    After I learned to make my own homemade fudge, I was shocked at how much candy stores charge for something that is so quick and easy to make yourself!

    Since then, I have made this fudge and many of our other Christmas candy recipes for holiday parties and get-togethers. These easy fudge recipes are super popular everywhere I take them. Most people don’t bring candy to parties because it is so expensive to buy already made.

    You do not need a candy thermometer to make these recipes. You just have to pay attention as you warm the chocolate so you don’t burn it and stir it frequently.

    How To Avoid Burning Your Chocolate When making These Fudge Recipes

    Most of these fudge recipes call for melting some type of chocolate in the microwave in a microwave-safe container. Generally, you will want to microwave it in 30 second increments, stirring in between, until it is smooth.

    Pro tip: If after microwaving the chocolate, if the chocolate is ALMOST smooth, do not microwave more. This helps to avoid burning the chocolate. Instead, set it on the counter for a few minutes to allow the heat that is already in the chocolate to finish melting it. Then stir until smooth.

    This easy devil’s food cake recipe is my Great Grandmother’s Great Depression recipe. It’s a super easy chocolate cake you’re sure to love. You can make this cake in thin layers and serve it plain as you would a light brownie, or you can frost it with your favorite frosting. I prefer chocolate (recipe below) or buttercream frosting with it, but you can frost it with any flavor you like.

    You can easily make this devil’s food cake recipe into a layer cake by placing one layer, frosting it and then placing another layer. I often make it as a 2 layer or 3 layer cake, including frosting between each of the layers and then frosting the top.

    15 Cheap Gift Wrapping Ideas

    • Store bows and ribbons in a plastic bag and hang from the hanger with a clothespin or just put the handles of the bag over the hanger hook.
    • Cut leftover or old Christmas fabric into strips to make ribbons.
    • Use tulle or shredded color paper (recycled of course) to stuff in gift bags.
    • Buy white butcher’s paper or brown paper (found at home improvement stores, called “contractor’s paper”) to wrap gifts with; simply add a colorful ribbon, twine and or decorations such as pine cones, leaves, silk flowers, small toys, candy or cookies. Tie small jingle bells on packages for a festive ring!
    • If you can’t find butcher’s paper, use the backside of ugly Christmas paper. You can often find some very cheap at garage sales. Use the back side of ugly Christmas paper to wrap birthday presents.
    • To wrap extra large presents like bikes, use a  plastic tablecloth. You can  find one for about $1 at Dollar tree or at a garage sale for .50.
    • Make the wrapping material part of the gift. You can use a blanket, photo storage box, scarf, basket, jewelry box, coffee mug, vase, watering can, terra cotta pot etc.
    • Wind ribbon around old wrapping paper tubes or toilet paper tubes to save for next year.
    • Use Christmas material bought on clearance to wrap gifts. Sometimes it’s cheaper than paper.
    • Cut Christmas pictures out of magazines. Paste on bags or the outside of packages.
    • Save Christmas cards and use to decorate packages. Cut out with pinking shears for a lace effect.
    • Use Christmas cards as gift tags. Cut out a section on the card that is blank on the back. Punch a hole in the top to tie on the package. Use the back to write “To:” and “From:”.
    • To freshen wrinkled Christmas bows, put in the dryer with a damp washcloth. Put the machine on the delicate cycle for two minutes. The bows will look like new.
    • Don’t forget to look in your kitchen cupboard when you need boxes for wrapping – Oatmeal boxes, cereal boxes and such work great.
    • Save crumpled gift wrap and use it for packing to mail packages.
    • Place a little drop of scented oil, a scented pine cone, handful of strong smelling peppermints etc. inside a package you are sending so the minute they open the box they get a smell of Christmas.

    I have to say that homemade caramel apples are probably among my top 3 favorite foods!  Mom used to make homemade caramel apples for us every Halloween, along with homemade chili. Gourmet foods like caramel apples look so good at the store and on TV, so it’s easy to imagine them being difficult, but they really are easy to make. (We include a delicious caramel apples recipe below.)

    • The trick that makes their caramel apples look so fancy is in the packaging. Just buy some clear cellophane bags at the hobby store or from your florist. Put your homemade caramel apples in the bags and tie with a pretty ribbon. An assortment looks wonderful in a basket lined with an orange or red napkin and a pretty Halloween or Christmas bow tied on top.
    • Sprinkles can be found at Walgreens for $1.00 a bottle on sale.
    • Look for Candy Bars on sale to use for melted chocolate after Halloween. Compare prices it might or might not be cheaper than the bagged candy melts.
    • Add 1 tsp. paraffin wax to 2 cups melted chocolate to make the chocolate shiny.

    Caramel apples like the ones in this caramel apples recipe sell for $6-$8 EACH on the home shopping channel. They look wonderful on TV but they can be made fresher at home and for around .50-$1.00 each instead.

    You may want to try a trick my mother taught me about fried green tomatoes.  After slicing the tomatoes, place them in a single layer on paper towels or a microwave safe plate.  Microwave on high for 4 minutes.  Cool until able to handle them and proceed as usual.

    This allows you to fry them at a higher temperature, which speeds up the cook time (saving power) and keeps the tomatoes from soaking up as much oil.

    Homemade Chicken Stock Recipe

    Homemade chicken stock is super simple and basically free to make. Today, I’m sharing our easy homemade chicken stock recipe so you can make your own.

    Lots of recipes, especially soups, stews and some casseroles call for chicken broth. There’s no need to buy pre-made chicken broth in the cans or boxes at the store. It’s super easy to make your own chicken stock with the leftovers from chicken you already buy. You can also use this chicken stock for any recipe that calls for turkey broth.

    Since we eat a lot of chicken at our house, I always have leftover chicken bones. I used to throw away the bones, but now I have everyone save their chicken bones during dinner. Then I just throw the bones in a stock pot and fill it up with water. Sometimes I throw in an onion, a carrot or some celery.  Then I let it simmer overnight on low and in the morning I have yummy chicken stock. Really, that’s it! 

    Make This Chicken Stock Recipe And Freeze For Later!

    I always seem to have more chicken stock than I can use so I put the extra stock in the freezer in 2 cup portions and then save it for later. You can freeze the chicken stock in plastic containers, but I prefer to store it in quart-size ziplock bags.

    To do that, pour 2 cups of homemade chicken broth into a quart-size ziplock bag. Make sure to seal it securely so it does not leak. Then lay the bag on a baking sheet in the freezer until it freezes. When you freeze the homemade chicken stock this way, it is super easy to stack them in the freezer so they’re easy to grab and use when you need some for a recipe that calls for chicken broth.

    This is a great way to freeze and store soups and other liquids in smaller portions for use later.

    If you don’t have time to make the easy chicken stock recipe right after dinner, you can just throw the bones in the freezer and make it later. Again, I just put the bones in a ziplock bag and freeze. If I know I will be making the chicken stock the next day, I will usually just cover the baking pan with the chicken bones and toss it in the freezer.

    When I was using up the food from the freezer as we were preparing to move I found some chicken stock that I had frozen so I have them on the stove now cooking away. I will use the broth to flavor my rice for dinner.  It’s so simple to make this homemade chicken stock recipe that even a cook like me can do it! -Tawra

    • Step 1 – Save chicken bones. This is the leftover bones from two large chicken breasts we ate for dinner.
    • Step 2 – Add flavoring. I used onions but you can add, garlic, carrots, celery or anything else you would like.
    • Step 3 – Simmer on the stove at least 4 hours. I simmer mine overnight on low.
    • Step 4 – Remove the bones and other solids, including the onions and other things you used to make the seasoning.
    • Step 5 – Enjoy your chicken stock. My two chicken breast bones make about 2 1/2 cups of concentrated stock. I usually dilute mine down with half water and half stock.

    How to Make Marshmallow Brownies

    Our Marshmallow Brownies Recipe is as fast and easy as it is delicious. Start by making your brownie mix according to the package directions for fudgy brownies. Pull it out of the oven between 28 and 30 minutes and top with marshmallows, baking for three more minutes. Then, you’ll cook the peanut butter, chocolate, and butter mixture on the stovetop.

    When it’s ready, remove it from the heat and add the crispy rice. This is spread over the marshmallow brownies as the third and final layer. The only caveat I will make to this recipe is this. You need to let it cool for one to two hours. This is hard! It’s a test of will. But, you will be glad you waited.

    Ingredients for the Marshmallow Brownies Recipe

    • Fudge Brownie Mix. Can be regular gluten-free.
    • Mini Marshmallows. You’ll need a ten-ounce bag. When you purchase marshmallows check to make sure they are not stuck together or stale inside the bag. If the bag gets a tiny leak, the marshmallows can get stale before the expiration date.
    • Semi-Sweet Chocolate Chips. You can use milk chocolate if you really want to, but this recipe is very rich so we definitely recommend semi-sweet.
    • Peanut Butter. Your favorite brand will work fine. Since you will be adding crispy rice cereal, I do not recommend crunchy peanut butter.
    • Butter or Margarine. Dairy-Free is perfectly fine. Whatever you like.
    • Crispy rice cereal. Any brand will work.

    What to do with Leftover Peanut Butter Marshmallow Brownies

    You can cover and keep leftover marshmallow brownies for up to five days in a covered container. A baking pan with a storage lid makes this super easy! If you would like to freeze brownies for later, I would cut them into individual portions and freeze them in plastic zipper bags made for the freezer. They will last even longer if you first wrap them in parchment paper. This is especially handy if you use gluten-free brownie mix for just one or two people in your family and want to save extra treats for them to have later!

    Tips for the Best Brownies

    • Don’t over-mix. Brownie batter should be mixed just until blended. It should be mixed by hand and not with a mixer.
    • Avoid over-baking. Fudgy brownies will seem like they aren’t quite baked all the way when they are actually ready to come out of the oven. if you continue to bake them until your knife comes out dry, you will have dry, crunchy brownies and not chewy, fudge brownies.
    • Use room temperature eggs. Cold eggs will change the texture and density of your brownie. Set them on the counter for an hour or so before baking for the best peanut butter marshmallow brownies. If you forget, you can put your eggs in a bowl of warm water for 10 or 15 minutes
    • Know your oven. Use an oven-safe thermometer to test your oven for accurate temperature settings and even heat distribution. This will help you know whether to adjust recipes.
    • Know your pan. Glass pans will take longer to bake brownies and will create crunchy edges. Dark non-stick pans will take longer as well. Shiny metal pans without the dark non-stick coating will cook more evenly and more quickly. If you are using a shiny metal pan, be sure to check your brownies a few minutes before the box says they will be ready.

    Here is how to dehydrate potatoes and use dehydrated potatoes. Dehydrated potatoes are easy and perfect for storing garden produce long term because they’re lightweight and compact and they taste the same as fresh potatoes when reconstituted.

    Making dehydrated potatoes. We have had a couple of questions about dehydrating potatoes in response to my post about dehydrating.

    First, I use a 9 tray Excalibur Dehydrator that you can find here. Many people asked which one I used, and I gave a little more detail about how to choose a dehydrator here.

    There is an unbelievably good website, dehydrate2store.com that goes into detail so much better than I can about dehydrating. Tammy’s videos on drying potatoes are especially good. The whole site is free, so check it out. She answers almost any question you could have about dehydrating anything and the videos make it easy to understand. Even though this post is about potatoes, you might want to check our her website to see how to dehydrate everything from your garden, including peppers, tomatoes, herbs, onions, celery and fruits.

    • I make my  dehydrated potatoes the same way she does. I cook them whole and with the peel on. Make sure they are cooked all the way through, but not until they turn to mush. I test mine with a bamboo skewer. If it slides into the potato easily, it is done.
    • I let the dehydrated potatoes cool, usually overnight, because they need to be totally cold. This prevents them from turning dark.
    • I peel them and grate them into hash browns. I spread them over the dehydrator. It doesn’t have to be perfect. It is okay if they clump a little. They will dry fine anyway. Usually, they take about 10 hours here in Kansas, but it depends on the dehydrator and humidity. When they are translucent, they’re done.
    • When you are ready to use the dehydrated potatoes, soak them in water for about 15 minutes. Use enough hot water to just cover them. In a couple of minutes, if they look like they need more water, add a little more. If there is any water left before you cook them, just drain it off.
    • Cook as usual. I was so shocked the first time I tasted these because I could tell no difference from fresh ones.

    Dehydrated potatoes are great to serve on those nights when you don’t feel like peeling and grating hash browns. They’re also great for taking on a camping trip for an easy breakfast. You can dehydrate frozen hash browns, too. Dehydrating them saves on freezer space and you don’t have to worry about losing them if your freezer conks out. Potatoes store longer dried than they do in the freezer, which is a plus, and there is no freezer burn or bad taste.

    You can also slice the potatoes (cooking first as I described above) instead of grating them and use them for things like scalloped potatoes. The website I mentioned earlier about dehydrating has some good recipes that include some great options to use the sliced potatoes.

    Of course, the temperature, humidity, and other environmental conditions affect the storage life of dehydrated potatoes but typically, the shelf life is from 5-10 years. I vacuum seal my dehydrated potatoes, which increases their shelf life to 25-30 years. Those are conservative numbers. This website dehydrate2store.com is one of the more practical and easy to understand sites I have found. You’ll find answers to lots of questions about dehydrating there.

    Once you get started dehydrating foods, you will be surprised how easy it is. I like dehydrating better than freezing because, with freezing, you risk losing food when the power goes out. You don’t have to worry about that with dehydrating. Dehydrated food also takes up much less space. Even though there is a little prep work involved, I find it easier than canning. If you start dehydrating, I suggest starting with apples. Apples are the easiest food to dehydrate. I simply core and slice them and drop them in salted water until I am ready to lay them on the trays. That’s how I handle apples for eating. For baking, I use the same process except that I also peel them. Actually, I usually prepare all of the apples for baking and I place the few that don’t quite get the peels all the way off on a separate tray for eating. That way, I don’t have to worry about getting the peels off of every slice.

    You can dry the peels, too. Then pop them in the blender to make into a powder to use for flavored tea or mix with water for baby food. This requires a little more work with the blender but it does taste good. Most raw vegetables need to be blanched slightly but you can also dehydrate frozen or canned vegetables, which you can just plop on the tray.

    The thing that amazes me the most is that the foods look so small and ugly when dehydrated but you can’t usually tell any difference in flavor. Some things taste better dehydrated. I have given potatoes to friends and it sometimes takes them forever to get up enough nerve to try the dehydrated potatoes. Once they do, they are shocked at how much better the dried potatoes are than regular hash browns. Some have even asked if I would dehydrate potatoes for them if they bought the potatoes.

    I tried dehydrating pumpkin last fall, using a bunch of leftover pumpkins that hadn’t been carved. Now I have jars of pumpkin powder to use to make pumpkin pies. I am going to buy canned pumpkin and canned sweet potatoes (which are really good) when they go on sale this fall and dehydrate them. Why not keep them in the cans? It extends the shelf life by about 10-20 years.

    I very rarely turn on the oven during the summer… Why pay to run the a/c to fight against the heat from the oven? We all like homemade zucchini bread but I didn’t want to turn on the oven just to use up some zucchini from the garden.

    I always like the end piece of the loaf of zucchini bread so I decided to try making it in the waffle iron and we LOVE it! If someone likes the gooey middle, they may not prefer them this way.

    I have also made Amish Friendship Bread in the waffle iron. I think you could do this with most ‘sweet’ breads. If we have cornbread in the summer, I make that in the waffle iron as well. Hope this idea helps someone else out. :)
