
Delicious Ice Cream Pie
Crust:
20 Oreo cookies, crushed 1 stick margarine, melted
Mix ingredients and press into a pie pan.
Topping:
Ice cream, slightly softened (the amount depends on how high you want to pile it)
Ice cream topping
Whipped topping
Shaved chocolate, sprinkles or nuts (to sprinkle on top)
A cherry, to top it off
Pile the ice cream on top of crust. Pour on topping. Layer with the rest of the ingredients and freeze.

Ice Cream Cone Pie
1 cup slivered almonds, coarsely chopped (about 4 ounces)
12 sugar cones (4 ounce box)
1/2 cup chocolate chips
5 tablespoons unsalted butter
1 quart ice cream, any flavor
9 inch pie pan
Preheat oven to 350 degrees. Place almonds on baking sheet and toast, stirring occasionally until lightly browned, about 10-12 minutes. Cool completely. With a rolling pin crush cones into small pieces between a dish towel or sheets of waxed paper. Do not use food processor. Place almonds and chopped cones in medium-sized bowl. Stir chocolate chips and butter in small heavy saucepan over low heat until melted. Pour over cones, stirring to coat evenly. Press one third of the crumb mixture evenly over bottom of pie pan. Spread half of the ice cream over it. Repeat with 2 more layers of crumbs and ice cream, ending with crumbs on top. Press down with hands to help them adhere. Cover with foil and freeze until firm. The pie may be frozen up to 1 month.
This would be a really good and different dessert for this summer. Of course with chocolate in it it is good for anytime – what was I thinking?
