Ingredients

1 (8 oz.) pkg. cream cheese, softened
1/3 cup sugar
2 Tbsp. lemon juice
1 (8 oz.) container whipped topping (such as Cool Whip), thawed
1 prepared graham cracker crust
1 can cherry, blueberry, or strawberry pie filling (optional)

Instructions

  1. In a medium bowl, beat the cream cheese, sugar, and lemon juice until smooth and creamy.
  2. Gently fold in the whipped topping until fully combined.
  3. Spoon the mixture into the graham cracker crust and smooth the top.
  4. Top with pie filling, if desired.
  5. Refrigerate for at least 2 hours before serving to allow the cheesecake to firm up.

Notes

  • Make sure the cream cheese is fully softened so the filling mixes up smooth without lumps.
  • If you prefer, serve the pie filling on the side so everyone can choose their favorite topping.
  • Leftovers will keep covered in the refrigerator for 3-4 days.
