This easy green chile recipe makes a light tasty meal when eaten with tortillas, but can also be used to top a lot of different Mexican themed dishes! It's super delicious!

I absolutely love green chile! Being from Colorado, it’s pretty common to find green chile at Mexican restaurants. It can be eaten as a soup or it can be used to pour over the top of smothered burritos, enchiladas and more.

I like to serve my green chile wrapped in tortillas. Then I smother the tortillas with more green chile and then top with cheese, lettuce, tomatoes and sour cream.

If you like, you can make up the green chile and pour it over your favorite Mexican dishes like burritos or enchiladas. You can also pour it over chicken or pork chops.

    • This recipe is a great way to use leftover pork or chicken.
    • If you like, you can make the green chile and instead of serving wrapped in a tortilla, you can use to pour over your favorite Mexican dishes like burritos or enchiladas.
    • This green chile recipe is also good served over rice and garnished with the cheese, lettuce and other toppings.

  • Slow Cooker Pot Roast Recipe – Quick, Easy And Delicious!

Slow Cooker Pot Roast Recipe – Quick, Easy And Delicious!

This slow cooker pot roast recipe is quick and easy to make and will satisfy everyone in your family! It’s also easy to use the leftovers for other quick meals!

This slow cooker pot roast recipe is one of our favorite easy dinner recipes for family meals because it is super easy to make and oh, so delicious! You will be amazed at how delicious it is with very little work!

This slow cooker pot roast recipe is so delicious and easy that it is one of the most popular recipes in volume 1 of our Dining On A Dime Cookbook! It is versatile and one slow cooked roast can be used to make several different meals to keep pleasing your family day after day!

This slow cooked pot roast is so delicious that everyone always raves about it! I cook it for my family any time I can get a good price on beef roast, but it’s also a great recipe to make when you want to impress guests! We have also made this slow cooked roast for holidays and special occasions.

This slow cooked roast recipe can be cooked in the oven or in a slow cooker. The secret to fall off the bone tender roast is in the slow cooking. I prefer to cook pot roast in the oven because I think it gives the roast a little bit better taste than the crockpot, but if you prefer a slow cooker, you will still end up with a tender and tasty roast.

I usually take a few minutes to prepare the beef roast the night before and let it cook slowly all night in the oven. By the next day, it is already starting to smell delicious, but I keep letting it slow cook until it’s time to serve for dinner.

Some people worry about leaving the oven on all night, but as long as there is nothing wrong with your oven, it should be fine, especially if it is an electric oven. I have cooked this slow cooker pot roast recipe in the oven for more than 25 years and have never had a problem.

    Easy Serving Ideas

For an easy one pan meal, I sometimes add some potatoes, carrots and onions about 2 hours before the roast is finished and let them all cook together with the roast. This makes a great meal by itself, but if you want, you can also serve with a salad, fruit salad or fruit or veggies.

If I don’t have carrots and potatoes on hand, I will make some rice and serve the roast with rice and an easy vegetable. My family likes the fresh frozen broccoli or mixed vegetables so if I’m looking for an easy veggie, I will often microwave one of these just before serving.

We dump the rice ingredients in our rice cooker so it’s ready when the other food is done, but if you don’t have a rice cooker, you can easily make rice in a pan on the stovetop.

In the fall when I have lots of zucchini and other squash, I will also occasionally fry some squash and onions in a frying pan with margarine or oil and serve with the slow cooker pot roast. You can fry the squash in butter, but you have to watch it carefully because butter burns easily.

This slow cooker pot roast is super versatile. You can plan to make this pot roast and reserve the excess to make up to 4 dinners with 1 roast.

There are many delicious ways to use leftover roast! The pot roast leftovers are perfect for sandwiches and wraps. You can make delicious Mexican-style wraps by placing some roast on a flour tortilla with cheese, onions, lettuce and salsa.

For lots of great leftover pot roast recipes, be sure to check out the links to the other posts at the bottom of this post!

This delicious slow cooker pot roast recipe is easy to make with 5 minutes preparation time in an oven or a crockpot. I include the oven instructions first because I prefer to make it in the oven and crockpot instructions below!

    • Author: Tawra Kellam

    Ingredients

    1 beef roast, 3-5 lbs.
    1 onion, sliced
1 can cream of mushroom soup (omit for GF and sprinkle with seasoned salt)

    Instructions

    1. Preheat oven to 250°.
    2. Place roast in pan.
    3. Pour cream of mushroom soup and onion on top.
    4. Cover tightly. Bake at 250° for 1 hour.
    5. Then turn it down to 225° and cook for 6-8 hours (about 6 hours for a smaller roast and 8 hours for a larger roast). When done, it should be so tender that the meat easily pulls off the roast with a fork. Serves 4 when you use a 3-5 lb. roast.

    Slow Cooker Instructions:

If you prefer to cook this slow cooked roast in a crockpot or slow cooker, place the ingredients in the crockpot and cook on low for 8-10 hours or high for 5-6 hours. For the most tender roast, it is best to cook longer on a lower temperature.

Use a meat thermometer to make sure the internal temperature reaches 145°.

    Notes

    • This slow cooked roast recipe can be cooked in the oven or a slow cooker. The secret is in the slow cooking. I prefer to cook it in the oven because I think it gives the roast a little bit better taste than the crockpot, but if you prefer a slow cooker, you will still end up with a tender and tasty roast.
    • This slow cooker pot roast recipe is an excellent way to prepare inexpensive roasts. This slow cooked roast recipe makes them so tender they fall off the bone and are almost impossible to lift out of the pan.
    • This recipe is an excellent way to make a delicious meal for Sunday after church or for guests, because it can cook for 2 or 3 hours longer than required without overcooking.
    • Since it is so tender that no meat is left on the bone, you get more pot roast for your money.

    From Tawra’s Inbox:

    Hello ladies,

I just want to say a BIG THANK YOU for your slow cooked pot roast recipe! It has been a joke in my family how truly BAD my roasts taste. My loved ones dutifully eat it because they see how hard I’ve worked on dinner ( plus they are nearly starved to death by the time dinner is served ) and they see the strained smile on my face as I bring their plates to the table. But even I can barely swallow the roast.

I always followed my “Better Homes and Gardens” cookbook faithfully and would try different cuts of meat, all to no avail; it still turned out so dry and tough.

Enter your help. I have been enjoying flitting about your website and finding all sorts of nuggets of advice. Then I found your slow cooker pot roast recipe! This was the answer I’ve been searching for, lo these many years! I had been cooking it all wrong. I thought I was doomed to buying the pre-cooked roasts-in-a-bag at my local grocery store.

Now my family smiles when they smell the slow cooked roast cooking as they come home from school. And I feel great knowing I have mastered one of the basic requirements of motherhood… cooking the perfect roast.

Thank you for all your great tips!

    Sincerely, Becky H.

“Your slow cooker pot roast recipe calls for pouring soup and onion over roast and to cover tightly. What do you mean by cover tightly? Wrap it in tin foil?”

    Thanks, Dennis

Yes, wrap in foil. I just put one or two pieces on the top of the pan and then “seal” the edges with my fingers.

Easy Stacked Enchiladas Recipe – The Easiest Way to Enjoy Enchiladas!

We absolutely love this easy stacked enchiladas recipe! It makes a quick and easy meal that’s great for families! Our entire family loves it, including the kids and I have often served it when I don’t feel like spending a lot of time in the kitchen!

If you love enchiladas but hate the hassle of rolling them, this Easy Stacked Enchiladas Recipe is for you! Perfect for busy weeknights or when you need a crowd-pleasing dish, these stacked enchiladas come together in no time.

    Easy Enchiladas Recipe!

This stacked enchiladas recipe is different from a traditional enchilada recipe in that you don’t roll the enchiladas. Instead, you layer the toppings between 2 or more layers of filling and then add cheese and salad toppings on the top.

As written, the recipe serves 4, and includes 2 tortillas per stacked enchilada, but I often included an extra layer in the middle for my husband. My husband and the kids absolutely love this recipe. The kids love it with homemade tortilla chips and sopapillas!

I often cut tortillas into quarters and fry them in oil to make tortilla chips, especially when I have a pack of corn tortillas that is not quite as fresh and the tortillas are more brittle than flexible. These make great chips and give life to tortillas you might otherwise throw away.

This easy enchilada recipe is very flexible. I make it with these ingredients because everybody likes them, the recipe doesn’t cost a lot to make and it’s super easy. If you wanted to make it fancier, you could add a can of black beans or pinto beans to the mixture. If you prefer, you could leave out the beef.

You could also add black olives or chopped green onions to the top for a different kind of garnish. Or smother it in green chile if you prefer! Oh YUM! Really, any kind of Mexican food type modifications would probably be wonderful! If you make any modifications, tell us about them in the comments and how they turned out!

    • Author: Tawra Kellam
    • Yield: Serves 4.

    Ingredients

    1/2 lb. ground beef
1 onion, chopped, or 1 tsp. onion powder
    2 1/2 cups enchilada sauce
    vegetable oil for frying*
    1 cup Cheddar cheese, grated
1 onion, chopped, or 1 tsp. onion powder
    1 tomato, chopped
    2 cups lettuce, chopped

    Instructions

    1. In a saucepan, brown ground beef and onions.
    2. Drain.
    3. Add enchilada sauce and simmer for 10 minutes.
    4. Heat 1/2 inch of oil in a frying pan.
    5. While you are waiting for the oil to heat, prepare bowls of tomatoes, lettuce and cheese.
    6. The oil is hot enough when you place a tortilla in it and it sizzles. Have your plate ready in one hand and dip the tortilla in oil for 5 seconds.
    7. Using kitchen tongs, turn over the tortilla and cook 5 more seconds.
    8. Lift the tortilla out of pan, hold over the oil and drain slightly.
    9. Place the tortilla on the plate and put 1/4 cup beef mixture on top.
    10. Dip another tortilla in the oil and fry the same as above. Place on top of beef mixture.
    11. Top with more beef mixture, tomatoes and lettuce.
    12. Finish with a little cheese, sour cream and olives if desired. Serve warm. Serves 4.

    Notes

For more hearty stacked enchiladas, you can stack additional layers of tortilla and then beef mixture before topping off with lettuce and tomatoes. If you do, you will want to adjust the recipe to make sure it serves the number of people you are feeding.

*For lower fat enchiladas, dip in warmed enchilada sauce or just warm the tortilla in the microwave for 8 seconds; then add meat and toppings.

    1/2 tsp vanilla

    Instructions

    1. In a large pot, melt the butter over medium-low heat. (If making the caramel-style version, add the brown sugar now and stir until dissolved.)
    2. Add the marshmallows and stir constantly until completely melted and smooth.
    3. Remove from heat and stir in the vanilla, if using.
    4. Add the popped popcorn (and any optional candies or nuts). Gently stir until everything is evenly coated.
    5. Butter your hands well. Scoop and shape the mixture into balls, or press it into a well-buttered 9×13-inch pan.
    6. Place popcorn balls on wax or parchment paper and let cool until set.
    7. Store in an airtight container or wrap individually in plastic wrap.

    Notes

    • For a caramel-corn flavor, add ½ cup brown sugar + ½ tsp vanilla when melting the butter.
    • To remove unpopped kernels, dump the popcorn onto a clean surface first. Scoop it back into the bowl by handfuls, leaving the unpopped “old maids” behind.
    • These popcorn balls are great for parties, lunchbox treats, or holiday gifting.

    * Popcorn guide:
¼ cup unpopped kernels = about 2 quarts popped popcorn.

    • Author: Tawra Kellam

    Ingredients

1 (8 oz.) package cream cheese softened
    2 Tbsp. butter
2 1/2 cups powdered sugar free sweetener
    1 tsp. peppermint extract
    Food coloring, optional

    Instructions

    1. Mix the first 4 ingredients.
    2. Beat ingredients together with a mixer. It should be a thick, but moldable dough consistency. If it is too dry, you can add a tablespoon of milk.
    3. If desired, add food coloring. For more than one color, divide the dough into equal parts in separate bowls.
    4. Mix the food color into the dough with a mixer. If using multiple colors, rinse the beaters between colors.
    5. When mixed, roll into small balls. If the dough is too soft to roll, refrigerate for a few minutes before rolling to harden slightly.
    6. Lay each ball on a baking sheet and press with a fork to decorate, OR pipe into peppermint drops.
    7. Store in an airtight container.

These mints can be frozen or refrigerated.

    From A Reader:

Kristina Writes: I wanted to add a tip to your cream cheese mints recipe. If you don’t have candy molds for your mints, you can roll them into balls and use an initial imprint stamp with the first initial of the bride and groom’s last name. Just push the stamp down in the center of the mint and use even pressure. They look like designer mints. If you powder the mints with more sugar, do so before you stamp the mint. Thanks for letting me put in my two cents!

This maple glazed chicken recipe makes a very tasty chicken dinner. It’s quick and easy and certain to please your family and friends!

This maple glazed chicken recipe is one of our readers' favorite recipes, and for good reason! It is DELICIOUS!! It is quick and super easy to make with just 5 ingredients. I have made this chicken recipe for our family for years and my husband and the kids have always gobbled it up! I usually make some rice and a vegetable like broccoli to go with it, but you can serve it with any easy side and vegetable.

This maple glazed chicken recipe is one of our readers’ favorite recipes, and for good reason! It is DELICIOUS!!

Not only that, it is super easy to make with just 5 ingredients. I have made this chicken recipe for our family for years and my husband and the kids have always gobbled it up! I usually make some rice and a vegetable like broccoli to go with it, but you can serve it with any easy side and vegetable.

Here are some good side options for the maple glazed chicken:

Rice – This is my favorite because it’s easy to just throw some rice on and it will be done in 15 minutes. My husband likes using a rice cooker so we just toss the rice in there and it cooks itself. He also uses rice for other lunches so he often makes a big batch and then we can just warm up some of it to go with whatever dinner I’m serving.

Potatoes – Potatoes are also a good option – I usually cube them and boil until tender, but you could also make mashed potatoes or baked potatoes if you prefer.

Dinner rolls or bread – Don’t be afraid to just serve with sliced bread or store bought dinner rolls. If you’re short on time, it is OK to take shortcuts to make dinner easier. It is much easier and cheaper than eating out and most kids appreciate simple meals.

A vegetable – I usually serve it with broccoli because my family always eats it, but you can serve with mixed vegetables, squash, a California blend if you want it to look fancy or even stir fry vegetables. We mostly use the frozen vegetables and just microwave them shortly before the chicken is ready.

A salad – This could be a dinner salad with your favorite lettuce as simple or as complicated as you like. For an easy salad, I often slice cucumbers and onions and add a viniagrette salad dressing. This would be really good with black olives, too.

A sliced veggie tray – I like to make a combination of cucumbers, baby carrots, sliced bell peppers.

    zucchini

    Topping Ingredients:

You can use any kind of toppings you like, depending on what kind of zucchini boats you are making and then top with some kind of cheese to make it bake together. Generally, any kind of pizza or taco toppings will work great. Here are some variations. Mix and match the ingredients you like:

    For Zucchini Pizza Boats:

    spaghetti sauce
    seasoned salt
    pepperoni
    Italian sausage
    onions
    bell peppers
    black olives
    shredded mozzarella cheese
goat cheese (good if you’re dairy free)

    For Zucchini Taco Boats:

    taco sauce or enchilada sauce
    seasoned salt
ground beef, shredded chicken or shredded pork
    onions
    bell peppers
    black olives
shredded mexican blend, cheddar or similar cheese
goat cheese (good if you’re dairy free)

    For Artichoke Chicken Zucchini Boats:

Alfredo sauce or other white Italian sauce
    seasoned salt
    chicken, shredded or pieces.
    artichoke pieces
    butter
    onions
    bell peppers
    black olives
    shredded mozzarella cheese
goat cheese (good if you’re dairy free)

    Instructions

    1. Preheat oven to 350°.
    2. Spray a baking pan with oil. Choose a baking pan that will accommodate the amount of zucchini you want to cook.
    3. Slice the ends off of the zucchini.
    4. Cut each zucchini in half lengthwise.
    5. Scoop the center with the seeds out of each half to make boat shapes (like canoes), creating a channel for the stuffing ingredients.
    6. Spread the sauce inside of each boat.
    7. Sprinkle with seasoned salt.
    8. Add your desired toppings.
    9. Bake in the oven for about 30 minutes, until the cheese is melted and everything is cooked through.

    Notes

    • Save the zucchini you scraped out of the center of the zucchini boats. You can freeze it and eat it later as-is, add it to any vegetable soup, or make another zucchini recipe like zucchini bread or zucchini cake.
    • If you would like to make stuffed zucchini boats in an air fryer, air fry at 350° for 8-10 minutes, until the cheese is melted and everything is cooked through.

This is simply The Best Homemade Potato Salad Recipe EVER!! No really… it is. I have people begging for this potato salad! It’s quick and easy to make and makes a nice addition to picnics, potlucks and family get together!

The basic recipe is in volume 1 of our Dining On A Dime Cookbook but I normally add an additional tablespoon or two of bacon grease along with the bacon and people beg me to make more and more of it!

This is the best homemade potato salad recipe EVER!! People beg me for this at potlucks and barbecues because of my secret ingredient! It's quick and easy to make and makes a nice addition to picnics, potlucks and family get togethers!

This is the very best homemade potato salad recipe! It is my all-time favorite! I have people begging for this potato salad, so you definitely need to try it! I almost always have all of the ingredients on hand, so it’s easy to make any time.

When I need to take a potato salad to a potluck or get together, this is the potato salad I take. It’s also great for Memorial day, picnics at the lake or barbecues with hamburgers, hot dogs and chicken. It is super popular with everyone who eats it because it is so delicious and there are never any leftovers to take home!

For my secret ingredient, I normally add an additional tablespoon or two of bacon grease along with the bacon and people beg me to make more and more of it! The bacon grease gives it a richer flavor you have to try to believe!

You don’t have to use the bacon… If you don’t have the bacon, or if you don’t eat bacon, this potato salad still tastes great without it (just not as “over the top” great as with the bacon ;-).

If I have baked potatoes or if I’m making mashed potatoes the night before, I cook extra and pull out a few of the potatoes before I mash them. This way I can use the extra potatoes for the potato salad that I know I will be making the next day.

    How To Use Strawberries

Ah June! –In the spring we think of a mouth-watering strawberry patch. Now it has turned into a forest with enough strawberries to feed most of the U.S. Undaunted by the mounds of berries in our kitchen, we have visions of row after row of beautiful jars of strawberry jam on our shelves.

Then it happens! The first pot boils over leaving a red mess all over the stove, up on the walls and on the counters and floor. Hours later after the kitchen looks like World War III was fought in it we stand in our kitchen and proudly display our 2 pints of strawberry jam.

Don’t despair. Canning isn’t the only way to use excess strawberries. In addition to the strawberry recipes below, here are some other suggestions to help you use strawberries:

    Yummy strawberry shake recipe!
    • Think small. Don’t plant too many plants in your garden. Plant just enough for what you need.
    • File all your recipes for fruits and veggies in order by the name of the fruit. Then when you need to find recipes for all the extra produce you can easily find several recipes.
    • To freeze berries: Throw extras into a bag and freeze. Don’t waste time freezing them on a tray, they do just as well thrown in a bag. These are great to use later for virtually any strawberry recipes!
    • Use extra strawberries in milkshakes, homemade smoothies, homemade popsicles, and fruit gelatin.
    • Use strawberries to top cereal or oatmeal; add milk for a strawberries and cream flavor.

    4. Microwave on high, uncovered, for 5 minutes.

    6. Check to see if it is done by putting a little on a spoon. Place it in the freezer for 5 minutes uncovered.

This strawberry dessert recipe is probably one of my favorite desserts, partly because it is not too rich. It is a very light dessert. It is an especially good one to keep made up in the freezer for when unexpected company comes by.

I like to use it not only for graduation parties, but also for baby showers or any other get-together because I can make it a week ahead of time and that means one less thing to have to deal with the day of the special event!
