Easy Autumn Soup Recipe

Easy Autumn Soup Crockpot Recipe

Barley is significantly under-used and is so good for you. This Autumn Soup Recipe is one of those soups you can toss into a pot and forget about it for the rest of the day. It is perfect if you are doing major outside work, like winterizing of your yard all day, spending the day doing major cleaning and organizing in the house or running errands. It is so nice to come home to a warm meal that’s all ready to go!

This would be great served with cornbread or some type of crusty bread for a complete meal.

Easy Autumn Soup Recipe

1 lb. ground turkey, browned
1 pkg. onion soup mix
2 cups sliced carrots
2 cups sliced zucchini
1 can (16 oz.) tomatoes
1 cup corn
1 teaspoon basil
2 oz. barley
water, to cover 
salt and pepper to taste

Place all ingredients in a slow cooker. Add water to cover the ingredients. Cover and cook on low 8 hours. Fills a 3 quart slow cooker.

    Hi Jill:
    hate to be uninformed, but I’ve never used or tasted barley but it sounds like a great soup stretcher. But, can you or other readers tell me what it actually tastes like? my mom was from New England, but she never used it, so it doesn’t occur to me to buy/use it.

      Donna I was like you I had never used it until my kids were grown and gone. To be honest I am a real picky eater especially when it comes to the texture of things. Tawra and I were exceptionally ill one time and we had a newborn we were taking care of. A friend of mine brought us this barley soup and I so appreciated it I inhaled it even though I wasn’t quite sure what it was. It was so good. It really doesn’t have very much flavor at all but is kind of like pasta or rice in the fact that if you don’t add seasonings and things to it there isn’t much to really taste. It is really good for you and full of many more nutrients then like rice or pasta would have.
      Just a heads up but it taste so good and it is really high in fiber or something,you may not want to eat too much of it at first to see how you system reacts to it. At the risk of being in delicate. I made a pig of myself with it and ended up with diarrhea. : ) Anyway even a very picky eater like me really loved it. That is why I don’t know why it isn’t more widely used.

      One other thing too. Just a heads up. If anyone has Dining on a Dime we have two other barley recipes in there for chicken and beef that are similar to this one.

    About how much is 2 ounces of barley?

      It’s about 4 tablespoons Bea. Of course it doesn’t have to be exact. The only thing about barley it swells and swells so if it looks as if that isn’t going to be enough don’t worry it will be plenty. It is like adding noodles or rice to a dish you can really use as much as you like. The other thing about barley is it seems to make a soup feel thicker. Of course may already know this if you have used it before.
