If you need a hearty, no-fuss breakfast that will feed a crowd, this Amish Breakfast Casserole Recipe is a perfect choice! It’s packed with crispy bacon, tender hash browns, and plenty of melted cheese, making it a comforting, satisfying dish that everyone loves. Whether you’re serving a holiday breakfast, hosting overnight guests, or just want something easy for a busy morning, this casserole comes together quickly and bakes up beautifully.

One of the best things about this recipe is how simple and budget-friendly it is. It uses everyday ingredients you probably already have on hand, and you can easily swap in what you have in your refrigerator. Leftover ham or sausage works just as well as bacon, and any combination of cheeses will still give you that rich, creamy texture. It’s also a great way to stretch a small amount of meat into a filling meal for the whole family.

This Amish Breakfast Casserole Recipe is perfect for make-ahead meals. You can assemble everything the night before, cover it, and store it in the refrigerator. In the morning, just pop it in the oven and bake until hot and bubbly. That means less stress, less mess, and more time to enjoy breakfast with your family.

Serve it with fresh fruit, toast, or a simple muffin for a complete meal. Once you try it, this easy casserole will quickly become one of your go-to breakfasts for weekends, holidays, and anytime you need a warm, comforting dish.

This Amish breakfast casserole recipe is from Volume 2:

Ingredients

1 lb. bacon, diced
1 onion, chopped
6 large eggs, lightly beaten
4 cups frozen shredded hash brown potatoes, thawed
2 cups Cheddar cheese, shredded
1 1/2 cups cottage cheese
1 1/4 cups Swiss cheese, shredded

Instructions

  1. Preheat oven to 350°F. Grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook the bacon and onion until the bacon is very crisp.* Drain well.
  3. In a large bowl, combine the eggs, hash browns, Cheddar cheese, cottage cheese, and Swiss cheese.
  4. Stir in the bacon and onion mixture.
  5. Spread evenly in the prepared baking dish.
  6. Bake uncovered for 35–40 minutes, or until a knife inserted in the center comes out clean.
  7. Let stand for 10 minutes before cutting and serving.

Notes

  • *Cook the bacon until very crisp. Soft bacon will release grease and make the casserole soggy.
  • This casserole can be assembled the night before and refrigerated. Bake as directed in the morning, adding 5–10 minutes to the cooking time if needed.
