This loaded baked potato salad recipe makes potato salad that is creamy, cheesy and packed with crispy bacon flavor — everything you love about a loaded baked potato in an easy make-ahead side dish! Perfect for barbecues, potlucks and family dinners!

Ingredients

4 pounds potatoes, peeled and cubed
3/4 cup sour cream
1 cup mayonnaise
1 1/2 cups shredded cheddar cheese
1 package bacon, cooked crisp and crumbled
6 green onions, chopped or 1/2 red onion, finely chopped or 1 tsp. onion powder
salt and pepper, to taste

Instructions

  1. Place the potatoes in a large pot and cover with water. Bring to a boil and cook 8–10 minutes, or until fork tender. Drain well.
  2. Let the potatoes cool slightly, then place them in a large bowl.
  3. Add the sour cream, mayonnaise, cheddar cheese, bacon and green onions. Season with salt and pepper to taste.
  4. Gently mix until everything is well combined.
  5. Cover and chill 1–2 hours before serving for the best flavor.

Notes

  • If the potato salad seems dry after chilling, stir in 1–2 tablespoons milk before serving.
  • For extra flavor, reserve a little bacon, cheese and green onion to sprinkle on top before serving.
