Cake Mix Banana Bread Recipe
- Yield: 1 large loaf

1 (18 oz.) pkg. cake mix (yellow, white, or butter pecan)
3 eggs
1/3 cup oil
1 cup mashed bananas (about 3 medium bananas)
1 cup chopped nuts (optional)
Instructions
To Make In An Oven:
- Preheat oven to 350°.
- In a large bowl, combine all ingredients and mix for 2 minutes.
- Pour batter into a greased 5.25 x 9 x 2.75-inch loaf pan.
- Bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
To Make In A Crockpot
- In a large bowl, prepare the cake mix according to the package instructions.
- Mash the bananas and stir them into the batter until well combined.
- Grease the inside of your crockpot (use cooking spray or butter).
- Pour the batter into the crockpot and smooth the top.
- Place a clean dishtowel or a few paper towels over the crockpot, then set the lid on top. This helps absorb moisture for a better texture.
- Cook on high for 2–3 hours, or until a toothpick inserted in the center comes out clean.
- Let cool slightly, then remove from crockpot. Frost if desired once fully cooled.

I have on hand 2 very ripe bananas I need to get used and thought I’d try this recipe. I have everything else, but I’m not going to have quite a cup of mashed banana. I wonder if I can add enough applesauce to make it a full cup or if this would “throw-off” the recipe? I guess if I try it and it doesn’t seem right, I can use it for French toast…hard to beat butter browned toast with real maple syrup! Please let me know your thoughts. Thanks!

add some extra moisture to the mix. A little milk or thin yogurt can help keep the batter right. Also, a bit more sugar will make it sweeter and balance the banana taste.
I saw this on another recipe to make up for having fewer bananas.

I’ve used sour cream to fill in for banana if I didn’t have enough. also a tablespoon of ricotta. even a tablespoon of water or milk will work, it’s the liquid that’s needed. sour cream gives a richness to any cake…

You are right Donna any extra liquid will work just fine. I have been watching the weather on you guys and can’t believe how hard hit you getting. I do hope everyone is doing ok especially those without out power. We have been without power for a couple of weeks here and it was no picnic. Hope you can stay in and stay warm.
I’m thanking my lucky stars every day I’m now retired and don’t have to go out! I’m also so grateful to the National Guard here helping to clear the streets. equipment has been brought in from quite a few surrounding states, and we really appreciate it. Even big snow melting machines. we’ve even gotten government permission to put the snow in the harbor! hopefully, we can reciprocate when needed.

Yes you can or any other dried fruit and things like that too (chocolate chips if you want also)
This is super with a stick of melted butter instead of the oil.
You can interchange butter and oil sometimes but keep in mind that often that affects the texture etc. on some things.
Can I use sour cream instead of oil
No the oil is needed in here. In some recipes you can replace part of the milk for sour cream
Can I made mini muffins instead of a loaf? I am wanting to cook and freeze.
Yes you can. Most quick breads like this you can make into loaves, muffins, mini loaves, cakes or cupcakes. I love using my regular banana bread recipe to make into cupcakes and add vanilla cream frosting. The main thing is you may have to adjust the temp and to do this look at another mini muffin or similar recipe as to what is used for a temp and use that.
I added a pinch of nutmeg, some cinnamon and rum flavoring. Made rum cream cheese icring!
