Corn Casserole Recipe

Corn Casserole

1/4 cup margarine, softened
3 eggs
1 carton (8 oz.) French onion dip
1 pkg. (8 1/2 oz.) cornbread mix
1/2 tsp. salt
1/2 tsp. pepper
1 can (15 oz.) whole kernel corn, drained
1 can (15 oz.) cream corn

Mix first 6 ingredients well. Then add corn. Pour into a 9×13 greased baking dish. Bake uncovered 35-40 minutes at 350° or until lightly brown.

    The problem with a dish like this, is that it would be so yummy, that I’d probably eat half the pan before I brought it to the table…

    I make this every holiday but with plain sour cream instead of the french onion dip. Without fail, this dish is always entirely eaten!!! Yum!!!!!!

        You just replace the onion dip with sour cream – 8 oz.

    You can also use plain yogurt in place of sour cream. Normally I wouldn’t have it on hand, but I’m trying to eat less sugar and learned to make it and now use it anything cooked w/ sour cream. Can replace half of mayo in potato / macaroni salad with it also. Less calories and very similar taste.
