  1. Line an 8×8-inch pan with parchment paper, leaving enough over the sides to easily lift out the fudge. You can also lightly grease the pan with butter.
  2. Drain the maraschino cherries thoroughly. Pat them very dry with paper towels to remove as much excess moisture as possible.
  3. Microwave the white baking chips and cream cheese in 30-second intervals, stirring after each interval, until smooth.
  4. Stir in the lemon extract, if using.
  5. Gently stir about ¾ of the cherries into the fudge mixture. Spread evenly into the prepared pan.
