinkle with nuts and chocolate chips and pour the remaining batter over it all. Bake 25-30 minutes more.

    1. Preheat oven to 350°.
    2. Cream butter and sugar until mixture is very light and fluffy.
    3. Add eggs. Mix well.
    4. Mix flour with cloves, cinnamon and salt.
    5. Add flour, cloves, cinnamon, salt, baking soda and buttermilk. Mix well.
    6. Pour into a greased 10-inch tube pan.
    7. Bake for 45-55 minutes or until a toothpick inserted in the center of the cake comes out clean.
    8. Cool 10 minutes before removing from the pan.
    9. When cool, sprinkle with powdered sugar or frost with Caramel Frosting.

    Ingredients

    1 (18 oz.) pkg. cake mix (yellow, white, or butter pecan)
    3 eggs
    1/3 cup oil
    1 cup mashed bananas (about 3 medium bananas)
    1 cup chopped nuts (optional)

    Instructions

    To Make In An Oven:

    1. Preheat oven to 350°.
    2. In a large bowl, combine all ingredients and mix for 2 minutes.
    3. Pour batter into a greased 5.25 x 9 x 2.75-inch loaf pan.
    4. Bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean.
    5. Let the bread cool in the pan for 10 minutes, then remove and cool completely on a wire rack.

    To Make In A Crockpot

    1. In a large bowl, prepare the cake mix according to the package instructions.
    2. Mash the bananas and stir them into the batter until well combined.
    3. Grease the inside of your crockpot (use cooking spray or butter).
    4. Pour the batter into the crockpot and smooth the top.
    5. Place a clean dishtowel or a few paper towels over the crockpot, then set the lid on top. This helps absorb moisture for a better texture.
    6. Cook on high for 2–3 hours, or until a toothpick inserted in the center comes out clean.
    7. Let cool slightly, then remove from crockpot. Frost if desired once fully cooled.

    1 small (3 oz.) package of instant pudding mix
    milk
    8 oz. container of whipped topping

    Instructions

    1. Mix the pudding mix as directed on the package, except using only half the milk called for in the box instructions.
    2. Combine with the 8 oz. container of whipped topping.

    Notes

    • Use this pudding frosting for frosting cakes, cupcakes or to use as filling in cupcakes, Long Johns and other pastries.
    • You can many different flavors of pudding to make the frosting. Lemon, white chocolate, chocolate, banana, butterscotch (for spice cakes).
    • You might try using just vanilla to frost a cake, including the layers, and then add things like fresh berries, sprinkles, crushed candy, dried fruit, coconut and nuts.
    • Chocolate shavings and sprinkles are great on chocolate frosting. You can also try candied lemon peels on lemon frosting and banana slices on banana pudding.
    • This pudding frosting is a great way to use up some that leftover holiday candy you may have. Just crush it and sprinkle on top of the pudding frosting for a quick but luscious looking cake or cupcake!

    Baby it’s cold outside. Winter is certainly here. Most of us have probably had enough of a break from the Christmas baking and are ready to start baking again. I love to bake in the winter. It would always give my kitchen a warm toasty feel and smell for when the kids came home from school on a cold winter day.

    Tip: You can interchange most quick bread recipes and muffin recipes. The main thing to watch is the time and temperature you bake them at.

    Here are basic guidelines:

    Loaf  – 350 degrees for 40-45 minutes
    Loaf – 325 degrees for 1 hour
    Muffins – 400-425 degrees for 15-20 minutes

    You may have to adjust the temperatures a little to match the type of pan you use and to adjust to your own oven.

    Here is a quick bread poppy seed cake recipe that’s different from my usual favorite banana bread. This recipe can easily be made into a bread or a cake. For a cake, just bake in a 9×13 cake pan at 375 degrees for 20-25 minutes or until a toothpick comes out clean. Frost with cream cheese frosting.*

    Poppy Seed Cake Recipe

    3 cups flour
    2 cups sugar
    1 tsp. salt
    1 tsp. baking powder
    4 eggs
    1 cup milk
    1 tsp. vanilla
    1 1/2 cups vegetable oil
    2 Tbsp. poppy seeds

    Preheat oven 325 degrees F (165 degrees C). Place all dry ingredients into a medium mixing bowl. Add wet ingredients and mix by hand until blended. Pour into 2 greased and floured loaf pans (9×5). Bake 1 hour.

     

    Cream Cheese Frosting

    1 pkg. (8 oz.) cream cheese, softened
    1/2 cup butter, softened
    1 tsp. vanilla
    2 cups powdered sugar

    Beat all ingredients together until fluffy.

    This cinnamon roll cake recipe makes the perfect coffee cake for Christmas morning, breakfast brunch, dessert or just because!

    Cinnamon Roll Cake Recipe

    3 cups flour
    1 cup sugar
    1/2 tsp. salt
    4 tsp. baking powder
    1/2 tsp. cinnamon
    2 eggs
    2 tsp. vanilla
    1 1/2 cup milk
    1/2 cup butter, melted

    Filling:

    1 cup butter, softened
    1 cup brown sugar
    2 Tbsp. flour
    1 Tbsp. cinnamon

    Glaze:

    2 cups powdered sugar
    5 Tbsp. milk
    1 tsp. vanilla

    Grease a 9×13 pan.  Mix ingredients in order just until combined. Spread into the pan. Mix filling and drop by spoonfuls on top of batter. Using a knife swirl in filling. Bake at 350 degrees for 35-40 minutes. Frost with glaze when cake is cooled to slightly warm.

    Our readers are such great cooks and give us some of the best recipes. Here is a white gingerbread cake recipe from Bea that sounded different and interesting. If you don’t like the molasses flavor in regular gingerbread, this recipe may be for you because it has no molasses. It is like a spice cake. 

    I think it would be delicious for breakfast, dessert or snack and might be good drizzled with a little vanilla or caramel frosting.

    White Gingerbread Cake Recipe

    Topping:

    2 cups flour
    1 cup sugar
    1/2 cup butter, cut up

    Mix and reserve 1 cup.

    Add:

    1 tsp. cinnamon
    1/2 tsp. baking soda
    1/2 tsp. baking powder
    1/2 tsp. ginger
    1/4 tsp. salt
    1/4 tsp. mace
    1 egg
    1/2 cup buttermilk

    Mix all ingredients into the flour mixture. Put 1/2 cup of the reserved topping on bottom of a greased baking pan. Pour the batter on top. Sprinkle the other 1/2 cup topping over the top. Bake at 350 degrees for about 35 minutes or until a toothpick pushed in the center comes out clean.

    Tips:

    • Use leftover eggnog in place of milk when making vanilla pudding.
    • I often buy things for special holiday dinners that I don’t want my family to eat ahead of time. To prevent this, use stickers to put on the items to identify which things are off limits. Use stickers like turkeys or pilgrims for Thanksgiving, Christmas stickers for Christmas, or birthday stickers for a birthday party. This way, when your family sees the sticker, they will know not to touch.
    • It is nice to have extra casseroles in the freezer this time of year in case you need a quick meal. If you aren’t sure a casserole will freeze well, make only one to eat that night and then freeze just a few tablespoons of it to see how it does.     Quick Tips For Easier Meals:

    • To frost your cake quickly, sprinkle chocolate chips on top of it as soon as you bring it out of the oven. Once the chocolate chips melt, gently spread. Dusting with powdered sugar is another quick and less expensive topping for a cake.
    • It’s always hard to get to those little nooks and crannies on small kitchen appliances and dishes when you are cleaning. Here are 3 brushes I keep on hand to make these items easier to clean – a baby bottle brush, nipple brush or cake decorating tip brush and a toothbrush. You may not need all of these but pick a couple of the ones you think you will use the most.
    • There are days when I am brain dead while cooking and I can’t remember if I have salted something or not. It this happens to you a lot too, salt the item first and then immediately add the pepper. Then when you see the specks of pepper you know you have salted it.

    Ingredients

    6 medium apples, peeled and thinly sliced
    2 sweet potatoes, peeled and thinly sliced
    1 cup quick oats
    1/2 cup packed brown sugar
    1/4 tsp. cinnamon
    1/4 tsp. ginger
    1/4 tsp. nutmeg
    1/2 cup maple syrup
    2 Tbsp. butter or margarine, melted

    Instructions

    1. Preheat oven to 350°.
    2. Grease a shallow 2 1/2 qt. baking dish.
    3. Place the apples and potatoes in the baking dish.
    4. Combine the rest of the ingredients and sprinkle on top.
    5. Cover and bake for 40 minutes.
    6. Then uncover and bake about 15 minutes longer or until tender.

    Instructions

    1. Prepare the cake according to the package directions.
    2. Bake in a 9×13 pan. Cool.
    3. Mix the cream cheese, milk and pudding.
    4. Spread over the cake.
    5. Spread the pineapple over that.
    6. Top with whipped topping.
    7. Refrigerate until serving.

    Here’s a cake that you can use all year long for almost every holiday. You can make it into a cake or cupcakes.

    Holiday Cake Recipe

    1 pkg. white cake
    1 pkg. (3 oz) Jello*
    1 pkg. coconut

    Place coconut and 1 heaping tablespoon of Jello into a jar or container and shake. Set aside. Add rest of Jello to cake mix and then mix and bake according to the directions on the cake box. When done, frost with white frosting and sprinkle with coconut.

    *You can use different colored and flavored Jello for different seasons. Use orange for Halloween, red for Christmas, green for St. Patty’s Day, red for Valentine’s Day, etc.

    Homemade Mexican Chicken Chowder

    Menu:

    Mexican Chicken Chowder*
    Tortilla Chips and Salsa*
    Gingerbread Trifle*

     

    Recipes:

    Mexican Chicken Chowder Recipe

    1 lb. chicken, cooked and cubed
    1/2 cup onion
    1-2 cloves garlic, crushed
    2 Tbsp. margarine
    2 chicken bouillon cubes
    1 cup water
    1/2 tsp. ground cumin
    2 cups (8 oz.) Monterrey Jack or Mexican mix cheese, shredded
    1 can cream style corn
    1 can (4 oz.) green chilies, chopped, undrained
    Hot pepper sauce to taste, 1/2 to 1 tsp.
    1 tomato, chopped

    Sauté the chicken, onion and garlic in margarine. Add water and bouillon cubes and simmer 5 minutes. Make sure the bouillon cubes are dissolved. Then add everything else but the tomato and cook until the cheese is melted. Sprinkle with tomato and serve immediately. Serves 6-8.

    *Gingerbread Trifle

    6-8 cups of gingerbread, cubed
    1 (3 oz.) pkg. vanilla pudding, mixed according to directions
    3/4 cup English toffee bits (or crushed Heath candy bars)
    Whipped topping

    Using half of each ingredient, layer everything in a clear glass bowl, starting with the gingerbread. Layer it all again and top with whipped topping and a few toffee bits. You could place in individual serving dishes too, if you like.

    Recipes:

    Double Crunch Apple Salad Recipe

    1 large golden or green apple, cut into bite sized pieces
    1 large red apple, cut into bite sized pieces
    1 tsp. lemon juice
    1 can (20 oz.) pineapple chunks, drained
    1 cup miniature marshmallows
    2/3 cup flaked coconut
    1/2 cup nuts
    1 small container of cool whip

    Toss apples with lemon juice and add the rest of the ingredients. If you don’t have any cool whip or want a more savory salad, replace the cool whip with 1/4 cup mayo and 2 tablespoons each of celery and raisins.

    This recipe makes a great Christmas cake. You might also try it with other flavors of pie filling and gelatin. Peach, blueberry or lemon make great variations.

     

    Cherry Delight Cake

    1 pkg. white cake mix
    1 pkg. (3 oz.) cherry gelatin
    1 1/2 cups boiling water
    1 pkg. (8 oz.) cream cheese, softened
    2 cups whipped topping
    1 can cherry pie filling

    Bake cake in a 9×13 pan according to directions on box. Let cool. Dissolve gelatin in boiling water. Poke holes in cake with toothpick or fork and gently pour gelatin over it. Cool for 15 minutes. Cover and refrigerate for 30 minutes. In bowl, beat cream cheese and fold in whipped topping. Carefully spread on cake. Top with pie filling and chill for 2 hours.
