This No Bake Energy Bites Recipe is a delicious, protein-packed snack that provides a great energy boost! Made with peanut butter, coconut flakes, flaxseed, chocolate chips, and more, these bite-sized treats are full of fiber and flavor. They’re a perfect alternative to granola bars and other snacks!

  • Yield: Makes about 20-25 balls

Ingredients

Units

1 cup (dry) oatmeal, any kind
1 cup toasted coconut flakes
1/2 cup chocolate chips
1/2 cup peanut butter
1/2 cup ground flaxseed
1/3 cup honey
1 tsp. vanilla

Instructions

  1. Mix all ingredients well.
  2. Chill for 30 minutes.
  3. Roll into balls about 1 inch in diameter or whatever size you prefer.
  4. Store in an airtight container and keep refrigerated for up to 1 week.

      I’m not sure Grizzly Bear Mom. It might work because of the peanut butter. You may have to add a little extra peanut butter but I am not sure.

    These look good but I have no idea of where to find flaxseed and nothing to grind it with. What can be substituted for flax seed?

      Sandra you don’t need to use flax seed in this recipe. I never do. You can pretty much add or take away what you use in these. I do try to add a little extra if something else that I do like if I take something away.

    You can pretty much get flaxseed in any grocery store nowadays – look for Bob’s Red Mill brand – or in stores like Whole Foods, or in health food stores. Comes whole and already ground. The whole seeds don’t do a lot for you. You need to grind them in order to get the nutrition out. I would think wheat germ would also taste good in this recipe, and if one didn’t want to do chocolate, you could substitute it some raisins or dried cranberries, and cinnamon. I think the flax and/or wheat germ would help take the stickiness out of the pb and honey a little bit.
