    This easy zucchini slaw transforms garden-fresh zucchini into a delicious coleslaw. With just four simple ingredients, you can whip it up in no time and make the most of your zucchini harvest!

    Ingredients

    2 medium zucchini
    1 large carrot
    Miracle Whip (add it until you like it)
    salt and pepper to taste
    1 Tbsp. milk

    Instructions

    1. Shred the zucchini and carrot using a box grater.
    2. Pour into a mixing bowl.
    3. Add Miracle Whip, salt, pepper and milk.
    4. Mix well.
    5. Chill.

    Notes

    If you like, you can just make your favorite coleslaw recipe and use zucchini instead of cabbage. (If you have picky eaters, this is a good way to sneak in zucchini.)

    I tried this zucchini slaw recipe and it was yummy! I also tried making it with our garlic salad sauce. Yum! This is a great way to use leftover garden zucchini!

    With snow in most of the country I thought I would post these recipes and tips for a fun frugal snow day, including our homemade snow ice cream recipe!

    There are lots of great ways to enjoy snow days or make them better for the kids. We have a family tradition of making snow ice cream every year with the kids and they look forward to the first snowfall with enough snow to make homemade snow ice cream. We have one child who doesn’t like milk or ice cream, so we make snow cones for him and I am including our easy snow cone recipe here, too!

    Sometimes, people get a little weird about using snow on the ground, but never fear! We have been making snow ice cream for years and nobody has died. Of course, you want to use fresh snow that has recently fallen and not dirty snow or, even worse, yellow snow! haha!

    After the recipes, I included some pictures of some of our snow adventures, including sledding, snow surfing when you don’t have hills and igloo building, which we did for quite a few years when the kids were younger!

    I put some pictures of our place too! Enjoy!

    This homemade snow ice cream is a super special sweet treat that kids especially love! It’s a wonderful adventure for kids on a snow day to gather fresh snow to make their own ice cream. Our kids have always loved it and yours will, too!

    Ingredients

    1/2 cup milk, sweetened condensed milk or cream
    1/4 cup sugar
    1/4 tsp. vanilla
    2 cereal bowls fresh clean snow

    Instructions

    1. Mix milk, sugar and vanilla together.
    2. Stir until vanilla is dissolved.
    3. Add fresh snow and stir gently until it is thoroughly mixed.
    4. Serve immediately. Serves 4.

    Our kids love it when it snows because they love making and, more importantly, eating homemade snow ice cream!

    Ingredients

    Crushed ice or snow
    1 pkg. flavored drink mix* (flavor of your choice)

    Instructions

    1. Mix drink mix with half as much water as the directions indicate to make a thicker syrup.
    2. Chill 1 hour.
    3. Just before serving, crush some ice or pack snow into your cup. Tu crush ice, you can use either a snow cone maker or put some ice cubes in a plastic bag and pound with a hammer.
    4. Pack the snow or ice chips into cups.
    5. Pour chilled drink mix over the ice and serve.

    Notes

    *You can also use fruit juice boiled down to half with food coloring added:
    Apple juice: green or red food coloring
    Grape juice: purple food coloring

    First, a stay dry tip: Slip plastic sacks over the kids feet to keep them dry. Put them on over the socks and the put on their shoes. Tie the handles around their legs.

    I loved your recipe for the cranberry roast (see below). It was awesome. The next day, I heated the leftover roast and gravy added about a tablespoon of soy sauce and 1/2 a bag of broccoli florets. I served that over ramen noodles and it made a wonderful broccoli beef type dish.

    A lot cheaper than take out!

    Cranberry Roast

    1 pkg. dry onion soup mix
    1 (3lb) roast
    1 can (16 oz) cranberry sauce

    Pour soup mix in a crockpot. Add roast and top with cranberry sauce. Cover and cook for 8 hours. To thicken gravy, mix 1 Tbsp. cornstarch and water and add to gravy. You can add carrots and potatoes 4 hours into cooking.

    Tips:

    If you don’t have time to make cornbread or are out of crackers when serving soup, serve it with some of your favorite seasoned croutons.

    It is so easy to make your own croutons. You can use any old, dried bread you want but tougher breads like French bread work best. This is a good way to use things like leftover hamburger buns, bagels or dinner rolls.

    All croutons store well an airtight containers for a couple of weeks.

    Tips:

    Sometimes we tend to make our meals so much more complicated than they need to be. I was blessed to be able to watch many women prepare their meals who learned to cook during the 30’s and 40’s. Some were busy stay at home moms. Others were moms who worked away from home and some were moms who helped their husbands on the farm.

    These women used some tricks to prepare their meals that made meal preparation easier and faster. Here are a few of them:

      • They didn’t worry if they had homemade biscuits or muffins for every meal. Often for a daily meal they would just place a plate of bread (not always homemade bread, either) on the table to eat with butter and jam or honey. In some homes, this was a staple at every meal.

     

      • They would keep things cleaned and ready to use for a relish dish like carrot sticks, celery sticks, olives, pickles, sliced cucumbers, tomatoes or fresh cauliflower.

     

      • Hard boiled eggs or pickled beets were kept on hand to place in a bowl at the last minute.

     

      • They didn’t hesitate to open some canned fruit to pour into a bowl and set on the table to eat by itself without whipped cream or any added extras.

     

    • Canned vegetables were a life saver for many of them. Then they could just warm some canned peas to set on the table.

     

    They served some combination of all of these at most meals. Then they would add a potato dish, rice or noodles and a meat and they would have dinner.

    Sometimes we read cooking magazines and see very elaborate meals on TV and think if this isn’t the kind of food we make we must have failed as good cooks. Each dish doesn’t need five or more ingredients in it to make it good. That is probably one of the places where our diets started going down the tubes. We forgot to keep things simple.

    You also save money when you keep it simple because you’re not using as many ingredients or extras like whipped cream or special spices.

    Just like in the old days, your family will probably enjoy an icy cold canned peach just as much as a fresh organically grown peach you had to study to determine how ripe it was before you took it home to try to peel and slice it. It’s you, mom and dad, who make the meal special just by being together with the family, not the pedigree of your fruits and vegetables.

     

    Menu:

    Yankee Noodles*
    Relish Dish
    Bread and Jam
    Bottled (canned) Fruit Cake*

    Yankee Noodles

    From: Alice B. (I learned this recipe in junior high. It’s tasty, quick to cook, inexpensive, and dirties only one pan!)

    1 lb. lean ground beef
    8 oz. uncooked noodles
    1/2 large onion, chopped
    1 large can tomatoes
    Salt and pepper (to taste)

    Brown meat and onion. Drain off excess grease. Add noodles and canned tomatoes. Chop tomatoes a little bit while in the pan. Bring to a boil. Reduce temperature and simmer covered for 7 minutes. Stir. Cover and simmer 8 more minutes. That’s it!

    You can add other ingredients you may have on hand like chopped green peppers, black olives, mushrooms, fresh herbs, etc. You may want to top with grated cheese. (Never cook the noodles first. They must cook with the rest of ingredients to absorb their flavors.)

    I love, love, love recipes that take only one pan and this one really does! Often, people will call something a one dish meal but they end up using 3 pans, 2 mixing bowls and 1 casserole dish. (That’s the one dish, I guess.) Now you can see why I really appreciated your recipe. : )

    Bottled Fruit Cake

    CAKE USING BOTTLED FRUIT – (Sometimes we have an excess of home bottled fruit and need to use it up before it gets old. This is a great way to use it!)

    1 quart of fruit with liquid
    4 cups flour
    4 tsp. soda
    2 cups sugar
    1 tsp. salt
    2 tsp. cinnamon
    1 tsp. cloves
    1/4 tsp. nutmeg
    1 cup oil
    4 eggs
    Raisins and nuts if desired

    Blend all of the above ingredients at the same time. Bake at 350° for 35 to 45 minutes. This makes one sheet cake or two cakes in 9×13 inch pans. This is a nice change from just using the fruit for a crisp, cobbler. or pie. You don’t need to put frosting on this, which can save time, too.

  • Mom’s Gingerbread Men

    Mom’s Gingerbread Men

     For the last 25 years mom has made these cute gingerbread men for Christmas. She just sells them to friends and family but has made up to 500 dozen of the little ones (yes, that 5,000-7,000 gingerbread men) in November and December. She packages them by the dozen in cellophane bags tied with a piece of red curly ribbon.

    A few years ago she came up with the big ones (at the top). They are about 12 inches tall and the kids just loved them. She gives one to each of the grandkids each Thanksgiving and most of it’s gone by the next morning! LOL

    The best part is that they taste even better than they look! She found a great recipe years ago in an old cookbook and has used it ever since. (Sorry, we can’t give it out. When we are done with the book business we will go into the gingerbread men business. :-)

    I thought I would share a picture since everyone is always asking about them.
