This is also a great recipe to have the kids start helping out in kitchen! Let them choose what add-ins to put in and then they can take the muffins in lunches or for an after school snack!

Easy Oatmeal Muffins Recipe

1 cup quick oats
1/2 cup packed brown sugar
1 cup flour
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. cinnamon (optional)
1 cup buttermilk
1 egg
1/2 cup vegetable oil
1 cup raisins (optional)

Mix all ingredients in order listed. Batter will be lumpy. Spoon batter into greased muffin tins, 2/3 full. Bake at 400° for 15-20 minutes. Makes 1 dozen.

Can be frozen up to 6 months.
