My Favorite Roast Chicken Thigh Recipe!

If you’re looking for a meal that’s quick, affordable, and absolutely foolproof, this Easy Roast Chicken Thigh Recipe is one of my all-time favorites! It’s so simple — I can literally place the chicken in a baking pan, sprinkle on some seasoned salt, and pop it in the oven. That’s it! With just two ingredients and a few minutes of prep time, you’ll have a delicious, hearty dinner on the table with almost no effort.

This chicken thigh recipe works beautifully with either bone-in chicken thighs or boneless thighs, depending on what you have on hand. Bone-in chicken thighs and chicken leg quarters are some of the most budget-friendly cuts of meat, and they’re also packed with flavor and nutrients. That’s one of the reasons I love this dish — it’s healthy, inexpensive, and satisfying.

It’s also one of my go-to meals for busy days or those times when I’m just not feeling my best and need something easy. I can throw it together in minutes, let the oven do the work, and still serve up a dinner my family loves. In fact, it’s one of those rare recipes that everyone enjoys — even the pickiest eaters! No complaints, no frowns, just clean plates all around.

Another thing I love about this chicken thigh recipe is its versatility. Depending on what you serve with it, you can create all kinds of different meals. For a quick and simple dinner, I’ll serve the chicken with rice, mashed potatoes, baked potatoes, French fries, or potato wedges. If I’m really short on time, I’ll grab a bag of frozen fries or tater tots and call it good!

For sides, I often add frozen broccoli, mixed vegetables, coleslaw, or a fresh salad — all easy options that make this meal come together fast. Whether you’re cooking for one or feeding a family, this recipe is a true weeknight lifesaver — simple, budget-friendly, and delicious every single time.

You can absolutely use store-bought seasoned salt to keep this recipe even quicker, but it’s also incredibly easy to make your own at home. This Easy Roast Chicken Thigh Recipe is a no-fuss, family favorite that’s crispy on the outside and juicy on the inside! With just a sprinkle of seasoned salt and a quick bake in the oven, you’ll have perfectly roasted chicken thighs with rich flavor and tender meat. Perfect for busy weeknights or a simple Sunday dinner—easy, affordable, and delicious every time!

Ingredients

4-6 chicken thighs
seasoned salt

Instructions

  1. Preheat the oven to the appropriate temperature based on the type of chicken thighs you’re using (see below).
  2. Place the chicken thighs in a 9×13-inch baking dish in a single layer. Sprinkle with seasoned salt, to taste.
  3. Bake for the following times, adjusting for the size of the thighs.
    For Bone-in, skin-on thighs: Bake at 400°F–425°F (204°C–218°C) for 30–45 minutes for smaller pieces or 40–50 minutes for larger ones.
    For Boneless, skinless thighs: Bake at 425°F (218°C) for 12–25 minutes, depending on the thickness.
  4. To check for doneness, insert an instant-read thermometer into the thickest part of the meat. The internal temperature should be at least 165°F (74°C).
  5. Let the chicken rest for 5-10 minutes before serving to allow the juices to redistribute.

Notes

For crispier skin, broil for 2–3 minutes at the end of baking. (Watch carefully! If you leave it too long, the tops will burn.)
