This lemon cream cheese bars recipe is a super easy twist on a regular lemon bars recipe that uses a lemon cake mix. These lemon cream cheese bars are cool and delicious. With a slightly crunchy bottom crust layer and a sweet and creamy lemon layer, they are virtually irresistible wherever you serve them!

This easy lemon cream cheese bars recipe makes a cool and delicious dessert, with a crunchy crust on the bottom and a delightful lemony center, it is sure to please your family and friends!

Ingredients

Units

1 box lemon cake mix
1/3 cup butter or margarine, softened
1 egg
8 oz. cream cheese, softened
1 cup powdered sugar
1/2 lemon, grated
2 Tbsp. lemon juice
2 eggs
1 tsp. vanilla

Instructions

  1. Preheat oven to 350°.
  2. Mix cake mix, butter and 1 egg.
  3. Press into a 9×13 inch ungreased pan.
  4. Beat cream cheese and sugar together in a bowl.
  5. Stir in lemon peel and juice.
  6. Reserve 1/2 cup of this mixture and chill for later use.
  7. Beat the remaining 2 eggs and vanilla into the cream cheese mix.
  8. Spread over the cake mixture.
  9. Bake for 25-30 minutes.
  10. Cool and spread with reserved cream cheese mixture.
  11. Chill until firm.

    Mmm! these sound so yummy, my husband loves lemon desserts. He especially loves the frozen Marie Callendar lemon pie. it’s expensive, I’ll pick one up if I catch it on sale.

    I want to experiment the recipe with other cake mixes, and substituting other fruits for lemon. What about reducing the butter with applesauce or mashed banana for reducing fat?

      You could try it. The thing is any time whether in this recipe or another when you exchange the butter with other things it changes the richness, texture and flavor which is nothing wrong with that it just means the recipe will be different from the original.

    Bindu, I have replaced butter with applesauce when making chocolate chip cookies. They taste very good, but not outstanding like they do normally. Also, they are denser, and don’t have as pleasing a texture because butter would have melted and made the dough flaky and light. In this case I think that the crust is a essential part of the recipe. I would try experimenting by only replacing 1/2 of the butter and see what you come up with. If you do try it, report back.

      Peter I have never tried it but I wonder if you add some lemon flavoring or juice to a regular white cake if that would work for you.
