8 oz. sharp cheddar cheese, finely grated
1 1/4 cups all-purpose flour
4 tbsp cold butter, cut into small pieces
1/4 cup sour cream or plain yogurt
1/2 tsp salt
Instructions
- In a food processor, combine cheese, flour, butter, and salt.
- Pulse until the mixture looks like coarse crumbs.
- Add sour cream and pulse again until the dough starts to come together.
- It should still be crumbly but hold when pressed.
- Shape the dough into a log, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat oven to 350° .
- Roll dough on lightly floured parchment to about ⅛–¼ inch thick. If you prefer them to be crunchy, roll them thinner, and if you prefer them chewy, like biscuit bites, roll them out thicker.
- Cut into 1-inch squares using a pizza cutter or pastry wheel.
- Poke a hole in each cracker with a skewer or chopstick.
