Easy Oatmeal Muffins Recipe
This easy oatmeal muffins recipe is super easy to make and EVERYONE love them! You can easily add berries, chocolate chips, raisins to add extra pizzaz!
- Yield: 1 dozen
Ingredients
1 cup quick cooking oatmeal
1/2 cup packed brown sugar
1 cup all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. cinnamon (optional)
1 cup buttermilk
1 egg
1/2 cup vegetable oil
1 cup raisins (optional)
Instructions
- Preheat oven to 400°.
- Mix all ingredients in the order listed. The batter will be lumpy.
- Spoon batter into greased muffin tins, 2/3 full.
- Bake 15-20 minutes. Makes 1 dozen.

I just made these and also a batch of Mom’s sweet muffins! They are delicious! I have been trying different muffin recipes and have never found just the right one, until now! Thank you for your yummy recipes and all the time you put into developing them.

Can i use whole milk instead of buttermilk?

Becky you can use sour whole milk (make it sour by adding a tsp. of vinegar to the milk) and they will be ok but the texture is never quite the same as when using buttermilk. Many people use sour milk all the time and like them just fine so in a pinch you can.

I make buttermilk with milk and lemon juice when I don’t have any. I learned it a long time ago and it works great!

can you sub in gluten free. flour?

You could make a half a batch and see if it works Elizabeth but most of the time you have to have a special gluten free recipe. That is why Tawra wrote a gluten free cookbook because you have to add extra things to help no gluten things rise, the texture of them and other things.

Can you use olive or avocado oil? If none on hand can applesauce be used as well? Thanks😊

You know Denise you maybe could use applesauce but to be honest when you replace the things using the applesauce or the the other oils it either changes the texture or the flavor. You can but the recipe isn’t quite the same.

These came out great. I used a mix of sour cream and yogurt ( it was what I had in the fridge) to equal 1 cup.. I was low on milk and had no buttermilk, so I improvised. Thanks for sharing.
