Cranberry Rice Salad Recipe

Ingredients

4 cups wild rice, cooked 1 (8 oz.) can sliced water chestnuts, drained 1/2 cup each of the following: celery, sliced green peppers, chopped frozen peas, thawed dried cranberries 1/4 cup green onions, sliced

Dressing:

1/3 cup vinegar 1/3 cup cranberry juice 2 tsp. olive oil 1/2 tsp. dried basil 1 tsp. sugar salt and pepper

Instructions

  1. Mix all the salad ingredients in a large bowl.
  2. Mix the dressing ingredients into a small bowl; pour over the salad.
  3. Refrigerate overnight.
  4. Sprinkle with pecans just before serving.
