2 (7 oz.) packages sugar-free white baking chips (14 oz. total)
1 tsp. peppermint extract (or flavoring of your choice)
Red food coloring (optional)

Instructions

  1. Line a cookie sheet with parchment paper and set aside.
  2. Place the white baking chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each, until completely melted and smooth.
  3. Stir in the peppermint extract until evenly combined.
  4. Pour about half of the melted mixture onto the prepared cookie sheet and spread into an even layer.
  5. Add a few drops of red food coloring to the remaining melted chips and stir. Add more food coloring, if necessary, until desired color is reached.
  6. Spoon the red mixture over the white layer and gently swirl with a knife or spatula for a marbled effect.
  7. Let the bark harden completely at room temperature or refrigerate until set.

1/4 tsp. salt
1 tsp. vanilla
Optional: 1/2 cup chopped nuts (almonds or pecans)
Optional topping: sugar free chocolate chips

Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. In a medium saucepan over medium heat, melt the butter.
  3. Stir in the sugar substitute and salt, stirring constantly until the mixture is fully dissolved and begins to bubble.
  4. Continue cooking and stirring until the mixture turns a deep golden color, about 5–8 minutes.
  5. If using erythritol, the mixture may thicken quickly, so watch closely.
  6. Remove from heat and immediately stir in the vanilla.
  7. Pour immediately onto the prepared baking sheet and spread into a thin, even layer.
  8. Sprinkle with chopped nuts or sugar free chocolate chips, if desired.
  9. Cool completely at room temperature or refrigerate until fully hardened.

Notes

  • Allulose produces the most traditional toffee “snap” and does not recrystallize.
  • Store in an airtight container to keep moisture from softening the toffee.

  4. In a small bowl, mix the peanut butter and powdered erythritol until smooth and well combined.
  5. Spoon the peanut butter mixture over the chilled chocolate layer.
  6. Melt the remaining chocolate chips and pour over the peanut butter layer, covering completely.
  7. Return to the refrigerator and chill until firm.
  8. Remove from the molds and enjoy.
