Creamy, delicious and packed with a secret ingredient that keeps everyone coming back for seconds, this is truly the best potato salad recipe for potlucks, barbecues and family dinners! With tender potatoes, crispy bacon and tangy dill pickle, this easy and delicious homemade side dish comes together fast and tastes even better after chilling!

Ingredients

1/4 cup mayonnaise
1 tsp. garlic powder (or more to taste)
1 tsp. onion powder or 1/2 onion, finely chopped (more to taste)
1 small dill pickle, diced into small pieces
3 eggs, hard-boiled and chopped
6 potatoes, peeled, cubed into small pieces and boiled
2 slices bacon, fried and crumbled or 1 Tbsp. bacon grease (optional)
2 carrots, peeled and chopped
salt

Instructions

  1. Mix the mayonnaise, garlic powder, onion powder, and pickle in a large bowl.
  2. Add the eggs, warm potatoes, carrots and bacon or bacon grease, if desired.
  3. Mix well.
  4. Add salt, to taste.
  5. Mix well.
  6. Chill 1-2 hours before serving. If the potato salad seems dry, add a couple tablespoons of milk. Serves 10.

Notes

When making potato salad, add the dressing to warm potatoes for the best taste! Warm potatoes will absorb the flavor from the dressing while cool ones will not.

4 pounds potatoes, peeled and cubed
3/4 cup sour cream
1 cup mayonnaise
1 1/2 cups shredded cheddar cheese
1 package bacon, cooked crisp and crumbled
6 green onions, chopped or 1/2 red onion, finely chopped or 1 tsp. onion powder
salt and pepper, to taste

Instructions

  1. Place the potatoes in a large pot and cover with water. Bring to a boil and cook 8–10 minutes, or until fork tender. Drain well.
  2. Let the potatoes cool slightly, then place them in a large bowl.
  3. Add the sour cream, mayonnaise, cheddar cheese, bacon and green onions. Season with salt and pepper to taste.
  4. Gently mix until everything is well combined.
  5. Cover and chill 1–2 hours before serving for the best flavor.

Notes

  • If the potato salad seems dry after chilling, stir in 1–2 tablespoons milk before serving.
  • For extra flavor, reserve a little bacon, cheese and green onion to sprinkle on top before serving.

3 pounds red potatoes, scrubbed and cut into bite-sized pieces
1 (8 oz.) block cream cheese, softened
1/2 cup mayonnaise
1/2 tsp. garlic powder
Black pepper, to taste
1/4 cup chopped pickled jalapeno peppers
2 green onions, sliced
1 cup shredded Mexican 4-cheese blend
6 slices bacon, cooked crisp and crumbled
1 fresh jalapeño, thinly sliced
Salt, to taste

Instructions

  1. Place the potatoes in a large pot and cover with water. Bring to a boil and cook 8–10 minutes, or until fork tender. Drain well.
  2. While the potatoes are still warm, place the cream cheese, mayonnaise and garlic powder in a large bowl. Stir until smooth and creamy.
  3. Add the warm potatoes, pickled jalapeños, green onions, shredded cheese and bacon. Season with black pepper to taste.
  4. Gently stir until the potatoes are evenly coated and all ingredients are combined.
  5. Salt to taste.
  6. Top with fresh jalapeño slices and extra bacon, if desired.
  7. Cover and chill 1–2 hours before serving for the best flavor.

  1. In a large bowl, mix together the vegetable oil, vinegar, mustard, salt and pepper until well combined.
  2. Add the roast beef, potatoes, green pepper, celery, onion and pimentos, if using.
  3. Gently toss until all the ingredients are evenly coated with the dressing.
  4. Cover and chill for at least 1 hour before serving to let the flavors blend together.
