    Ingredients you will need for the Chicken Spinach Casserole Recipe

    • Boneless skinless chicken breasts – The recipe calls for boneless chicken breasts, but you can also use boneless chicken thighs. This recipe works best with boneless chicken, but it is ok to make it with bone-in chicken, like chicken legs if you prefer.
    • Cream cheese – The cream cheese gives this recipe a creamy texture and a rich, full-bodied flavor you’re sure to love!
    • Spinach – The spinach adds a nice color and flavor to this recipe. If you don’t like spinach, it’s ok to leave it out.
    • Olive oil – Olive oil is preferred because it adds to the flavor of the recipe, but in a pinch, if you don’t have olive oil you can use vegetable oil or canola oil.
    • Mozzarella cheese – Mozzarella cheese really amplifies the Italian theme, but you can really use any cheese you like. It will vary the flavor some, but the recipe will still taste great. We almost always have a Mexican blend cheese in the fridge, so I often use it in recipes like this if I don’t have Mozzarella on hand.
    • Garlic powder or fresh garlic cloves – Every Italian dish should have plenty of garlic! I usually use garlic powder because it’s quick and easy, but fresh garlic is nice if you have some on hand. It’s also a great way to use fresh garlic from the garden.
    • SeasoningsItalian seasoning and salt, along with the garlic, give this dish its distinctively Italian flavor. If you like a little more zip, the optional red pepper flakes and black pepper give it a little more spice!

    How to Make the Chicken Spinach Casserole Recipe

    The chicken spinach casserole recipe is very easy to make:

    This recipe serves 4. (Full recipe below)

    • First, you will add the marinade ingredients to a Ziploc freezer bag. Seal and mix the ingredients well to ensure all of the seasoning and spices are combined.
    • Then add the chicken to the bag and mix again to make sure the chicken is coated well. Set aside for 10-15 minutes. You can leave it longer if you wish but that isn’t essential.
    • While the chicken is marinating, preheat the oven and wilt the spinach in a skillet with the remaining olive oil. Once the spinach is ready you can set it aside.
    • After 10-15 minutes, remove the chicken breasts from the marinade and place them in a baking dish. Spread the cream cheese over the chicken breasts and lay the spinach on top of the cream cheese. Sprinkle the mozzarella over the top.
    • Then bake for 20-30 minutes at 400°.

    Here are some easy tips that will help you make this recipe.

    • You don’t need to marinate the chicken for too long to make a full-flavored dish. 10-15 minutes is sufficient. However, if you do have time, you could put the chicken in the bag of seasonings to marinate in the morning or the night before to really maximize the flavor.
    • If you don’t have a meat thermometer to help you measure the internal temperature of the chicken then just cut halfway through at the thickest point of the chicken breast. As long as there is no pink and the juices run clear, then it is cooked. I rarely use a thermometer unless I am particularly concerned.
    • This chicken spinach casserole recipe is a great recipe if you want to get the kids involved and teach them to cook. It includes easy-to-follow instructions and it is perfect to get the kids excited about cooking.

    Easy Recipe Variations

    With any recipe, it’s best to make the recipe exactly as it is written the first time so you are sure you know how to make it as intended. Once you have mastered it, you might want to try experimenting with tasty variations. Here are a couple of variations of this recipe that you might want to try.

    • Try adding some vegetables to this to make it a one-dish wonder. Bell peppers, mushrooms, zucchini, and green beans will all work well with this dish.
    • Before adding cream cheese to the chicken breast, wrap the chicken breasts with ham or bacon. It will add a different flavor. You can then add the cream cheese on top and continue with the recipe.
    • Cook this in the slow cooker if you want something ready for when you get home. All the prep is done for you. Cook on high for 4 hours or low for 6-7 hours. It is OK to leave it in the crockpot a couple of hours longer if necessary.
    • If you don’t like spinach, this recipe will still work without it. You can add other vegetables to it, or just simply enjoy a cream cheese chicken casserole.
    • You can make this recipe with chicken thighs, chicken legs, or even use other meat like turkey.

Prepare exactly the same way but instead of adding the chicken to a casserole dish assemble it in your slow cooker and then leave it on high for 4 hours or low for 6-7 hours.

    My wife and I would like to use some kind of simple budget program on the computer. Can you give any suggestions or what you use? Thanks for your help.

    We have created a simple version of our family budget template that you can download and use. We have three versions available (below).

    If you prefer to have the form perform the calculations and you have a program that can use Excel files, the Excel Budget form below will calculate your income and expenses and also project your budget surplus or shortfall.

    Tawra: Mike and I use a paper budgeting system, listing all of our income and expenses.

    We don’t recommend using complex computer programs, like those that require you to enter every receipt for every purchase, though a simple spreadsheet works well. If you make things too complex, you will get frustrated with it and quit.

    Here is an example of one of our previous budgets. We rarely have to look at our family budget since we pretty much have it memorized. The budget is just a guideline for spending.

    We tend to re-make the budget whenever we have a significant change in our income so we can determine what we need to cut or where we’d like the surplus to go. If you have an increase in income and don’t budget it, you will find that the money will get spent even if you don’t know where it goes, so it is best to decide where you want it and budget accordingly.

    Budgeting is really not complex. In a nutshell, you list your income and your expenses and adjust everything until your expenses are less than your income. If you have a low income, you may need to cut things you’d rather not cut. If you are very perfectionist, budgeting can really drive you crazy since it is not a precise science.

    Generally, you want to estimate your income and expenses in each area on the budget. If you have precise information, like a regular specific dollar amount for your paycheck or your mortgage, enter that amount.

    If you haven’t been using a budget regularly up to now, you will have to estimate for things like “general merchandise” which includes non food items not listed in other categories. I often call this the “Wal-Mart” part of my budget because it is for general household goods. Don’t use this category for fun stuff. That should go under social/entertainment or if you like, create your own category.

    When you estimate budget expenses, always estimate high. It is always better to have too much money at the end of the month than not enough. Once you get some practice budgeting, you will be able to estimate your expenses more precisely.

    If you have trouble tracking small expenses, like purchases of convenience store soft drinks or bubble gum, try the envelope system. After you make your budget, make separate envelopes for each budget item. Put a set amount of money in each envelope and then when the money is gone, don’t spend any more until the next month. If you end up with extra money in any envelope at the end of the month, add it to your savings or use it for something special. Never use money from one envelope to fund things in another envelope.

    The envelope system can help you identify areas where you typically spend more than your budget. Most people spend much more than they realize on small “nickel and dime” items. If you keep yourself to a set spending limit for these items, you’d be surprised how much you can get from your budget.

    1. Use diapers in the garden– Yes, seriously! The water absorbing granules in diapers work great at helping keep your container plants moist, so they don’t dry out too quickly. That way, you can water less and your plants get more even moisture. The granules are safe and, in fact, they are the same stuff that you can buy in garden stores to help keep your plants watered.
    2. Compost in place. I just throw most of my compostables into the garden and compost in place.  If it’s a large item, like half a watermelon, I will bury it a bit but with most scraps, I just pull back the mulch lay the compostables on the ground and put the mulch back on top of it, so that it rots right there in place.
    3. Use vinegar to kill weeds. Just spray vinegar on your weeds and they will die. If you just put it on the leaves there isn’t enough acid in the vinegar to impact the ph of your soil. I buy the large bottles of white vinegar, which are much less expensive than weed killer and very effective for most weeds.
    4. Use milk bottles, water bottles or other containers as drip irrigation. Just poke a small hole or two in the base with an ice pick. Set next to your plant and put some rocks in the bottom to weight it down so it won’t blow away. Then, when you water, just fill up the jug and you have an instant drip system for your plants! Then your water will soak in slowly instead of running off.
    1. Use broken mini-blind slats to make labels for the garden. Cut them down to the right size (3-4 inches works well) and use a permanent marker to label them. I can get 175 plant markers out of a small mini-blind and up to 500 markers out of a large mini-blind. You can also cut up a yogurt container or other container into 1-2 inch pieces to use for garden markers.
    2. Use a shoe organizer to store your small tools. They’re great for storing all kinds of small garden tools and supplies. Many shoe organizers don’t work so well for organizing shoes, so they’re cheap and plentiful at garage sales!
    3. Use cardboard and newspaper for mulch. Just put the newspaper and cardboard under your mulch. This way, you don’t need as much mulch and it completely smothers the weeds so you don’t have weeds coming up.
    4. Use buckets or planters to water new trees. Drill a few holes in the bottom of a bucket or planter. Fill with some rocks so it doesn’t blow away. You can also use the rocks to partially obstruct any large holes that might let the water out too quickly. Then just fill the bucket with water and it will slowly water your plants.
    5. Set a small plastic or clay pot over plants to protect them from frost. Just put one pot on top of each plant. Remove in the morning so they don’t get too hot.
    6. Use toilet paper cores for planters. Just snip four small cuts along the bottom edge and fold inward to close one end. Then plant the tiny cardboard “pot” with soil and your seed. When the plants come up, just put the entire thing in the garden. The cardboard will decompose as the plant grows.

    Where Can I Get GF Flour?

    It is certainly getting easier to purchase ready-made gluten free flour in grocery stores in many areas of the United States. However, packaged goods come with a cost. Save money by making our gluten free flour recipe instead.

    If time is of the essence, here are my favorite store-bought gf flour mixes in order of preference.

    Instead of paying the hefty price for any of these expensive flour mixtures, try making our gluten free flour recipe and keeping it on hand in your pantry.

    Ingredients for our Gluten Free Flour Recipe

    Tapioca Flour. A starch that improves the flavor and texture of gf baked goods.

    Potato Starch. Starch works really well in baked goods to replace gluten because it is also a form of glue.

    Corn Starch. Using a variety to starches improves the taste and texture of your gluten free baked goods.

    Brown or White Rice Flour. Rice forms the base of most gluten free flour mixtures. If used exclusively it can give the baked goods a grainy texture, so that’s why we mix it with other flours.

    Sweet White Rice Flour. Adds a touch of sweetness to your flour mix and improves the taste.

    Xanthan Gum. A little xanthan gum improves the shape and texture of gf baked goods.

    How To Make This Gluten Free Flour Recipe

    The key to a really great gf flour recipe is using a blend of ingredients to balance the flavor and texture of your bread and baked goods. We love the ratio of ingredients in our recipe! All you have to do to make the recipe is mix all the ingredients together thoroughly and store them in an air-tight container. When you are ready to bake, you might give the mixture a quick stir since the different ingredients have varying weights and will settle over time.

    Tips for Gluten Free Baking

    • If you have the storage space you can double everything so that you run out less often.
    • When baking, be sure to spoon the flour into your measuring cup and then level. Do not scoop the flour to measure it or you will end up with heavy baked goods instead of light and fluffy baked goods.

    Fresh, hot beef or chicken fajitas are a wonderful Tex-Mex favorite, but they are so expensive to order at your favorite Mexican restaurant. Here is an easy chicken fajita recipe, which can also be used with beef so you can make tasty fajitas at home for a fraction of the price of eating out.

    This easy fajita recipe is one of my family’s favorite recipes! My husband frequently requests it for special occasions and our kids love it. The younger kids are sometimes hesitant about eating the peppers and onions, so I might serve the smaller children mostly meat and cheese on a tortilla and then give them 1 or 2 pieces of onion or pepper to get them to try it. I wouldn’t force them to try it, but as they get older, they will usually get curious and test it out!

    You can prepare this fajita recipe early in the day before dinner to give the meat time to marinate. You can prepare the meat, veggies in salsa in 5-10 minutes and then cook in a hot skillet just before serving.

    We most often make this as a chicken fajita recipe, but you can also make it with round steak, skirt steak or roast. If you happen to have leftover chicken, roast or steak, you can use it to make this recipe. If you use leftover meat, only cook the meat long enough to get it warmed through so it doesn’t get tough.

    Most restaurants serve fajitas with flour tortillas, and they are delicious this way, but you can also serve them with corn tortillas. Corn tortillas are great for a more authentic Mexican type flavor, but if you use corn tortillas, you will want to make sure they’re extra fresh so they don’t fall apart with the fajitas. If you’re very concerned about them falling apart, you can serve with 2 tortillas per fajita.

    If you have to eat gluten-free, you can make this recipe gluten free by using corn tortillas.

    For the richest flavor, and texture, I recommend making the fajitas with the optional onions and bell peppers. This gives them a more restaurant quality flavor, but it also can save you money on meat since the onions and peppers help bulk up the fajitas.

    I love this Swiss mushroom chicken recipe because it is an easy restaurant-quality dinner recipe I can make quickly and have dinner on the table fast. My entire family loves it, including my husband and teenagers! Try it and I think you’ll love it as much as we do!

    Ingredients for the Swiss Mushroom Chicken Recipe

    Boneless chicken – You can use boneless chicken breasts or thighs for this chicken dinner recipe. Thighs are often cheaper and have a little more flavor.

    Butter – Use the butter to brown the chicken. You can use margarine or oil if you have some on hand.

    Mushrooms – Either fresh sliced or canned mushrooms with well with this recipe. I usually buy them sliced in the produce section.

    Cream of mushroom soup – I usually use a can of cream of mushroom, but if you don’t have any you can use cream of chicken or make your own cream of mushroom soup.

    Parmesan cheese – You can use fresh Parmesan cheese if you like, but I use the canned kind because it’s quicker and easier!

    Garlic and onion powder – Again, I use the powder because it’s easier, but if you have them on hand and have the time, you can use fresh garlic and onions. Just dice them finely and add to the pan with the soup. (This chopper makes dicing veggies super easy.)

    Swiss cheese – Any kind of Swiss cheese is OK. I usually used the lower-priced pre-sliced Swiss for simplicity.

    How To Make This Swiss Mushroom Chicken

    To make this chicken dinner recipe, you will start by browning the chicken in butter. Once the chicken is browned, cook the mushrooms, just until tender.

    After that, mix in the cream of mushroom soup, Parmesan cheese and spices and stir until blended. At the end you’ll top with Swiss cheese and melt. That’s it! It’s quick and easy and so tasty they’ll think it took you a lot more work to make!

    What to Serve with this Swiss Mushroom Chicken

    If you like, you can serve this Swiss mushroom chicken over pasta, rice or potatoes. I like to keep things easy, so I usually serve with pasta or rice. Typically, I serve most chicken dishes with rice and a quick vegetable and my family never gets tired of it.

    I like to use the fresh-frozen vegetables at the grocery store because they’re super easy to toss in the microwave just before dinner while I’m finishing up the main dish. My family loves broccoli, frozen mixed vegetables or green beans, so these are my top choices.

    You can serve this chicken dinner recipe with any vegetable you like, so if you have any other vegetables, this is a great opportunity to use them. I prefer the frozen ones because they’re quicker and easier, but if you have fresh veggies, you can use them instead. In the summer, if I have extra garden squash on hand, I will cook it in butter with onions and serve it with this chicken dinner recipe.

    Baby carrots, sliced cucumbers, a salad, or some canned fruit cocktail are also easy options.
