    1 (10 3/4 oz.) can condensed cream of mushroom soup
    1 cup sour cream
    1 pkg. egg noodles, cooked or 6 to 8 hamburger buns, toasted and buttered

    Instructions

    1. In a large skillet, brown the beef and bacon until the red color disappears. Drain.
    2. In a crockpot, mix together the drained beef, bacon, onion, flour, Worcestershire sauce and salt.
    3. Stir in undiluted soup.
    4. Cover crockpot and cook on low 4 to 5 hours.
    5. Stir in sour cream.
    6. Spoon mixture over noodles or toasted buns.

    1 (18.25 oz.) package white cake mix
    1 cup white sugar
    1 (8 oz.) container sour cream
    2 cups flaked coconut
    1 1/2 cups whipped topping

    Instructions

    1. Prepare the cake mix according to the package directions.
    2. Bake in two 9-inch round layers.
    3. When cool, split layers horizontally to make 4 layers.
    4. Blend together sugar, sour cream and coconut.
    5. Chill.
    6. Spread all but 1 cup of the coconut mixture between the layers.

    2. In a large bowl, stir together the cake mix and pumpkin puree until well combined.
    3. Drop spoonfuls of batter (about 2 tablespoons each) onto the prepared cookie sheet, leaving space between them.
    4. Bake for 10–15 minutes, or until cookies are set and a toothpick comes out clean.

    1 cake mix (any flavor works, but chocolate is our hands down favorite!)
    1 can pumpkin or 2 cups mashed cooked pumpkin
    1 cup mini chocolate chips (optional)

    Instructions

    1. Preheat oven to 350°.
    2. Beat the ingredients together with an electric mixer until smooth. (It will be really thick.)
    3. Add 1 cup mini chocolate chips and stir.
    4. Line muffin tins with paper muffin cups and spray with non-stick spray.
    5. Use an ice cream scoop to put the batter into the muffin cups. (I can get 24 from one box of mix.)
    6. Bake for 20 minutes, until a toothpick inserted in the center comes out clean.
    7. Cool and frost if desired.

    Notes

    • My family likes these muffins just as they are when they are hot from the oven.
    • Spice cake mix is great – add white chocolate chips, peanut butter chips or butterscotch chips.
    • I have made pumpkin muffins with white cake mix and yellow cake mix too. They have around 120 calories a piece with the mini chocolate chips and are virtually fat free. If you are on weight watchers they only count as 1 point.
    • This is a fabulous way to sneak some vitamin A rich veggies in on the kids. Just don’t let them see you put the pumpkin into the muffins and they will never know it is there. These are more moist than name brand very expensive double chocolate chip muffins.

    6. Spread the sauce inside of each boat.

    This easy devil’s food cake recipe is my Great Grandmother’s Great Depression recipe. It’s a super easy chocolate cake you’re sure to love. You can make this cake in thin layers and serve it plain as you would a light brownie, or you can frost it with your favorite frosting. I prefer chocolate (recipe below) or buttercream frosting with it, but you can frost it with any flavor you like.

    You can easily make this devil’s food cake recipe into a layer cake by placing one layer, frosting it and then placing another layer. I often make it as a 2 layer or 3 layer cake, including frosting between each of the layers and then frosting the top.

    If you want to make this Devil’s Food Cake recipe extra fancy, you can frost it with one color or flavor of frosting and then pipe a different color frosting on top in a pretty pattern. You can also add designs in the frosting or add sprinkles or candy on top if you like.

    1/3 cup cocoa, packed
    1/2 cup plus 2 Tbsp. shortening
    1 cup boiling water
    2 cups all-purpose flour
    2 cups sugar
    2 eggs, beaten
    1/2 cup sour milk or buttermilk
    1 1/2 tsp. baking soda
    1/2 tsp. salt

    Instructions

    1. Preheat oven to 350°.
    2. Dissolve cocoa and shortening in boiling water.
    3. Mix all remaining ingredients into the bowl with the cocoa and shortening.
    4. Beat for 2 minutes.
    5. Pour into a well-greased and floured 9×13 inch baking pan or two 9 inch pans.
    6. Bake for 30-35 minutes or until a toothpick inserted into the center comes clean.

    This tastes just like the package mix! Serves 9 or makes 20 cupcakes.

    • If you aren’t an artist but would like to decorate a theme cake, try using your cookie cutters as a pattern. Lightly press the cookie cutter onto the frosting of the cake. You can then pipe frosting around the outline or fill in your pattern.
    • Keep a couple of angel food cakes in your freezer for when you need a quick dessert. You can top them with any fresh fruit you have on hand. Add a dollop of whipped topping and you are good to go. In a pinch, you can even spread it with some fruit jam, and/or pudding and whipped cream.
    • If your honey becomes crystallized, don’t throw it away. Warm it in the microwave or a pan of boiling water. Stir it until it becomes clear.

    • When making a spice cake, add a mashed banana to it for an extra moist cake.
    • I once knew an elderly lady who made the most “absolutely to die for” dinner rolls I have ever tasted. When I asked about her secret, she said when she greased to bowl to let them rise in, she used bacon grease instead of shortening or margarine. I have used this for years. No one would ever guess and they all love my easy dinner rolls.
    • To keep your holiday salads crisper, turn a small sauce plate upside down in your salad bowl before you fill it. All the liquid and water will run down under the sauce plate and away from the salad.
    • Don’t throw out that pickle juice from the pickles you used on your relish dish. Use it to make French dressing next time instead of vinegar.
    • When you need a quick garnish or topping for something, place a bag of chocolate chips in a bowl of hot water. Smash it around every couple of minutes. Then, when the lumps are gone, cut a corner of the bag and drizzle on a cake, cookies, or dessert. When the bag is empty, cut it open and be sure to lick it clean. : )
    • For something different for an appetizer or finger food, make mini kabobs. Use a large toothpick or break a bamboo stick and place on it a cube of cooked chicken or ham along with a piece of dried fruit (apricot, pineapple, etc.). You could also add something like a maraschino cherry.
    • Try using brown sugar instead of white sugar for a different twist on cinnamon toast to go with your hot chocolate. Just butter a piece of bread, sprinkle it with brown sugar, cinnamon, and broil until golden brown.

    1 can pumpkin or 2 cups mashed cooked pumpkin
    1 cup mini chocolate chips (optional)

    Instructions

    1. Preheat oven to 350°.
    2. Beat the ingredients together with an electric mixer until smooth. (It will be really thick.)
    3. Add 1 cup mini chocolate chips and stir.
    4. Line muffin tins with paper muffin cups and spray with non-stick spray.
    5. Use an ice cream scoop to put the batter into the muffin cups. (I can get 24 from one box of mix.)
    6. Bake for 20 minutes, until a toothpick inserted in the center comes out clean.
    7. Cool and frost if desired.

    Notes

    • My family likes these muffins just as they are when they are hot from the oven.
    • Spice cake mix is great – add white chocolate chips, peanut butter chips or butterscotch chips.
    • I have made pumpkin muffins with white cake mix and yellow cake mix too. They have around 120 calories a piece with the mini chocolate chips and are virtually fat free. If you are on weight watchers they only count as 1 point.
    • This is a fabulous way to sneak some vitamin A rich veggies in on the kids. Just don’t let them see you put the pumpkin into the muffins and they will never know it is there. These are more moist than name brand very expensive double chocolate chip muffins.

     

    This is the best homemade pumpkin whoopie pies recipe! When my daighter and I were visiting Amish country, she fell in love with Amish whoopie pies, also called moon pies. This is an easy, moist and delicious treat for dessert or any time!

    Homemade Pumpkin Whoopie Pies Recipe

    1 cup brown sugar
    1 cup sugar
    1 cup vegetable oil
    1 – 15 oz. can of pumpkin
    2 large eggs
    1 tsp. vanilla
     3 cups flour
    1 Tbsp.cinnamon
    1 tsp. baking soda
    1 tsp. baking powder
    1 tsp, ground ginger
    ½ tsp. salt
    ½ tsp.ground nutmeg
    ¼ tsp. ground cloves
    Preheat oven to 350 degrees.
    Beat together sugars, oil and pumpkin. Add eggs and vanilla. In a separate bowl, shift together the dry ingredients. Add to wet ingredients.
    Using a pastry bag with a round tip, or a big zip top plastic bag with one corner snipped, squeeze out circles of batter, starting from the middle and working outward until the circles are about 2 inches in diameter. Bake for 11 minutes and cool on a rack.

    Cream Cheese Filling For Whoopie Pies

    1 – 8 oz. package of cream cheese, softened
    1 stick  butter, room temperature
    1 – 16 oz. package of powdered sugar
    1 tsp.vanilla
    a pinch of cinnamon (to taste)
    Beat together cream cheese and butter. Add powdered sugar, vanilla and cinnamon. Frost flat side of half the pies and top with another piece. Enjoy right away or chill overnight. Makes 12-14

    Ingredients for the GF Chocolate Cake

    Dairy-Free Butter. Yes! This gf chocolate cake is also dairy-free.

    Sugar. Granulated white sugar is what we use.

    Eggs. Large eggs will work perfectly for this recipe.

    Vanilla. Pure vanilla extract will work much better than imitation vanilla extract.

    Gluten-Free All Purpose Flour. Purchase the Great Value Gluten-Free All Purpose Flour from Wal-mart or make our gf all-purpose flour recipe.

    Xanthan Gum. Bob’s Red Mill makes one you can find in most grocery stores and you’ll need it for more than just this gluten-free chocolate cake recipe.

    Baking Powder. Always make sure your baking powder has not expired. If it is not fresh, the cake won’t rise properly and will be flat.

    Baking Soda. Have you ever noticed your baking soda has an odd smell? That’s because it absorbs odor. If you can smell it, throw it out and replace.

    Salt. For baking, use regular table salt.

    Cocoa Powder. Any powdered baker’s cocoa will do, but make sure you are using baking cocoa and NOT chocolate milk powder. They are not the same thing!

    Dairy-Free Milk. Rice or Soy Milk works best.

    Vinegar. You’ll just need a tablespoon to add to the milk. Adding vinegar makes the df milk a dairy-free buttermilk substitute.

    Boiling Water. Put the water on to boil when you begin mixing, and add more to the pan than you need. Measure the water when it is time to pour it over the cake batter mixture.

    How to Make Gluten-Free Chocolate Cake

    Eating gluten-free gets easier with time, but baked goods are the hardest temptation to resist. That’s why having an excellent gf chocolate cake recipe is essential. When you need chocolate, nothing fulfills that chocolate craving better than this cake. And it’s easy enough you can throw one together last minute if needed.

    Make sure to preheat your oven to 350º before you start mixing. This gives the oven time to fully reach the right temperature. For gluten-free recipes, I do recommend that you prepare the pan in two ways. 1) line the pan with parchment paper and 2) spray the pan with regular cooking spray. Do not use “baking” spray since it contains flour.

    My gluten-free dairy-free chocolate cake uses the creaming method to blend the df butter with the sugar first using a mixer. Next you will add the eggs and vanilla and mix again thoroughly. The dry ingredients can be added to this all at once and should be incorporated very well. To this mixture, you will add the boiling water and mix again. Then the gluten-free cake batter is divided evenly between the two pans and baked for 30-35 minutes. Don’t forget to let it cool down all the way before adding your frosting!

    The result is a moist gluten-free chocolate cake your family is going to ask for over and over again.

    Is Flourless Chocolate Cake Gluten-Free?

    Gluten is found in wheat and other glutenous grains like barley or rye. As long as your cake recipe doesn’t use any flour from these grains, your cake should be gluten free. However, wheat flour is used to make many different products you might not expect, so if you are eating a flourless cake someone else made, its best to find out the ingredients so that you don’t get sick. Our gluten-free dairy-free cake is definitely a flourless chocolate cake that is gluten free.

    So I guess the answer is — all gluten-free cakes are flourless, but not all flourless cakes are gluten-free necessarily.

    One time a restaurant answered “Well it says flourless, but we actually do put a little bit of flour in the cake for structure.” I think that approach is less frequent now as more and more people become educated about the gluten-free population, but its always better to ask and be safe!

    Or better yet, make your own easy gluten-free chocolate cake using our recipe! You can even take your own dessert with you when you go out to eat.

    • 1/2 cup + 1 Tbsp. butter-flavored shortening or dairy-free butter, softened
    • 2 cups sugar
    • 2 eggs, room temperature
    • 1 tsp. vanilla
    • 2 cups gluten-free all-purpose flour
    • 1 tsp. xanthan gum (if not in flour)
    • 1 tsp. baking soda
    • 1/2 tsp. baking powder
    • 1 tsp. salt
    •  3/4 cup cocoa powder
    • 1 cup dairy-free milk (rice or soy) with 1 Tbsp. vinegar added
    • 3/4 cup boiling water

    Instructions

    Preheat oven to 350°. Line two 8 inch baking pans with parchment paper and spray them with cooking spray. In a large bowl, cream butter and sugar with a mixer. Add eggs and vanilla to butter mixture and mix until fully combined.

    1. Add flour, xanthan gum (if using), baking soda, baking powder, salt, and cocoa powder.
    2. Mix until fully combined, scraping down sides as needed.
    3. Add the milk and mix until fully combined.
    4. Add the boiling water to the batter and mix until fully combined.
    5. Pour half of the batter into each pan.
    6. Bake on the middle rack for 30-35 minutes.
    7. Check the center of the cake by inserting a toothpick or knife to make sure it is done. You will also see the sides of the cake pulling away from the side of the pan.
    8. Allow the cakes to cool fully before frosting.

    Notes

    For the chocolate frosting: 

    • 1/4 cup dairy-free butter, melted. 
    • 1/4 tsp. salt
    • 1/2 cup cocoa

    I always have trouble writing Valentine’s Day menus because I never used them myself. I would serve my sweetie’s favorite foods but if you are stumped or if you want something different, here are some other ideas for you!

    Valentine’s Day Dinner For Two

    Tips:

    • Make it simple. The red velvet cake roll in today’s menu is fun to make for special occasions but if, for some reason, you run out of time and need something fast, bake the red velvet cake mix as directed and use the filling recipe to frost it.
    • Dip Twizzlers into melted white  chocolate for a treat instead of pretzels. Roll them in Valentine sprinkles for something extra special. You could also dip strawberry Twizzlers in melted milk chocolate.
    • For a very easy dessert, layer chunks of angel food cake, drizzle with chocolate sauce. Top with whipped cream and raspberries.

     

    Menu:

    Raspberry Chicken
    Rice
    Asparagus Wrapped with Bacon
    Sparkly Raspberry Drink
    Red Velvet Cake Roll

    Recipes:

    Raspberry Chicken

    2 tsp. canola oil
    4 boneless, skinless chicken breasts*
    Salt and pepper to taste
    3 Tbsp. orange juice
    1/4 cup raspberry jam

    Fry the chicken in oil (about 5-7 minutes on each side) until cooked but not tough. When it is almost done, add orange juice and jam to the pan, mixing and letting it boil to thicken. Take out the chicken and serve with the sauce.

    *You can use other less expensive pieces of chicken. If you do, you might need to adjust the cooking time and possibly drain off some of the drippings before adding the other ingredients.

     

    Asparagus Wrapped in Bacon

    Wrap each piece of asparagus with a slice of bacon. Broil or grill until bacon is crisp.

     

    Sparkling Raspberry Drink

    Chill ginger ale. Add 2 Tbsp. frozen white grape juice concentrate to each 12 oz. of ginger ale. Drop 2-3 raspberries in each glass.

     

    Red Velvet Cake Roll

    1 box red velvet cake mix (2 layer cake size)
    water, eggs and oil to add to cake mix (see adjustments below)

    Filling

    2 pkgs. (3 oz.) cream cheese, softened
    1/4 cup butter, softened
    1 cup powdered sugar
    1  tsp. vanilla

    Cut a piece of waxed paper to fit the bottom of a jelly roll pan and grease the pan. Mix cake mix according to the directions on box, except cut back slightly on the water and oil. (For example, if it calls for 1 cup of water, use 3/4 cup and if it calls for 1/3 cup oil, use 1/4 cup. You are just removing a few tablespoons.)

    Pour the mix into the jelly roll pan and bake at 350 degrees for 15-20 minutes. Check and if it is browning too quickly, turn it down a little.

    After the cake is baked, lay a cotton dish towel on a flat surface and sprinkle well with powdered sugar. Carefully and quickly flip the cake onto the towel. Peel away the waxed paper. Starting at the short end, roll up the cake, including the towel, and chill in the refrigerator for 1 hour.

    While the cake is chilling, beat the filling ingredients together. Gently unroll the cake and spread with the filling. Re-roll, leaving the towel behind. Place on a platter and chill a couple of hours until the filling is firm.

    Sometimes cake rolls will crack. Don’t panic. Cover it with chocolate frosting, lots of powdered sugar or serve it sliced with some whipped cream.

    Ingredients

    1 pkg. cake mix (any flavor)
    1/2 cup oil
    2 eggs, slightly beaten

    Instructions

    1. Preheat oven to 350°.
    2. In large bowl, combine all ingredients. Blend well.
    3. Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets.
    4. Bake 10-15 minutes or until set.
    5. Cool 1 minute. Remove from cookie sheets.

    Notes

    Note: Different cake mixes will act differently. Yellow cake mix spreads out more than the other mixes. See suggested variations below.

    High Altitude: Add 2 Tbsp. flour and bake as usual.

     

    Easy Cake Mix Cookies Recipe Variations!

    Fluffy, Chewy Cookies: Add ½ cup flour.

    Sugar Cookies: Yellow cake mix. Add 1 tsp vanilla.

    Chocolate Chip Cookies: Yellow cake mix. Add 1 cup chocolate chips.

    Double Chocolate Cookies: Devil’s food chocolate cake mix. Add 1 cup semi-sweet or dark chocolate chips.

    Oatmeal Chocolate Chip Cookies: Yellow or white cake mix. Add ½ cup quick cooking oatmeal and 1 cup chocolate chips.

    Oatmeal Raisin Cookies: Yellow cake mix. Add ½ cup rolled oats and ½ cup raisins.

    Chocolate Oatmeal Raisin Cookies: Devil’s food chocolate cake mix. Add 1 cup semi-sweet chocolate chips, ½ cup rolled oats and ½ cup raisins.

    German Chocolate Cookies: German chocolate cake mix. Add 1 cup caramel bits, ½ cup pecans and ½ cup coconut.

    Chocolate Caramel Cookies: German chocolate cake mix. Add 1 cup caramel bits.

    Black and White Cookies: Devil’s food chocolate cake mix. Add 1 cup white chocolate chips.

    Birthday Cake Cookies: White cake mix. Add ½ cup sprinkles.

    Rocky Road Cookies: Devil’s food chocolate cake mix. Add ½ cup marshmallows and 1 cup chopped almonds.

    Chocolate Peanut Butter Cookies: Devil’s food chocolate cake mix. Add 1 cup peanut butter chips.

    Chocolate Strawberry Cookies: Strawberry cake mix. Add ½ cup chocolate chips

    Red Velvet Cookies: Red velvet cake. Add 1 cup white chocolate chips.

    Cinnamon Spice Cookies: Spice Cake. Add 1 cup cinnamon chips.

    Carrot Cake Cookies: Carrot cake. Add 1 cup white chocolate chips.

    White Chocolate Macadamia: Chocolate or White Cake Mix -1/2-3/4 cup macadamia nuts and 1/2 cup white chocolate chips

    Dreamsicle Cookies: Orange cake mix. Add 1 cup white chocolate chips.

    Cherry Chip Cookies: Cherry Chip Cake Mix. Add 1 cup chocolate chips.

    Tutti Frutti: Yellow Cake Mix. Add 1 cup Fruity Pebbles.

    Double Cookie Cookies: Devil’s food chocolate cake mix. Add ½ cup Oreos, crushed and ½ cup chocolate chips.

    Cherry Delight: White cake mix. Add ½ cup dried cherries, ½ cup pecans, 1 Tbsp. fresh orange zest and ½ tsp. vanilla.

    Raisin Spice Cookies: Spice Cake. Add 1 cup raisins.

    Pumpkin Spice Cookies: Pumpkin cake mix. Add 1 cup pecans.
