This easy gluten free brownies recipe makes delicious gluten free brownies that taste even better than your favorite regular fudge brownies! Now you can enjoy the delicious brownies you have been missing, even when you have to eat dairy free and gluten free! Unlike other gluten free brownies recipes, these brownies actually taste great! They are simply to die for!!

Ingredients

3/4 cup + 2 Tbsp. shortening
1 1/2 cups granulated sugar
1 Tbsp. vanilla
3 eggs, room temperature
1 cup gluten free all purpose flour
1/2 tsp. xanthan gum (if not in flour)
3/4 cup baking cocoa powder, (break lumps with fork)
1/4 tsp. salt
3/4 cup dairy free semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°.
  2. Grease an 8×8 inch baking pan.
  3. In a mixing bowl, stir together shortening, sugar and vanilla.
  4. Add eggs one at a time and stir until combined.
  5. Add flour, xanthan gum (if using), cocoa powder and salt.
  6. Stir just until almost no streaks of flour remain. Do not overmix!
  7. Fold in chocolate chips.
  8. Pour the batter into the prepared pan.
  9. Bake 20-22 minutes or until the brownies have formed a thin crust and appear set in the middle. A toothpick inserted into the center will come out wet. A toothpick inserted into the sides will come out with some moist crumbs on it, but not totally raw batter.
  10. The brownies will continue to bake as they sit in the pan and will firm up as they cool. Let cool completely.
  11. Then cover and store at room temperature for up to 4 days. You can also refrigerate them to give them a fudgier texture.

If you LOVE super fudgy brownies, this is the recipe for you. This recipe calls for you to remove them 5-10 minutes before they are completely done. This gives the brownies an ooey gooey chocolate brownie amazingness that is definitely worth trying!! If you like your brownies more done, just leave them in the oven 5-10 minutes longer.
