Instructions
- Heat the butter or bacon grease in a nonstick frying pan over medium high heat.
- Let pan heat up until butter bubbles.
- Once the butter bubbles (but before it browns), gently crack the egg into the pan.
- Let the egg cook for about 1 minute, until the edges begin to set.
- Add 2 tsp of water to the pan and immediately cover with a lid.
- Cook for 1–2 minutes, or until the egg white is set.
- If it’s really jiggly, give it one more minute. If you prefer a firmer yolk, you can cook until the yolk is your desired consistency.
- Carefully slide the egg onto toast, season with salt and pepper, and enjoy!
How To Make Poached Eggs

Instructions
- In a large saucepan, heat water to boiling.
- Reduce to a simmer.
- Break each egg into a cup.
- Hold the cup over the water and slip the egg into the water.
- Cook 3 minutes, until whites are set.
- Remove the eggs with a slotted spoon and allow to drain briefly.

This easy scrambled eggs recipe makes delicious scrambled eggs in just 5 minutes. Scrambled eggs are a great breakfast food, but also a tasty source of protein that is quick to make and that you can eat anytime!
- Yield: 4 servings
Ingredients
8 eggs
1 tsp. salt
1/4 tsp. pepper
4 Tbsp. milk or water (optional)
4 tsp. butter, margarine or bacon drippings
Instructions
- Stir all of the ingredients except butter in a bowl until well blended.
- Heat a skillet on medium heat.
- Add the butter, margarine or bacon grease.
- Pour the egg mixture into the skillet.
- Stir constantly for about 4 minutes until eggs are fluffy and set.
Notes
To test eggs for freshness: Place an egg in a glass of cold water; if it floats, do not use it.
Using bacon grease in this easy scrambled eggs recipe will give your scrambled eggs a richer, more delicous flavor! I highly recommend it!
In place of butter, margarine or bacon grease, you can also use 1 Tbsp. cooking oil. I would not use olive oil as the flavor or the olive oil will impact the flavor of the eggs.

- Place eggs in a saucepan; cover at least one inch over eggs with water. Bring to a boil.
- Turn down the heat to a medium boil; Boil for 7 minutes.
- Place in a bowl with ice water to cool quickly and help them peel easier.
Notes
- Hard boiled eggs peel easier if you start with eggs that are 5-7 days old.

Ingredients
6 hard boiled eggs
1 tsp. vinegar (optional)
1/8 tsp. salt
1/4 tsp. prepared mustard
1/3 cup mayonnaise
1 Tbsp. bacon grease (optional)
Paprika
Parsley, chopped
Instructions
- Shell the hard boiled eggs.
- Cut each one in half.
- Remove yolks and mash.
- Add remaining ingredients.
- Mix until smooth.
- Heap into egg white halves.
- Sprinkle with paprika or chopped parsley.

- Chill. This recipe is best if chilled for 1-2 hours.
