Easy Shepherd’s Pie Recipe Using Leftovers and Pantry Staples!

Need a quick dinner that’s filling, affordable and uses ingredients you already have on hand? This Easy Shepherd’s Pie is one of our favorite “clean out the fridge” meals!

Made with ground beef, canned or frozen vegetables, leftover mashed potatoes and cheese, it’s a simple weeknight dinner that comes together fast with very little prep. Just mix, layer and bake.

Whether you’re using leftover mashed potatoes from Sunday dinner or a bag of frozen mixed vegetables from the freezer, this recipe is flexible enough to work with what you already have.

Why You’ll Love This Shepherd’s Pie Recipe:

  • ✅ Perfect for leftovers – Use leftover mashed potatoes, cooked meat, vegetables and cheese.
  • ✅ Pantry-friendly – Canned vegetables, tomato sauce and seasonings make this easy to throw together anytime.
  • ✅ Freezer-friendly shortcuts – Frozen mixed vegetables work great and save prep time.
  • ✅ Ready in about 30 minutes – A hearty dinner without spending all evening in the kitchen.
  • ✅ Budget-friendly – Stretches inexpensive ingredients into a filling family meal.
  • ✅ Customize it easily – Use what you have and skip what you don’t.

Quick Recipe Highlights:

This easy shepherd’s pie starts with browned ground beef and onion. Add canned or frozen mixed vegetables, stir in tomato sauce and seasonings, then spread everything into a casserole dish.

Top with leftover mashed potatoes and shredded cheese, then bake until hot and bubbly.

That’s it! No complicated steps, no special ingredients and a great way to turn leftovers into a meal your family will actually be excited to eat.

Clean Out the Fridge With This Easy Shepherd’s Pie!

One of the best things about this recipe is that there’s no need to follow it exactly. Think of it as a “use what you have” dinner.

Have leftover mashed potatoes? Toss them on top.

A half bag of frozen vegetables? Throw them in.

Extra roast beef, chicken or turkey sitting in the fridge? Use that instead of ground beef.

This recipe is incredibly forgiving and a great way to save money by using up food before it goes bad.

✅ Meats:

  • Leftover roast beef, steak, or pot roast – chopped or shredded
  • Leftover chicken or turkey – turns it into more of a poultry cottage pie
  • Sausage – crumbled or sliced, adds a savory twist
  • Bacon or ham – chopped for extra flavor

✅ Vegetables (beyond the basics):

  • Corn
  • Green beans
  • Mushrooms
  • Zucchini or squash
  • Spinach or kale – wilted or sautéed first
  • Leftover stir-fried veggies – just drain extra sauce

✅ Carbs & Fillers:

  • Leftover rice or cooked pasta – stir into the meat layer
  • Cooked lentils or beans – add protein and fiber
  • Stuffing/dressing – layer under or over the mashed potatoes for a holiday vibe

✅ Sauces & Extras:

  • Gravy – instead of or in addition to tomato sauce
  • Leftover spaghetti sauce – adds a different flavor twist
  • BBQ sauce or Worcestershire sauce – for depth and richness
  • Sour cream or cream cheese – mix into mashed potatoes for extra creaminess

✅ Toppings:

  • Breadcrumbs or crushed crackers – sprinkle on top for crunch
  • Chopped fresh herbs – parsley, thyme, or chives after baking

This easy shepherd’s pie is the perfect leftover makeover meal! Made with ground beef, canned or frozen vegetables, mashed potatoes and cheese, it’s a quick, budget-friendly dinner that’s ready in about 30 minutes. Great for busy weeknights and a simple way to use up ingredients already in your fridge and pantry.

  • Author: Tawra Kellam
  • Yield: 4 servings

Ingredients

1/2 lbs. ground beef
1 onion, chopped
2 carrots, diced (optional if using mixed vegetables)
1 can peas, 1 can mixed vegetables, or about 2 cups frozen mixed vegetables
1 (15 oz.) can tomato sauce
salt and pepper (to taste)
1 tsp. sugar
2 tsp. onion powder
1 tsp. garlic powder
1 tsp. chili powder
4 cups mashed potatoes
3/4 cup grated Cheddar cheese

Instructions

  1. Preheat oven to 350°.
  2. In a large skillet, brown the ground beef and onion.
  3. Add the carrots, and cook until tender. Drain any excess grease.
  4. Drain grease.
  5. Stir in the vegetables, tomato sauce, sugar, onion powder, garlic powder, chili powder, salt and pepper. Mix well.
  6. Spread the beef mixture into a casserole dish.
  7. Spoon the mashed potatoes evenly over the top and sprinkle with shredded cheese.
  8. Bake uncovered for 15-20 minutes, or until hot and bubbly and the cheese is melted.
  9. If using frozen vegetables, bake an additional 5-10 minutes as needed. Cover loosely with foil if the top starts browning too quickly.

Notes

Easy Recipe Tips

  • Use leftover mashed potatoes to make this meal even faster.
  • Frozen mixed vegetables are the quickest option—no chopping required.
  • Leftover roast beef, turkey or chicken can be substituted for the ground beef.
  • Add a splash of Worcestershire sauce or leftover gravy for extra flavor.
  • Double the recipe and freeze one for another busy night.

Make It Even Easier

For the fastest version, skip the carrots and use:

  • 1 lb. ground beef
  • 1 bag frozen mixed vegetables
  • Leftover mashed potatoes

Brown the beef, stir everything together, top with potatoes and cheese, and bake. It’s one of those “use what you’ve got” dinners that always works.

I add thinly sliced leeks to the mashed potatoes and cheese on top and it’s out of this world. I also add Worcestershire sauce to the meat.

What do you mean by 2 carrots diced and 1 can mixed vegetables or peas? If I used 1 can of mixed vegetables do I need also the 2 carrots diced ?

You can do 2 carrots alone, or carrot and peas or a can of veggies and the carrots. Just adjust the kind and amount of veggies you would like. I myself don’t even use the carrots or peas or veggies. This is an easy recipe to adapt to your own tastes.

This is the first time I have ever made a Breakfast Skillet. Making for myself I downsized everything and I will be eating it twice today. I found it to be quite tasty, but I used to much bacon grease. I tipped the pan to drain. Thank you I will be doing this again!!

I use instant potatoes for my Shepard pie. It’s just dried potato .
    Not real mashed potatoes.

Hi, For a little twist use a can of tomato soup instead of tomato sauce. I add dill weed to the basic recipe. Everyone love it and it adds variety to mealtime.
