Breakfast Skillet Recipe

Ingredients

4 slices bacon, cut into 1 inch pieces
1 onion, chopped
3 russet potatoes, chopped into 3/4 inch cubes
1/4 cup water
2 cloves garlic, minced or 2 tsp. minced garlic
1/2 tsp. smoked paprika
salt (to taste)
pepper (to taste)
4 eggs or Polish sausage, diced*
1 cup Cheddar cheese, shredded

Instructions

  1. Cook bacon until crispy.
  2. Remove from pan, leaving the bacon grease in the pan.
  3. Add onion to the bacon grease, sautéing until soft.
  4. Add potatoes and stir well.
  5. Add water and cover.
  6. Cook until potatoes are tender, about 20 minutes. Add more water if they brown too quickly.
  7. When potatoes are tender, mix in garlic, onion, paprika, salt and pepper.
  8. Make 4 holes in the potato mix to reveal the bottom of the pan.
  9. Crack an egg into each hole, seasoning with salt and pepper.
  10. Sprinkle cheese and bacon bits over everything. Replace the lid and cook until the eggs are cooked to your liking, about 5 minutes for runny eggs.

*You can use either one or both.
