Ingredients

Biscoff Cookie Layer:

7 oz. (about 14 cookies) Biscoff or Speculoos cookies, crushed (reserve 1 cookie for topping)
1/3 cup salted butter, melted
1/2 cup Biscoff or Speculoos spread

Chocolate Biscoff Layer:

7 oz. semisweet chocolate
2 Tbsp. Biscoff or Speculoos spread
2 Tbsp. whipping cream

Instructions

  1. Line an 8×8-inch pan with parchment paper and spray with cooking spray or lightly butter the pan.
  2. In a bowl, combine the crushed cookies, melted butter, and Biscoff spread. Press the mixture evenly into the 8×8-inch pan
  3. In a small saucepan or microwave-safe bowl, melt the semisweet chocolate with Biscoff spread and whipping cream, stirring until smooth.
  4. Pour the chocolate mixture over the cookie layer, spreading evenly.
  5. Top with the reserved cookie crumbles for decoration.
  6. Refrigerate until firm, then cut into bars and serve.
