Cheeseburger Soup Recipe

This cheeseburger soup recipe is a hearty soup and a classic American favorite that your family is sure to love! Perfect for families with picky eaters and hearty appetites, your family will not go away hungry!

You’ll also find an alternative easy cheeseburger soup recipe along with a tasty spice cake for and caramel frosting for dessert!

This easy cheeseburger soup recipe is a hearty soup and a classic American favorite that your family is sure to love! Perfect for families with picky eaters and hearty appetites, your family will not go away hungry!

Cheeseburger Soup Recipe

¼ cup butter, divided
½ lb. ground beef
¾ cup onion, chopped
¾ cup carrots, shredded
¾ cup celery, diced
1 tsp. basil
1 tsp. dried parsley
1¾ lbs. (about 4 cups) potatoes, peeled and cubed*
3 cups chicken broth
¼ cup all purpose flour
2-3 cups Velveeta processed cheese, cubed or 2-3 cups American Cheese slices, cut into pieces
1½ cups milk
¾ tsp. salt
¼-½ tsp. pepper
¼ cup sour cream

In a saucepan, melt 1 tablespoon butter and cook ground beef, onion, carrots, celery, basil and parsley until cooked through, about 10 minutes. Add potatoes and broth. Bring to a boil.

Reduce heat and simmer, covered, until potatoes are tender, about 10-12 minutes.

In a small pan, melt the remaining butter. Add flour. Cook and stir until bubbly, 3-5 minutes. Add to soup. Bring to a boil. Cook and stir 2 minutes.

Reduce heat to low. Stir in cheese, milk, salt and pepper. Cook until cheese melts. Remove from heat**. Blend in sour cream.

*You can use frozen cubed potatoes in place of fresh.

**To prevent soup from curdling, remove from the heat before adding sour cream.

Here is a tasty meal plan to go with this easy cheeseburger soup recipe, along with another recipe that is a little easier than the one above.

 

Menu Idea:

Cheeseburger Soup
Assorted crackers
Relish dip
Glorified Spice Cake

 

Easy Cheeseburger Soup Recipe

6 medium potatoes, peeled, cubed and cooked
½ lb. ground beef, cooked
2 chicken bouillon cubes
2 slices of bacon, fried and crumbled*
Salt and pepper to taste
1 tsp. onion powder or to taste
4 cups of milk
8 oz. American cheese (don’t grate, slices melt quickly)
¼ cup sour cream

Cook your potatoes in Dutch oven and drain. Add the rest of the ingredients, except the sour cream, and cook just until heated through. Make sure bouillon cubes are dissolved and cheese is melted. Do Not boil. Remove from heat and add sour cream.

*I always fry an extra piece or two of bacon when I cook it to keep in the freezer to use in recipes like this one.

 

Glorified Spice Cake Recipe

1 pkg. (18 ¼ oz.) spice cake mix
1 can (21 oz.) apple pie filling
2 eggs
2 Tbsp. vegetable oil
Nuts

Mix everything at medium speed for 2 minutes. Pour into well greased 9×13 pan and bake at 350° for 30-35 minutes or until toothpick comes out clean when inserted into it. Frost with caramel frosting* or top with caramel ice cream topping.

 

Caramel Frosting

½ cup margarine or butter
1 cup brown sugar, packed
¼ cup milk
2 cups powdered sugar

Heat margarine over medium heat in a 2-quart saucepan. When margarine is melted, stir in brown sugar. Heat to boiling, stirring constantly. Reduce heat to low and boil 2 minutes longer, still stirring. Stir in milk and heat to boiling. Remove from heat and cool. Slowly stir in powdered sugar. Place saucepan of frosting in bowl of very cold water and beat frosting until smooth.

If frosting is too stiff, add an additional 1 teaspoon of milk at a time until frosting is smooth. Frosts one 9×13 inch cake.

    Question.
    is American cheese just cheddar. Like we call it Canadian Cheddar.
    thought it was cheese slices for sandwiches until you wrote don’t grate it.
    so many different names for basically the same thing gets confusing.
    marble is cheddar orange and white.
    farmers is white mild cheddar.
    then we have mild med. old cheddar.
    maybe it was easier when the world was smaller.

      American cheese is not cheddar. It’s slices for sandwiches. It’s much softer.

      American cheese is slightly softer too. You don’t normal grate it but I love to grate with bologna with mayo for sandwiches.

    Thanks tawra. those are just called cheese slices here. I use cheez whiz in the jar as it is quicker and easier and does not have citric acid in it.
    things you learn even in recipes about popular foods in other countries even the one next door.

    Jill don’s favourite sandwich is balogna grated with sweet mixed pickles then mix in mayo and put on the sandwich.
    I must love him because I make it for him and I find it gross looking.
    my mother made it sometimes and we called it dog food. my MIL called it pickle and balogna and when she served me one I said “oh Dog Food.”
    did not go over well.
    I can’t eat cheese slices due to the citric acid so I just slice cheddar and other types for sandwiches and grate it for soups and things.

    This soup sounds like a good dinner plan for tonight. I actually have everything it calls for. Today is hubby’s 50th birthday. Made his favorite cake this morning. A lemon cake with lemon icing. Way too much lemon for me, but he loves it. Winn-dixie had Blue Bell ice cream for $3.99 a half gallon, so I bought some vanilla. We plan to take him out for a nice dinner one night, but he has a cold and not up to going tonight. I am wanting to try new things, but hubby is picky. I think this soup he will like.

    This soup sounds great! When I make soup with ground beef, I like to add salsa and also dried vegetable flakes. They both add a lot of flavor if you don’t have time to let the soup simmer very long.
