Easy Homemade Spice Cake Recipe
1 cup butter
2 1/4 cups sugar
5 eggs
3 cups flour
1 Tbsp. ground cloves
1 Tbsp. cinnamon
pinch of salt
1 cup buttermilk
1 tsp. baking soda
powdered sugar
Cream butter until soft. Gradually add sugar until mixture is very light and fluffy. In a separate bowl, beat the eggs thoroughly and add to creamed mixture. Mix well.
Sift flour with cloves, cinnamon and salt. Beat about third of the flour combination into the batter, then stir in half the buttermilk. Add another third of the flour-spice combination and mix thoroughly.
Stir the baking soda into the remaining half cup of buttermilk and mix into the batter along with the remaining flour. Pour into a greased 10-inch tube pan.
Bake in a 350° oven for 45-55 minutes or until a toothpick inserted in the center of the cake comes out clean. Cool 10 minutes before removing from the pan. When cool, sift powdered sugar over the top. Serves 15.

I made this yesterday for the first time. It is so good! My husband who is not a Spice Cake fan, even liked it. I used Low Fat Buttermilk to cut down on fat. I also used Flaxseed Meal and water as egg substitutes(Vegan eggs) to help boost the nutrition. It came out pretty much perfect and is a new favorite recipe. Thanks for posting it!
