This easy butterscotch muffins recipe makes moist and tasty butterscotch flavored muffins with a crumbly cinnamon and sugar topping! They’re quick and simple to make and are perfect for breakfast, snacks, or anytime you need a cozy treat!

Ingredients

2 cups all-purpose flour
1 cup sugar
1 (3.4 oz.) pkg. instant butterscotch pudding
1 (3.4 oz.) pkg. instant vanilla pudding
2 tsp. baking powder
1 tsp. salt
1 cup water
4 eggs
1 tsp. vanilla
3/4 cup vegetable oil

Butterscotch Muffins Topping

2/3 cup brown sugar, packed
2 tsp. cinnamon
1/2 cup nuts, ground (walnuts, pecans, almonds, etc.)

Instructions

  1. Preheat oven to 350°. Line muffin tins with paper liners or grease well.
  2. In a large bowl, combine all muffin ingredients, just until moistened. Try not to overmix.
  3. Fill muffin cups about 2/3 full with batter.
  4. In a small bowl, stir together the topping ingredients. Sprinkle evenly over each muffin.
  5. Bake 15-20 minutes, or until a toothpick inserted in the center comes out clean.

Cool slightly and enjoy warm—or let them cool completely and store in an airtight container.
