Fried Mushrooms, Zucchini, Squash and Onion Rings Recipe

This easy onion rings recipe also makes fried mushrooms, fried zucchini and other veggies. They are are easy to make and oh so yummy! Don't pay too much to buy them as an appetizer at your favorite restaurant. Instead, use this easy recipe!

Ingredients

Units

Mushrooms, zucchini, onions, squash
flour
1 egg, beaten
1/2 cup milk
cracker crumbs
vegetable oil for frying
salt and pepper

Instructions

  1. Wash all the vegetables.
  2. Slice the zucchini, onions and squash into thin slices.
  3. Put some flour in a bowl.
  4. Put egg and milk in another bowl and mix.
  5. Place crackers crumbs into a bowl.
  6. Pour the vegetable oil into a deep saucepan or frying pan.
  7. Heat pan to 375° or until a few cracker crumbs fry quickly.
  8. Dip some of the vegetables into the flour, then the egg mixture and then cracker crumbs.
  9. Fry until golden.
  10. Remove with a slotted spoon and drain on paper towels.
  11. Salt and pepper to taste.
  12. Repeat with other vegetables until they are all cooked.
  13. Serve hot with ranch dressing.

    Are you familiar with the halogen/convection oven that sits on top of the counter? I now fry in that. We use so much less oil. Please, let me know if there is some reason I should not be using this device. I don’t find many that are familiar with it. Thank you

    I have a halogen/convection cooker/oven but I don’t use any oil in it so I’m confused by your comment. I cook fish, french fries, etc., but I don’t use any oil. It is convection cooking in that there is heat and forced air (convection) and the heat source is the halogen bulb which is very hot. There’s no reason not to use it. Takes less electricity, cooks food quicker, is very safe, no safety concerns or nutritional deterioration. Easy clean up, soapy water, start up heating element, water heats and swirls around and unit is cleaned up quickly. If you don’t want to do that, clean glass normally, clean stainless steel 2 stage food shelves normally without electricity and swirling soapy water.

    Try this recipe with a teaspoon or tablespoon of Romano type cheese in the flour or cracker mix.

    Can these be baked in the coven to eliminate frying?

      Lynne I am not sure why you couldn’t. Now of course they won’t have the exact same flavor as when they are fried in oil (that is why we all love fried foods so much : ) but I would try a few and see what happens.

    We enjoy dipping the fried veggies in the ranch dressing with a little creamed horseradish added, especially the onion rings. I can’t fry enough onion rings some nights! Thank you for your recipes and suggestions. I really appreciate your ideas.

    I haven*t looked at the dips area to closley but I made a dip without looking for one. If it is already there I apologize ahead of time. I mixed Ranch dressing and salsa, for a taco meal I made up. It was very good.
