This traditional pasta salad recipe is creamy, delicious and loaded with crunchy vegetables, tender pasta and simple ingredients you probably already have on hand. Ingredients

6 cups pasta, cooked (macaroni, shells, bow ties, or rotini work well)
1 dill pickle, chopped (optional)
1/2 cup mayonnaise
2 hard boiled eggs, chopped (optional)
1/2 onion, finely chopped or 1 tsp. onion powder
2 stalks celery, diced
2 carrots, peeled and diced
1 tsp. garlic powder
Salt and pepper (to taste)
1/2 lb. cooked chicken, turkey or ham, diced (optional)

Instructions

  1. In a large bowl, combine all of the ingredients.
  2. Stir until everything is evenly coated.
  3. Cover and refrigerate for at least 1 hour before serving for the best flavor.

Notes

  • Add a little extra mayonnaise before serving if the pasta absorbs too much dressing.
  • Sweet pickle relish can be used instead of dill pickles for a sweeter flavor.
  • Great for using up leftover ham, turkey or chicken.
  • Keeps well in the refrigerator for 3-4 days.
