Homemade Fruit Roll-Ups Recipe

This homemade strawberry fruit roll-ups recipe is an easy to make alternative to store bought fruit roll-ups. Great for school lunches, picnics, road trips and more!

Homemade Fruit Roll-Ups Recipe

Homemade Strawberry Fruit Roll-Ups Recipe

3 cups fresh or frozen strawberries*
1 Tbsp. lemon juice
1 Tbsp. light corn syrup

Place strawberries in a blender and process until smooth. Measure 2 cups of strawberry puree. Stir in lemon juice and corn syrup. Line a 15×10 inch jellyroll pan with parchment paper. Pour strawberry mixture in prepared pan and spread thin, leaving 1 inch on all sides. You can adjust this to fit your dehydrator or another pan; be sure it is spread thin on the pan. Dry in an oven at 150° or a dehydrator for 7-8 hours or until surface is no longer sticky. Remove leather from pan while still warm and roll up jellyroll fashion. Cut into logs and wrap in plastic wrap. Make five 2 inch logs.

*Any other fruit may be used in place of the strawberries.

    Is there any substitute for corn syrup that you would suggest?

      I have seen recipes that use honey but I used maple syrup and it’s great.

        I used maple syrup and just put them in the oven. Since I am using a convection oven as opposed to a hydrator, I’m not sure how long to leave the pan in…we shall see :-)

      2-4 weeks in a dark cool place and if wrapped well, in an air tight container for up to a year in the freezer.

    I was digging in my freezer and found a bag of blackberries that I put up last summer and made fruit leather with them. I did strain the seeds out. This turned out great! Thanks so much for sharing!

    Wouldn’t the plastic wrap melt in the oven? Would foil work as well? Thanks

      150 is not hot enough to do much it just makes the air a little warmer to help dry it out. Use a heavy duty plastic wrap though and not a cheaper kind. I have not tried it but because this will be very sticky I think the foil might stick real bad to it unless you use that new no stick foil they have out.

    I was wondering if this could be used for other fruit like watermelon and others? Thank you

      You can use other fruits but I am not sure about watermelon. The less liquid in the fruit the better it drys so watermelon might be a hard one but you can use almost any berries. Things like apples, peaches, pears, nectarines can be used but you do need to dip them in something like lemon juice to keep them from discoloring. If you want a short cut for apple fruit roll ups then use apple sauce. Bananas don’t work quite as well and cranberries work but do better if you freeze them first. You can use frozen fruit.

      No matter what you use be sure to drain as much extra liquid off of them before you start. Also you can mix plain yoghurt with any of the fruits and dry it this way too.

    These look great. In your photo it looks like you’re using parchment paper instead of plastic wrap. Is that the case? If not, do you think parchment paper would work?

    As for making leather with watermelon. . .I do this every summer. It’s quite simple actually. Slice melon into 3/4-inch thick pieces. Cut melon from the rind. Place closely on food dehydrator rack (they shrink a lot). Run dehydrator on fruit/veg setting until leathery (about 6-8 hours). Or if in the oven, on silpat or parchment lined baking sheet, 150 degrees, 5-6 hours. This makes watermelon leather pieces. If you want the fruit roll version, slice and remove rind from melon. Pick out the seeds, puree in food processor. You don’t need to add anything else. Pour onto lined baking sheets or lined dehydrator racks. If in oven, “bake” at 150 degrees, for about 6-7 hours, until leathery. If dehydrator, on fruit setting, several hours to overnight. It’s so sweet, our family thinks of it as candy.

    I forgot to add, if your oven does not go down to 150 degrees (my last one only went down to 185 degrees F), you can still do the leather. Make it on parchment, at the lowest temp for your oven, just shorten the “drying” time, by about 1-2 hours.
