Brunch Menu – Fluffy Pancakes Recipe And Bacon Sausage Wraps

Here are some easy brunch ideas and recipes to make breakfast easier for you and your family! This yummy fluffy pancakes recipe is a great treat that’s very easy to make. Add some fruit and whipped cream for a really special Christmas breakfast! You’ll also find a tasty bacon sausage wrap recipe and more easy breakfast ideas!

Pancake Brunch Meal Plan

Tips:

  • Before you brew your coffee, shake a little cinnamon on the grounds for just a little hint of flavor and a special warm and cozy aroma for those cold winter mornings.
  • Mix a bag of dry pancake ingredients and keep it ready in your pantry. Then, when you have an urge for pancakes, you can just mix it with the wet ingredients. It will be just as easy to use as pancake mix when you prepare it this way.
  • For special occasions, have a pancake bar. Set out different dishes of things to add to each person’s pancakes, like chocolate chips, berries, nuts or granola. Then, just sprinkle their pancakes with the things they choose as you cook it.
  • You can also lay out various pancake add-ins along with different flavored syrups and butters so your family or guests can put them on top of their pancakes after they are cooked. Don’t forget whipped cream or even chocolate syrup to drizzle on the pancakes.

Meal Plan

Fluffy Pancakes*
Bacon Sausage Wraps*
Scrambled Eggs
Fruit Cup or Juice
Coffee or Milk

 

These pancakes are like the big fluffy pancakes you find at your favorite restaurant. Mix the batter first and let it set for a few minutes while you are preparing the rest of your brunch. The batter will thicken and start to bubble. Don’t stir it. You want the bubbles.

Fluffy Pancakes

1 1/2 cup milk
2 Tbsp. white vinegar
2 cups all-purpose flour
1/4 cup white sugar
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 eggs
1/4 cup (1/2 stick) butter, melted*

Combine milk with vinegar in a medium bowl and set aside for 5 minutes to “sour”.

Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into “soured” milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.

Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

These are great to freeze and pull out as needed. They’re even better if you can sprinkle them with the sugar and let them set overnight. You can’t use too much sugar on these. The more the better. Sprinkle them with a little more before baking them in the morning.

*If you are watching your fat, you can use less butter or cut it out if you need to.

 

Bacon Sausage Wraps

Bacon
Little Smokies
Brown sugar

Wrap little smokies with 1/3 bacon strip each and secure with a toothpick. Lay on a foil lined baking sheet and sprinkle with brown sugar. Bake at 350 degrees for 40 minutes, turning once to bake 20 minutes on each side.

Note: You can keep these warm in a slow cooker and drizzle with a little maple syrup, too.

    These little smokies sound wonderful. I think I will try them this weekend. We used to put them in a crockpot with some bar-be-que sauce and eat them as a snack but the bacon and brown sugar really sounds yummy!

    I bet the aroma of this brunch being prepared is second to none; as well as the taste!

    I couldn’t eat like this too often because of the sodium & fat .. .. .. but once in awhile <3

    Sounds really good. When you speak of freezing the pancakes, are you talking about freezing those which are already fried? You said to take them out of the freezer and leave them in the fridge overnight and put sugar on them before baking.

      Doris you have stumped me. :) This was a recipe we received from a reader several years ago and we have only used it right away and never froze them so really hadn’t noticed the sugar part before. The only thing I think she was meaning was to sprinkle them with sugar to warm them in the oven. Years ago we didn’t really have frozen pancakes or waffles you bought and if we had leftover pancakes you would wrap them in foil and warm them in the oven and didn’t put them in a toaster or any thing. My grandma would take her left over pancakes and sprinkle them with sugar and then pour milk on them. This could be they type of thing the reader was talking about.

      Sorry about the confusion and thank you for bringing it to our attention.

    Leftover pancakes. HA! You folks must not be Germans. We’ve never heard of a leftover pancake.

    However if you non Germans do have leftover batter, grill them up, let cool and put in a baggie. You can either toaster them the next day or freeze them. I wouldn’t freeze the batter because I would be afraid that the leavening would stop working and they would be like bricks.

    My grandson likes to choose whether to have pancakes or waffles when he comes to my house. He feels special when
    he gets to choose. Little does he know that I have both leftover pancakes and waffles in my freezer at all times just waiting for him.
    The microwave makes the pancakes taste like fresh cooked—-about 20 seconds–maybe more with a lower wattage microwave oven.
    Warm the waffles in the toaster so they stay crisp. FYI–I am of German heritage, but I do have leftover pancakes. Tommie from Cowtown

    When freeezing leftover cooked pancakes or waffles, be sure to put layers of waxed paper between them, so that you can separate them better. Wrap overall package in foil & freeze. Ours never lasted longer than a couple of months before they were gobbled up on cold mornings…
