Ingredients

1 1/2 cups cornmeal
1/2 cup all purpose flour
2 tsp. baking powder
1/2 tsp. salt
1 egg, well beaten
3/4 cup milk
1 small onion, grated or 1 tsp. onion powder
dash of Tabasco (optional)
vegetable oil for frying

Instructions

  1. Mix together cornmeal, flour, baking powder and salt in a bowl.
  2. Mix egg, milk, onion and Tabasco in another bowl.
  3. Combine with dry ingredients.
  4. Heat the vegetable oil for frying.
  5. Drop a teaspoonful of the mixture at a time into the hot oil.
  6. When the hush puppies are crisp and golden (about 1 minute), remove from the hot oil and drain on a paper towel. Serve hot. Serves 4-6.

Notes

Hush puppies are often served with malt vinegar.
