Ingredients

6 cups pasta, cooked (macaroni, shells, bow ties, or rotini work well)
1 dill pickle, chopped (optional)
1/2 cup mayonnaise
2 hard boiled eggs, chopped (optional)
1/2 onion, finely chopped or 1 tsp. onion powder
2 stalks celery, diced
2 carrots, peeled and diced
1 tsp. garlic powder
Salt and pepper (to taste)
1/2 lb. cooked chicken, turkey or ham, diced (optional)

Instructions

  1. In a large bowl, combine all of the ingredients.
  2. Stir until everything is evenly coated.
  3. Cover and refrigerate for at least 1 hour before serving for the best flavor.

Notes

  • Add a little extra mayonnaise before serving if the pasta absorbs too much dressing.
  • Sweet pickle relish can be used instead of dill pickles for a sweeter flavor.
  • Great for using up leftover ham, turkey or chicken.

Ingredients

1 (12 oz.) box shell pasta, cooked and drained* (Gluten-free pasta works great too.)
2 cups shredded chicken (about 1/2 rotisserie chicken or 2 cans chicken, drained)
2 (11 oz.) cans mandarin oranges, drained
2 cups seedless red grapes, halved
1 cup celery, diced

Dressing

1 cup ranch salad dressing
3/4 cup mayonnaise

Instructions

  1. In a large bowl, combine all of the ingredients.
  2. Gently toss salad and dressing ingredients together until evenly coated.
  3. Refrigerate at least 1 hour before serving to let the flavors blend.

Notes

  • For extra crunch, add sliced almonds, chopped pecans, or sunflower seeds.
  • Green grapes can be used instead of red grapes.

Ingredients

6 Tbsp. water
1/2 envelope taco seasoning
1/2 lb. cooked hamburger or 1 cup cooked chicken
1/2 cup green pepper, chopped
1/2 cup onion, chopped
1 tomato, chopped
1 (2 oz.) can sliced black olives
8 oz. rotini or some type of pasta, cooked, drained and rinsed
8 oz. shredded Colby jack cheese or your favorite kind of cheese
1 (8 oz.) bottle Catalina or red French salad dressing*

Instructions

  1. Combine the taco seasoning and water in a medium skillet.
  2. Bring to a boil.
  3. Add the meat, simmering for 5-10 minutes until most of the liquid has evaporated.
  4. Set aside to cool while you chop the veggies.
  5. Pour the pasta into a large bowl along with everything else.
  6. Toss everything to coat it with the dressing.
  7. Cover and refrigerate for at least 1 hour.
 
*This seems like a lot of dressing so you can adjust it and all the ingredients to your own taste. Rotisserie chicken is great for this too.

1 1/2 cups uncooked spiral pasta
1 1/2 cups chicken, cooked and cubed
1 1/2 cups celery, chopped

1/4 cup green pepper, chopped
1/4 cup red onion, chopped

Dressing

1/4 cup mayonnaise
1/4 cup ranch dressing
Salt and pepper, to taste

Instructions

  1. Cook the pasta.
  2. While it is cooking, chop the rest of the ingredients and mix.
  3. Mix the dressing ingredients together.
  4. Add pasta and mix everything.
  5. Chill.
  6. Garnish with toasted slivered almonds, if desired.
